Pups Love PB

 

I woke up and was in the mood to make dog treats. I happened to be at Barry’s and he had cereal that he bought to try but did not like. It was a wheat and grain based, so I smashed it up and made these babies. A batch for Lily, Barry’s lab, and Beauty, my baby.

Whole Grain Puppy TreatsWP_004678

  • 1 egg
  • 3/4 cup Engine 2 cereal, crushed
  • 2 Tbsp peanut butter
  • dash cinnamon
  • splash vanilla extract

Thoroughly combine all ingredients and dollop onto a baking sheet that has a thin coating of oil. Bake for about 10 minutes and let cool. Store in container for a little over 1 week.

Barry and I spent most of the afternoon locked in the bedroom, like most couples… building a jigsaw puzzle… NO, really… we are loving jigsaw puzzles! The one we are working on now, is driving us crazy! Its a doozy!

We were in for a surprise when we got home. Mom had plans to put us to work! We were moving the refrigerator, the stove, scrubbing the floors… All of this worked up an appetite. I tossed some onion, carrots, garlic, and sliced bell peppers in a skillet and let them steam down for a bit. In the meantime, I seasoned a steak for Barry and tempeh for myself, with steak seasoning. One both things were done. I threw it all in sun-dried tomato wraps and topped it with some Barry’s Tempeh BBQ sauce! Delicious!!

This morning (Aug. 21, 2013) began with a phone call from Barry.

“I have question for you.”

I have one for you. Why are you up? (He just finished night shift)

“I had to pee, but it this Samantha [Bundo], Registered Nurse, License Number L1…….?”

What?! No!

“Yes!”

No!

My official license had been issued and posted on the State’s registry! I began screaming, smiling ear to ear! I called my parents and whipped up two shakes! For me, a Mixed Berry Colada. I’ve really been digging  my sugar free Coconut Torani. Yesterday was National Chocolate Pecan Pie Day and I was curious to see if I could make a Pecan Pie Shake:

As we sipped our shakes, I called my managers at work to share the news! But, boy, did they have news for me! There is a very strong possibility that he has a job opening up on my unit for me! I am beyond excited! With all this adrenaline running, I could not fall asleep to rest for my 12 hour shift, tonight!

I laid in bed for like 4 hours before giving up and preparing a celebratory dinner! Frank had mentioned earlier in the week that he wanted Chinese food. I talked him out of the temptation and promised to make homemade for him later in the week. What better day to have a quick, and wonderfully indulgent meal, than in honor of a celebration?

Barry arrived at the house around 430pm with a nice little surprise, and my parents quickly followed behind him from work.

I follow the Hungry Girl recipe to the T except for the egg and flour coating. Since I don’t, typically keep scallions in the house, I substitute them with chopped onion, and I always make sure to include the chopped onion and 1/4 tsp crushed red pepper flakes to the sauce as it cooks and thickens. As for the coating, I find that 1/4 cup of liquid egg substitute  and 2 1/2 Tbsp whole wheat flour suffices for 1 1/4lb (20oz) of cut chicken breast.

With the bit of mixed vegetables left over from the Chicken Pot Pie, I made a make-shift fried rice, I cooked 1 cup of brown rice and allowed it to cool. I added the rice to a skillet, along with soy sauce, sesame oil, ground ginger and garlic, left over vegetables, chopped onion and mushrooms. Lastly, I added the remaining egg from the drained chicken breast to the mix. To finish off the meal, I steamed broccoli and garlic.

We finished socializing at dinner just in time for dad to walk me to my car and see Sammy Bundo, RN, off to work.

When I arrived at work, everyone was congratulating me. It turns out the managers had posted signs around our unit! They did a great job of killing the spelling of my last name, but its the thought that counts!

I am finishing up my can of beets, finally, with another salad of onion, bacon tempeh, carrots, and Walden Farms Bleu Cheese dressing. A rice pudding came with, as an inevitable emergency end of shift snack. The end of shift snack actually became my 4-hours-in snack, while grahams became the end-of-shift snack.

Thursday

WP_003614I spent my first 4 hours in my 1:1 from the other night, and the remainder of the night on the floor. The night felt like it was dragging. I was sleepy and cramping, and it felt like my coffees were switched with the decaf stuff! When 7 am came around, I was ready to roll! I stopped for an actual decaf and passed out on the couch. I felt bad because I was going to meet Barry at his house, but apparently my body had other plans.

