Today is National Butterscotch Pudding Day, so lets begin our Thursday with a little, shall we Mateys?

Sammy, what’s wrong with you? Why are you talking like that? Oh, because its also National Talk Like A Pirate Day. To avoid the scurvy, let add a little Vitamin C into our meals, today, too!

  • 2 scoops cookies n cream protein (1 and 1 of chocolate and vanilla will do)
  • 1/2 Tbsp butter buds
  • 1/2 Tbsp sugar free fat free butterscotch pudding
  • 1/2 tsp cinnamon
  • 1 Tbsp chopped pecans
  • 1 tsp xanthum
  • water
  • ice

WP_003956My vitamin C came in the form of spinach, if you couldn’t tell by the green colored bowl. Oh, and I topped it with ground flax! I experimented with making this into a smoothie by substituting 1/4 cup of Greek yogurt for the vanilla shake mix and 1 tsp cocoa powder. I prefer the shake version better, but not bed.

Frank’s Ascorbic Acid was made with a ton of cantaloupe and half a banana.

I grabbed a shower, hoping that it would get me out of this lazy funk I’ve been. I felt like I was falling asleep in the shower, but after a good facial scrub, smoothie bowl, and a cup of caramel coffee, I felt a little more like myself. I threw on my sneakers and iPod and took a 2 mile walk. My fitness goal was not to go full on running, but rather work on form. It so easy to lean forward when power walking. Instead, I focused on keeping my shoulders back, and my abdominals tight. After a few blocks, you can really feel the muscles on your stomach, obliques, and shoulder muscles!

I felt even better coming home to a bottle of water and having enjoyed a brisk walk on a beautiful day!

WP_003958I made sure to set aside a solid hour and a half to send our resumes! But after that, I actually felt hungry! I had discussed the possibility of making seafood for dinner, with my dad, and he had put in the idea of a tuna melt. Simple! I mixed together a rather delicious tuna salad!

  • 1 can solid white albacore
  • 2 Tbsp light mayo
  • 1 oz roasted red pepper, chopped
  • 3 large black olives, chopped
  • 1 scallion, chopped
  • 1/2 tsp garlic, minced
  • 1/4 tsp reduced fat grated Parmesean
  • black pepper, taste

I ate mine just microwaved, and I made Frank a tuna melt! Not only was it tasty, but its colorful! Spectacular!

After Frank and I ran a few errands, and a little tidying up was done, I got a hold of mom to see what her plans were for the night. I’m really in the mood for Saladworks, I said. “Do you want a turkey sandwich?” No, because then I’ll wind up eating it. “Well, I’m going to get one anyway. You can just eat the turkey.”

Thanks, mom! But it worked out really well! I ate half a Luna Carrot Cake bar to hold me over until dinner, and when it was time, I offered to pick it up. I power walked another half mile, and was pretty stoked that I ran the last block uphill! I ordered a turkey sandwich with extras pickles and onions, American cheese, lettuce, on rye bread, with sweet peppers on the side. Mom typically orders extra mayo. No way, woman! You can add your own mayo!

WP_003967This was so good, that I made another small salad! Every time mom and I get a hoagie from Degnar’s Deli, we get into onion mode. They have the best onions! They are perfectly sliced, crisp, strong and mom and I always wind up slicing onions as a snack. To the second salad, went a whole cucumber, two sweetened gerkins, and a bunch of onion, all topped with salsa! Sooooo good! I thought the combination of pickles in my salad was odd until dad reminded me that they technically are the same thing… duh, Sammy.

This meal put me in quite a veggie mood, and I snacked on celery and sugar snap peas with salsa until mom and I met up with dad and Barry for the Eagles/Chiefs game.

I stuck with my pirate theme and got Captain and Diet Pepsi. Barry got a little intoxicated! But on the bright side, I got to drive his car. (It’s a stick shift, and hes been teaching me.) But I drove home and didn’t stall! Woo Hoo! And Melissa, my favorite bartender made bacon mac n’ cheese, which was good sober-up food. She also let me play around with two new Pinnacle vodkas on the shelf. The first was Caramel Apple, but the one that grabbed my eye was the Pumpkin Pie! Yes, Pumpkin Pie vodka! We started thinking about things that you could drink it with. I suggested Rum Chata and it worked beautifully! Like a pumpkin egg nog!  Melissa, then, added a few drops of Bailey’s. It cut some of the alcohol bite, and I would have poured that shot right into a cup of coffee! MMMM!

A Side Note:

Teresa mentioned to me that I used pigeon peas to make yesterday’s Split Pea Soup. I forgot to address why. Thanks, Teresa!

I grabbed the wrong bag of peas from the farmer’s market, but did not realize it until they had already been soaking overnight. I watch shows like Chopped, Cupcake Wars, and Iron Chef because I believe a great chef goes with the punches. I always challenge myself when I watch the shows to try to come up with what I would do if I was on the show. Therefore, once I realized my mistake, I rolled with it, and made it work!

I’m a Nurse, but what do I know?

I a so tired of having an upset stomach! I left work early last night around 3am. When I arrive home I snacked on bread and pretzel sticks in the hopes of absorbing any acid that could be irritating my stomach. For the past few days, saltines and diet ginger ale have been m best friends. But its just unnatural for this to be a diet for 3 days straight.

I curled in bed and had the hardest time falling asleep. I finally fell asleep in the fetal position, with my behind up in the air and my face in the pillow, around 5:15am, I believe. I slept until about 9am and enjoyed a small fuji apple. In fact, the apple hit the spot so well I ate another for dessert later in the night. After my apple, I whipped up a bunch of shakes! For Frank and James, a filling Banana and Nutella shake for their fishing trip; for dad, a Cherry Cheesecake Shake for is drive to work!

I walked down to the Dunkin Donuts for Customer Appreciation Day, and got a free medium iced coffee. It was just what I needed to start the sunny day! With a little caffeine and an apple in my belly, I was motivated to start my day! I went for about a 3mile walk to the store to pick up a few items. On the shopping list was PopTarts. I never buy PopTarts, but a little birdie, named Barry, told me about the new ones filled with peanut butter. Did you really think I could resist this?

They were great! My one problem with PopTarts, not just this particular flavor, but all of them: the CALORIES! 200 calories per pastry. Hello! There are two pastries per pack! Do think people only eat one? PopTarts are delicious! Come on! Nonetheless, both of the Chocolate Peanut Butter PopTarts found their way into my stomach throughout the day.

To off set the sugars, I snagged the last BBQ chicken thigh left over from the guys dinner last night, shredded it up, and tossed it with roasted bell peppers and cauliflower.

Midway through the day, the stomach aches started back up. Before I knew it, I was back to the saltines. In the last two days, I’ve eaten two sleeves of saltines! Oh yeah, then I got sick. Yay. :/

After lying on the couch for a little bit, a craving hit me that I had last night: a calzone, panzarotti, or stromboli. I just wanted something related to pizza, but not pizza. I think its because everyone on Facebook keeps talking about the Festa (the Italian Festival) around the corner from my house. I mentioned it to Frank, and a small ham and spinach calzone arrived about 45minutes later. We split it four ways, and my stomach felt mysteriously better.

Wait a second…. saltine and ginger ale = stomach ache. Cheese, ham, dough, and grease= feel better?

Hmmm…. Interesting… I’m a nurse, but what do I know???

A Small Feat

It never ceases to amaze me the difference a run can make. Ever a brisk walk changes my entire attitude! Yesterday, I was so proud of myself with my eating habits, but started to get a serious stomach ache around 3pm. What the heck? Is that what I get for eating right? A belly ache?! I was able to fall asleep for a short nap, only to wake up, getting sick! Yuck! What a party pooper!

I wanted to eat but every time I nibbled on something, my body just told me “no.” Maybe some ginger ale, I thought. I got myself together and took a walk down to the 7-Eleven. I figured moving around might just help. On my way home, with a diet ginger ale in hand, I figured it out. Soup! That’s what I want. I called the Chinese restaurant down the road and walked over to pick up a small Hot and Sour Soup. Was this smart? Hot and sour with an upset belly? I guess I’ll find out. I sat down with my soup and a sleeve of saltines. It worked like magic! But, before I knew it, the sleeve of saltines was no more! Yeah, the whole sleeve! But I sure felt better!