I woke around 1pm to get something in my stomach. Since today is National Eat a Peach Day, and I didn’t have an actual peach, I had an Activia Greek Peach Orchard yogurt topped with sunflower seeds, and reheated what was left of the mornings decaf. I love the earthy, nuttiness the seeds add to yogurt!

I fell back asleep to wake around 5 pm. I didn’t have much of an appetite but my stomach was tossing from a menstrual migraine. I haven’t had one of these in years and i felt my forehead was bulging. I explained it to Barry like this:

Yeah?

Its like that… like my forehead is taking over my head.

Your forehead feels like Frankenstein? Well, I’ve never heard a headache described quite like that before…

I wound up calling out of the shift that I had picked up. I toasted an cinnamon raisin breakfast thin, and spread it with cream cheese and sugar free blueberry preserves. I added chopped celery to one side, for crunch, and a slice of Canadian bacon, for salty protein, on the other. I ate it like a sandwich and it was delicious!

As the night went on, the headache went awake, and my appetite, and cravings returned. I went with another Lil’ Drum to satisfy the crunchy sweet, and a side of pretzel sticks for the crunchy salty. I spent the remainder of the night watching Four Weddings. (I love this show!)

Eggplant Pie

It was nice to sleep in yesterday and not have anything to do! I spent all day studying for the NCLEX, filling myself with brain food, like Saturn peaches, sugar free chocolate pudding, and a delicious dinner! (recipe to follow) My family has really been lucking out these past few weeks. Since I’ve found an outlet in cooking, my family has been eating really well. During my studying, I reward myself with breaks to cook, or prep to cook. Yesterday the result was baking Strawberry Muffins, and Eggplant Pie. Both were so good! Frank, my biggest critic, said the muffins were very good and the Eggplant Pie was,”Outstanding!” Having the word “outstanding” come from him was definitely a treat!

The muffins came in handy when I woke up this morning to find a tray of donuts on the table from an apparent late night craving they had while out on the town… To resist the urge, I warmed up a strawberry muffin, sliced it in half, and added to the already gooey strawberries inside it with some sugar free strawberry preserves. Take that, donut!

After dinner, and along day of brain overload, I rewarded myself with Zumba. Unfortunately, my booty shaking was cut short when a girl got light headed and fainted. I ran to help her. Behind me, I hear my girlfriend yell,”It’s okay! She’s a nurse!” It was thrilling hearing someone yell that so close to my exam!

WP_003511Following Zumba, I got really hungry. Thank goodness Zumba is early on Monday nights and I went home to enjoy an Orange Cream Dannon Light & Fit Greek, with cheerios for crunch. I got antsy and wound up finishing a head of romain with salsa, filling up on water. I’m such a bunny rabbit…

I headed to bed with a mug of chamomile tea and fell asleep in NCLEX-mode.

After Sunday’s adventure at the Ren Faire, and my brief time at Zumba, last night, my calves we starting to feel it today. I began the WP_003512gloomy day with my normal routine of a shake. Since my vanilla protein powder has been replaced, I began with an Apple Eggnog Shake:

  • 2 scoops Vanilla protein powder
  • 1/2 md fuji apple, chopped
  • 2 Tbsp sugar free Eggnog Da Vinci syrup
  • spinkle apple pie spice
  • water
  • ice

A total winner that Barry didn’t think would work! I made Frank a very bright Watermelon Shake.

Today was so gloomy that my dad’s boss told him not to come to work because there was so much flooding! It was also gloomy in my kitchen when my spare Magic Bullet bit the dust. I’m glad I had my smoothie maker to fill in.

Before heading to work, I filled up on some watermelon and I’ve really been digging the beet scene lately. I actually made another beet salad for dinner tonight, for work. I even used some Fakin’ Bacon Tempeh! And what goes well with bacon? Bleu Cheese! I steamed together sliced onion, chopped tempeh, sliced petite carrots, and chopped, sliced beets and served it over a bed of spinach, topped with crumbled reduced fat bleu cheese. The warmth from the vegetables warmed up the cheese and this salad was “no dressing required!” I’ve been trying to talk dad into trying beets, but I haven’t quite gotten there. Maybe I’ll sneak it into something one day. What can I say? You can’t beat beets!

Usually, being clerk at work makes me want to eat. Not because I’m hungry or burning calories, but because I’m bored. Tonight was great because I ate my delicious salad for dinner, and had some grahams and PB for a snack! Plus, with studying and all the paperwork at the desk, I kept busy!I’m serious! As soon at 7pm hit, this place went crazy, like full moon crazy! Eureka!

I picked up a pack of sliced eggplant from the farmers market last week and wanted to use it up before it began to turn. My intent was to make an eggplant parm pizza, but then this brain of mine began to crank some gears and this little beauty was born. Its like if eggplant parmesean and spaghetti pie had a baby…

Serves 4

1 large eggplant, sliced 1/8in
1/2 cup chopped mushrooms
1/2 medium onion, chopped
2/3 cup bell pepper, chopped
2 tsp garlic, minced
1/4 cup fat free ricotta
1/4 cup liquid egg substitute
1/2 tsp red pepper flakes
1 tsp Italian seasoning
1/2 tsp dried basil
1 pkg Fettuccine Tofu Shirataki noodles
3/4 cup fat free shredded mozzarella, divided
4oz 96% lean ground beef
1 can diced tomatoes
1/2 cup fresh spinach, packed (25g)
1 Tbsp reduced fat grated Parmesan

Peeling the eggplant is your preference. Over high heat, in a skillet, cook slices of eggplant until they begin to shrivel from the water loss, flipping to ensure both sides cook. Transfer to a paper towel while cooking the remaining slices of eggplant. While eggplant is still pliable, lay the eggplant strategically in a sprayed 9in pie pan to create a pseudo-pie crust (about 7 slices). Sprinkle the bottom on the pan with 1/4 cup of mozzarella.

Empty the noodles into a colander, rinse, and snip through the noodles with scissors, as these these noodles can be pretty long. In the hot pan, after the eggplant has been cooked and removed, briefly toss the noodles in the pan, tossing constantly to remove excess fluid, and return to the colander.

Spray skillet with non stick cooking spray and briefly cook down onions, garlic, and bell pepper, until onions are
mildly translucent. Transfer warm vegetables into a bowl with uncooked mushrooms, ricotta, spices, and egg. Then add the noodles to the ricotta mix. Transfer into eggplant crust and distribute evenly.

Brown the ground beef. Once crumbled and browned, add the can of diced tomatoes. Stir together and top over the noodles in the crust. Sprinkle a pinch on mozzarella and the grated cheese. Add the chopped spinach and cover with the remaining eggplant (about 5 slices). Top with remained shredded mozzarella and bake in a preheat oven  at 350 F for 15-20 minutes.

Low Fat Mac

Every kid loves mac n cheese. Even as an adult, its hard to resist the carby, gooey, cheesy goodness. Of course, as an adult, I’ve now expanded my mac n cheese horizons with stewed tomatoes, tuna fish, various vegetables, different cheeses, or splurges like Valanni’s crab and lobster macaroni and cheese.

Its pretty difficult to find a mac n cheese that gives you all the bang for your calorie buck. When I’m really jonesing for it, I go with Fiber Gourmet’s Light Mac-mmm-Cheese.

Have you ever had the shells? The white cheddar? The shapes and cartoon characters? Blue cheese? Whats your favorite mac n’ cheese? Are you a Velveeta person or Kraft? Have you tried any flavors by Betty Crocker, like pizza or grilled cheese? Have you ever had mac and cheese pizza? What about mac n cheese  burger? How do you make your mac?

Macaroni and cheese is such a staple food in America, we are literally surrounded by it! The guys at Barry’s house go through it like its water and they frequently visit a local restaurant that only makes mac n cheese!

I’ve been on a mission to create a mac and cheese recipe, but upon googling, I found so many different ways to make it! Cottage cheese, evaporated milk, cream, half and half, mustard, bread crumbs, bake, stove top, types of cheese, sour cream, cream cheese…. I mean, how does one choose?

I was sent this low fat recipe and could not wait the try it!  (but we will get there in a second)…

I still remember how cool I thought EZ-Mac was when it first came out when I as a kid!

So, this comfort food-filled week was packed with meatloaf, garlic mashed potatoes, guiltless ice cream, and now, to wrap it up… can you guess?