I called my dad before heading to sleep last night to ease some mild anxiety I was having after eating the darn saltines. When I woke this morning, I had every intention of being productive. We are supposed to be expecting some big storm this week, but the weather was gorgeous! Still feeling a little guilt, I got changed, and took a swift walk to the local post office to ship a small package to Meaghen, in New York. On my way home, I stopped by the bank. It was game time. With nothing to carry, the sun out, and a cool breeze, I ran home. Although it may seem small, I ran a mile without stopping! For me, this is quite an accomplishment. With each step closer to home, my smile grew! Like I said, it just never ceases to amaze my what a difference even the shortest run can make!

After catching my breath, I made a Strawberry Kiwi Protein Shake.WP_002641 WP_002642

1 scoop Vanilla protein powder
1 kiwi
1 oz frozen strawberries
water
ice

I loved the texture the kiwi seeds gave the shake. (Warning: kiwi seeds can get stuck in your teeth :p)

I followed this up by completing some chores around the house and some paper work for my nursing license.

I called work to offer my time in any spaces in the schedule. Well, guess what? One of the girls called out sick, so I picked up a 12 hours shift! Immediate nap time!

I woke up ready to go! Since June 12th in National Peanut Butter Cookie day, I wanted to make something along those lines. This was my attempt at a PB Cookie-esque Shake:WP_002643

1 scoop Chocolate protein powder
1 Tbsp. Better n’ Peanut Butter (low sodium)
1 oz frozen chopped apple
a few dashes apple pie spice
a few raisins

It wasn’t too shabby! Once I got to work, a saw a slice of strawberry shortcake, that had definitely been picked on by the girls. But they missed the best part: the strawberry on top! YUM!

I found a big salad from a party from earlier left over for the night shift folks to eat. It was Season’s Chopped Salad with grilled chicken (iceberg, gorganzola, bacon, tomato, black olives, green peppers, hard boiled eggs), one of my favorites! My old job was addicted to Seasons and I ate this salad at least twice a week! So with a nice helping of that with the house balsamic, and a bowl of broccoli slaw, salsa, and microwaved egg whites, I was full of nutritionally dense, guilt free protein!

Like I said, a nice run, even a brief one can really set your day up for success!

Lean Salad

Last night, I wanted something but just could not figure it out. After countless snacking, I realzed a binge had just ensured. A purge quickly followed. I weighed myself, which probably was not the smartest thing to do. I had gained three lobs which put me into quite a tizzy.

I woke up this morning, with a plan to be active. I needed to pick up some prescriptions from WalMart, so that became my destination. I alternated walking and running for the just over 3mile travel. Mom picked me up on my way back, to run some errands.

On the car ride home, I received a call from work asking me to come in early and work a 12 hour shift. I made a shake to fill me up, made with a can of  Pure Protein Strawberry Cream and half a banana. I took a few sips, popped it in the freezer, took a shower, and crashed for a few hours. When  I woke up, I thawed the shake a bit and re-whipped it in the MagicBullet. When it was done, it looked like soft-serve! It was refreshing, and nutritious, filling, and frothy!

I sat in a 1:1 for the first 4 of my 12 hour shift. They kept offering me pizza. UGH!  So tempting! I went on the floor for the next 4 and then back to the 1:1 for the remainder of the shift. It broke up my night a bit.

I made myself some coffee to give me a boost, and as I walked into the break room, I discovered these babies:

Lauren’s Chocolate Chunk Brownies! These are terrible; and by “terrible,” I mean, “I could eat the whole tray.”

Three of these little squares found their way into my tummy over the course of the night. I like when things are small or two to three bites big. It makes me feel like I’m still indulging without completely derailing. I also brought myself a wonderful salad! The grocery store threw Lean Cuisine on sale for $1.99. I was all over it! I picked up one of there new salad additions. For me, half the package surficed as a meal, and I’m saving the other half for night shift on Friday. I split the ingredients and served it over a big container of spring mix! Delicious! The Lean Cuisine Asian-style Chicken Salad consisted of protein, in the form of chicken breast and edemame, and veggies, such as broccoli and carrots, all topped with a sweet sesame Asian vinaigrette! So enjoyable and highly recommended!