This morning began in a dark room. Its 930am, why is it so dark in here? Holy smokes, its raining its butt off! It rained for hours, non stop this morning! To pass the time, I whipped up coffee and breakfast for the guys and me. I wanted to use the Fakin Bacon tempeh before it went bad, and thought, bacon is a breakfast food… this could work…

I chopped up tomato, mushrooms, and onion, as well as the Fakin Bacon tempeh and whipped up and an omelette with swiss for Frank, and mozzarella for me. It was great with some hot sauce on top!

I decided to be a nice big sister, and Dom, my youngest brother, seemed super excited about the idea of a big breakfast sandwich! I threw some ham lunch meat and veggies in the skillet and served it up with cheddar on toast!

Since it was pouring, I sat at the kitchen table and studied away. I guess I’ve been studying hard because I killed a highlighter. (Yay, for dad who sells them… I’ll never need office supplies).

After a bunch of studying, my brain needed a break! After about an hour of serious procrastination on the computer, I needed to get out of this house! Thank God it stopped raining and I went for a quick 1 mile jog to clear my head and then resumed studying.

Dad came over after work and helped whip together our take on the recipe for tonight’s dinner:

Basic Fat-less MacWP_003290

serves 8

  • 3/4 cup(s) milk, fat-free evaporated
  • 1 cup Lactaid cottage cheese
  • 1/2 cup fat free ricotta cheese
  • 1/2 cup fat free shredded cheddar cheese
  • 1/2 tsp ground nutmeg
  • 1//8 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp granulated garlic
  • 1 tsp reduced fat grated Parmesan cheese
  • 1 12oz box Ronzoni Smart Taste elbows,cooked
  • 1 8oz Macaroni Tofu Shirataki Noodles *

WP_003291Preheat the oven to 350 degrees. Heat the evaporated milk in a saucepan over low heat. Add the cheeses until they melt, stirring constantly. Stir in the nutmeg, pepper, and salt. Remove the cheese sauce from the heat. Add the cooked pasta to the cheese sauce and mix well.

Pour the mixture into a 2-quart casserole dish that has been sprayed with non stick cooking spray. Sprinkle with Parmesan cheese. Bake the casserole for 15 minutes until the top is browned.

Top with what ever you’d like~ tomatoes, tuna, peas, more cheese, mustard (Barry puts ketchup on his, I don’t get it, but then again, I have some odd taste buds, too)!

*Since the recipe called for 1 lb of pasta, and the box only comes in 12oz, I improvised with the low cal, low carb option.

I decided to kick things up and made a toppings bar: WP_003293

  • diced tomatoes
  • sauteed bell pepper
  • sauteed onions
  • Morning Star ground soy crumbles, or ground beef, seasoned with taco seasoning
  • can of tuna fish seasoned with old bay
  • steamed green peas

Wow! I was so paranoid about the outcome of this dish! There are just so many different seasoning and ingredients, I did not know what I should season this with! The above recipe is a perfect mac and cheese for the simple soul and the best to dress up! Its not an abundantly creamy like a Kraft mac, but I loved the homemade taste and consistency!

To make this recipe even more meaningful to me, my mom informed me that Macaroni and Cheese was one of my grandpop’s favorite dishes! Today marks 8 years ago that he passed away. This is for you, poppop! I hope you would have liked this dish as much as we did!  We miss you and we love you!

Dork-ing It Up

I mentioned, yesterday, how important it is to surround yourself with positive vibes. Last night, I did just that. I typed up last night’s post while getting ready for bed, however the whole “going to bed” thing didn’t really happen.

Barry and I decided to stay up since neither one of us had anything to do in the morning, and that way we could sleep late.

I really enjoyed last night. We stayed up, playing Phase 10 and watching “Chopped” on Food Network until about 1am. We were googling exotic foods and talking about NASA and space travel…

It was a plain, simple night in and I loved it!

We awoke around 11am, today, and desperately tried falling back asleep. No such luck. So up we went to fix some coffee and enjoy our respective yogurts. I had the the Dannon Light & Fit Blueberry Greek and he experience Greek yogurt for the first time with OIKOS Blackberry. I also broke off a piece of a Gnu Brownie bar to give me a PMS chocolate-fix.

We continued to dork it up after breakfast while watching an episode of “Star Trek: Next Generation” and the final “Lord of the Rings” movie. Yes, I’m aware how exciting we are, but after my freak out on Monday night, surrounding myself with positive people and events really made a difference.