Autism Awareness Walk

A couple weeks ago, I saw a billboard for the local Autism Awareness Walk. I called my little cousin and asked if she would join me. My little cousin is a twin, and her twin sister is autistic. I registered the two of us as “Team Jacki,” but our team quickly grew. I got my mom to join and my cousin rounded up some of her friends!

“Autism is the most common condition in a group of developmental disorders known as autism spectrum disorders (ASDs). Autism is characterized by impairments in three distinctive areas:

  • Verbal and non-verbal communication
  • Social interactions
  • Repetitive behaviors

It is estimated that between 1 in 80 and 1 in 240 with an average of 1 in 110 children in the United States have an ASD.

It was a great day spent with my family. After the walk, there was a BBQ and ice cream and the kids loved it! The bunch of us laid around on the grass, taking in the beautiful, sunny day!

Upon arriving home, I really wanted a burger. I heated Morning Star Farms Grillers California Turk’y Burger (one of my favorites!), and topped it with onion, sliced mushrooms, spinach, and a slice of fat free cheese, on an Arnold Flax and Fiber Sandwich Thins .

Peachy Keen x 1000

After my cookie spree and the rest of the amazing foods at Immediato’s Bistro, I woke up still full and in the mood to work out. I’ve completed all of Julie’s circuit work outs, except for one: The 1000 Rep Workout! Frankly, it has always scared me a bit. I don’t know what came over me but I did it! I felt victorious! I was sweaty and smiling!
I thought the squats were going to be the hardest part for me, but it was actually the 50 seconds of wall sits! i wanted to scream! For the rest of the day I was filled with energy! I even called my dad and he came over and we took the pup for a walk! For the next week the high is about 25 degrees so we really needed to take advantage of this weather!
I love taking a walk with dad and Beauty. Beauty is getting old, so I love seeing that she still has some pep in her step. Dads getting old, too, so I like to see that hes got some spunk left, also. Just kidding, dad! But in all sincerity, I love walking with my dad. Sure we talk on the phone or over dinner, but its like a different kind of conversation. I don’t know, but its just different and I love it!
After we got back, Beauty decided it was nap time. Me? I decided it was food time. I’ve been on a bit of a yogurt kick lately and wanted to try this:

I really wasn’t that impressed. I like the chunks of peaches, but there wasn’t much of a peach flavor. Therefore, I decided smoothie bowl was the route to go. The following was whipped up in the Bullet:

1 (6oz) Chobani Non-fat Peach Greek Yogurt
100g of frozen sliced peaches
20g of kale
1 scoop Herbalife Vanilla Protein Drink Mix
1 scoop Herbalife Vanilla Formula 1
1/4 tsp xanthum
ice

I find that the bowls where I use greek yogurt, keep me the most full and satisfied. Like with the bananas, when I notice fruit is starting to turn, I’ll slice it up and freeze it for my shakes. I remembered I had some slices of peach in the freezer. I think in today’s case, I used too much kale and did not have enough peaches.

The shake was decent, but it was missing some sweetness… Lightbulb!

In this post I discussed how I really was not a fan of thePeach and Raspberry Honey Bunches of Oats, but I enjoyed it dry… I topped the shake with this cereal. It added that fruitiness and crunch it was missing.

“Change in Mental Status” as we say in the RN world (Jan 10, 2013)

After my mental breakdown last night, I was determined to burn off some steam today. I walked/jogged 8 miles! I felt so energized and happy! I didn’t even bring my ipod! I sang to myself and admired the environment.

My dad came over for dinner tonight. I made healthy stir fried rice and Hungry-Girl’s sesame chicken. Yum! My dad and I took our 15 year old beagle, Beauty, for a walk also.

It amazes me how walking can completely change my mood!
You would think that all of that would tire me out, but I’m wide awake, ready for some strength training…

I set up a new playlist on YouTube… once I complete it I’ll post up my, what I like to call, my “PowerPlay” songs. These are the songs that get me pumped and have a solid beat to work out to.