I ran a few errands on my way home and grabbed another Special K cereal bar, Red berries, for a mid-day snack to hold me over until my shake, which I will make before heading to work. I also managed to pick up these little cuties from Five Below!

Unfortunately, today is another day of belly bloat. Super uncomfortable! When I get bloated, I’m never really sure if I’m hungry or not, so I’ve been trying to keep hydrated. If I keep drinking and still feel hungry, I’ll eat, but as of right now, I feel like a bowl full of jelly. HAHA

In the world of animals, I told you I’d get back to you about the Blue Buffalo I got for the kids. Beauty scarfs Wellness, like devours it. She kind of sniffed the Blue Buffalo and walked away. She eventually ate it, but I’ll save some money and stick with the Wellness brand.

In the world of bars, I had a Maple Glazed Pecan and Sea Salt KIND bar. How good does that sound?! I wasn’t sure after my first bite, but after my second I began to pick out the maple notes, then the mild saltiness. Its nice low GI treat with 6g protein and 5g fiber.

In the world of recipes, to keep myself busy before, I made a very anticipated recipe: Homemade Nutella! You know I’m addicted to the stuff, so based off Katie’s Healthy Nutella recipe, I created a virtually sugar free, low fat, low carb chocolate hazelnut spread. I dig it!

The day I took Barry to Wholefoods, we picked up a bag of hazelnuts to make this, but life got in the way and I decided today was the day! Sorry, Barry, I just couldn’t wait any longer!

  • 2 level cups raw hazelnuts (240g)
  • 1 1/2 tbsp pure vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup plus 2 tbsp sugar free maple syrup
  • 2 packets Splenda
  • 1 Tbsp sugar free chocolate syrup
  • 1/4 tsp plus 1/8 tsp salt
  • 1/2 cup milk of choice (I used unsweetened Flax milk)

Roast the hazelnuts for about 9 minutes 400 F. Rub them together in a paper towel to get the skins off. Be careful, as the nuts are pretty hot. In a food processor (I used the MagicBullet) blend the nuts until they begin to be ground very fine, almost nut butter-like, Add all other ingredients, adding 1 at a time and blending. Continue to blend until it’s smooth!

The Bullet was not the easiest thing to use for this, but my food processor at this house is a hand crank, and that just was not happening. I alternated between adding wet and dry ingredients between blending. Because the Bullet isn’t exactly full of space, I removed some of the ingredients and blended in small batched to ensure it was well mixed and smooth.

Next time I make it, I’d like to try Hershey Dark Cocoa!

It made enough to refill my old Nutella jar, plus some! Yum!

Because this recipe contains milk, I would recommend to refrigerate it. Plus, the cold will help make it nice and thick.

WP_003211In the world of work, I am working a 12. I threw together a shake using a bit of the nutella and some random frozen fruit with protein mix…nothing to write home about. I also made a mug of coffee to take with me. I totally forgot I had this 12 Coffees of Christmas box in the cupboard. I found it while digging out the ingredients for today’s nutella and butter pecan coffee sounded too good to pass up. It smelled amazing!

WP_003212Although I kept busy, time was not passing as quickly as I had hoped. I encountered a tempting blueberry muffin that everyone was snacking on. I had not had one in a long time at treated myself to the quarter that looked like it had the most blueberries! PMS loved the sweet blueberry muffin and after grabbing a soda for my patient, it also decided it wanted a Dr. Pepper. Not just any Dr. Pepper, but a Diet Cherry Dr. Pepper. I was off to the vending machine only to discover Cherry Cola and Diet Dr. Pepper! Darn it! 23 flavors it is…

Around 230am, I hit the wall! I got so tired and bolted to the caf for some coffee. The bad thing about night shift is that your body is not used to being awake, and therefore, gets those crazy late night snack urges, like oreos! Snacking smart, I packed a sliced bell pepper! I just love that crisp and sweet bite from those things! But those oreos are not easy to resist. I also packed a tempeh salad using spring mix, baby carrots, tomatoes, onions, bell pepper, beets, and fakin’ bacon tempeh. Hmmm bacon… yup, Walden Farms Blue Cheese dressing it is!

Tempted by Tempeh

This morning, since it was Barry’s first morning back, it was a blueberry pancake morning. The special guest star? Bar Harbor Wild Blueberry Preserves!

I was pretty excited when I find these easy to make complete Easy Packs by Hungry Jack. Its the perfect size for a few people and they had Blueberry Wheat! Even better. Not having blueberries in the house, I warmed up a few tablespoons of the preserves and drizzled the newly formed syrup over the poured batter. Aside from the last three pancakes getting a little toasty, they were a hit. Barry, being the blueberry king that he is, doused his plate with blueberry syrup, as well. To finish the meal with some protein, eggs. Over easy for me and medium for him.

We kicked off his first day back with a date at the shooting range, followed by a ton of errands! I introduced Barry to Wholefoods today! I love when I take people there for the first time. Its like they are little kids! Barry fell in love with bakery, as most people do. He wanted to buy one of everything! He left with a brownie cheesecake muffin and a cookies n cream cupcake. I was a good girl. We all know how I get around sweets…

Its so funny! He’s already planning our next trip to Wholefoods, including having lunch there. He was in love the meats department. I don’t think he believed me when I told him how beautiful the meats were. He would up spending a few bucks on meats, as well.

After continuing with errands, we headed home. I read in a magazine that the calcium in frozen yogurt helps relieve cramps. Best excuse ever to take your boyfriend out for froyo!

Barry definitely has a sweet tooth for similar tastes as myself… Chocolate and peanut butter. He opted for the cheesecake froyo at Yogurt City topped with chocolate, caramel, Reese cups, chocolate jimmies, blueberries and bananas. I went with the no sugar added strawberry yogurt topped with kiwi, mango, strawberries, and sliced almonds! I do believe I am developing quite a skill for froyo perfection!

We headed back to the house after about 5 hours of being out while at Wholefoods, we picked up a tempeh that I have never seen before: Fakin Bacon smoky tempeh by Lightlife. While cooking it, the kitchen actually did begin to smell like bacon. I also roasted some bell peppers, sliced baby carrots, onion, tomato, and cauliflower seasoned with garlic and basil. Topping a bed of spinach, I think this was the healthiest meal Barry had had in a long time! Plus, he had never had tempeh before. ( We all know I’m addicted to the stuff.) I always enjoy a roasted veggie and tempeh salad drizzled with BBQ sauce, and today was no different. Also, while at Wholefoods, we picked up Annie’s Organic Hot Chipotle BBQ sauce, since we both have a love for sweet and spicy. It had much more of a kick than either one of us expected, and our lips were tingling a good while after eating our salads. I can’t wait to BBQ some chicken breast with this stuff!

We wrapped up our evening with oreos and PB, and some hockey. It was a nice day spent with the boyfriend. Tomorrow… road trip.

Raspberry and Chocolate

If there is one thing I have been craving for the past week or so, its been raspberries! Unfortunately, I can’t find raspberries anywhere under $4.99! I’ve been craving raspberries, cottage cheese, and cocoa powder!

So this morning, when I left work, I headed back to Brew HaHa, for a sugar free Brew HaHa Latte (raspberry and mocha syrups). I had a practice exam at 9am (hey, it was free), so I figured the espresso in this latte would help power me through the morning. I remembered to grab a yogurt for breakfast, too. After a while, the tummy wanted a little something so I tapped into the emergency trunk stash, with a Chocolate Raspberry Luna Fiber bar!

After the exam, I had to get my car looked at because my battery light came on. (Luckily, it was just a bad sensor, and the battery was fine.) I stopped by Pathmark while I was in the area and the tummy was growling. I finally gave the Fig Newton Fruit Thins a try. Can you guess which flavor I grabbed? Yup, Chocolate Raspberry. I must say, not too shabby.

I was able to cuddle up ans squeeze in a two hour nap. Really? Two hours? I’ve been up since 5pm yesterday, and all I got is two hours? I think its because I have so much on my mind, so many projects to finish, so many lectures to watch… Well, I up now, so lets bang these out!

Oddly enough, when I woke up from my nap, I had a ravenous appetite! I wound up eating Kashi Pumpkin Spice Flax granola bar and a Peach Cottage Cheese Double. My dad said some days we are just hungrier than others. Yeah, try telling that to this crazy girl. When I’m that hungry, I get crazy self conscious and paranoid.

Take a deep breath. Listen to my body. Focus. Okay.

Since I was up, I made my dinner for tonight’s shift. Last night, I got talking to one of the nurses about my love for tempeh, so I made a tempeh wrap for dinner. I used half an Everything wrap, an ounce of broccoli slaw, spinach, onion, green pepper, Sesame Garlic Tempeh, and a drizzle of fat free honey dijon dressing.

WP_002213This was so packed that the wrap broke as I rolled it up. Oh well, messy food is usually tasty food. Heck, look at sloppy joes!

I can’t believe how good it was. I’ve made this before, but it was exceptionally delicious today.

The reminder of my day was spent at the kitchen table. studying. pulling my hair out.

I always like to eat a protein filled meal the night before an exam, so I invited dad over for steak and eggs. I feel breakfast foods should be eaten any time of the day!

I seasoned some london broil with montreal steak seasoning and pan-fried it. Then I combined 1/4 cup egg beaters and 1 egg, and while in the pan, fold in a slice of Bordens fat free PepperJack cheese. Slice up the meat. Top a toasted english muffin with the eggs and meat. Lastly, I sauteed some onions, peppers, and garlic for garnish.

I followed dinner with some more food: apple, cinnamon, and cottage cheese

This test day began with Raisin and Spice oatmeal and some Dunkin Donut coffee.

I studied all morning, treating my stressed out self to a chocolate chip cookie before the exam.

I managed to pull out a B! Woah! That exam actually gave me a stomach ache!

To take my mind off things, mom asked me to dye her hair. Its nice to have a mom who was a cosmetologist  I’ve never had to pay for a hair cut or dye, and shes been teaching me!

Dinner, tonight, was delicious as well! Tempeh is one of my favorite salad toppers, as are roasted vegetables. Roasted artichoke hearts, onions, carrots, and Sesame Garlic Tempeh tickled my fancy this evening and I did not regret it! Wow-zah! MMMM Good!

My girlfriend, Meaghen, got me hooked on tempeh when I was in New York with Barry’s Tempeh! Ever since, I’ve had tons of tempeh recipes in the making in my head. I can’t wait to make them and share them with you!

Cottage cheese and apples made another appearance as dessert. I’ve been doing a lot of stress eating the last few days, but I’ve recognized it each night, which I’m happy about and have been able to stop.

I remember, now, that this is how I gained so much weight in the first place; not just stress eating, but eating when I’m not hungry, or just because the food is there.

But, alas, although the exam is over, this semester is not. I have two projects and two exams to complete for the big G-Day (graduation)!

Playing Catch Up

This rainy Tuesday morning (3/12) started out with a shake and hot tea. The Black and Muddy recipe calls for chocolate shake mix, coffee syrup, cappuccino mix, peanut butter, and chocolate pudding mix. I dumbed it down this morning:WP_001516

I must say, it was very similar to the original and I got my chocolate fix early in the day.
Speaking of chocolate and peanut butter, I also got a fix with a 90 calorie chewy Fiber One bar! Mmmm! Chocolate and Peanut Butter… Is there any better combination?

I wasn’t quite in the mood for a workout, but not working out all weekend was really starting to  get to my head. I figured this would be  good way to clear my head and prepare for endless studying! However, I feeling rather uninspired. Thank goodness for Courtney, who asked if I wanted to do today’s circuit. I asked if I could share it with you and without further ado…

I’ll tell ya, out of everything in this, I felt the Heels to the Heavens burn the most! Intense! (Definitely use an exercise ball to feel this one!) By the end of this workout, I could could feel the sweat dripping down my nose! It was just what I needed today: something quick and something to burn!

After a much needed shower, I hit the caf to enjoy my dinner, a salad and post workout orange. The tempeh really stole the show on this one! Wowzah! It added so much flavor and texture to the salad!

After a few hours of learning about traumatic brain injuries, I headed to practice. To hold me over I tried a new yogurt: Fage flip Orange Cinnamon. When I saw it, two things popped in my head a) must add flax, and b) I hope it doesn’t taste like potpourri. I know thats a weird thing to think, but its the first thing to pop in my head.. hello.. orange… cinnamon… fall… potpourri…

Anyway, I rather enjoyed it.

So I’ve been referring to “practice” for the past few weeks now, and I suppose that since this week is the big event, I should come clean…

I am in the Vagina Monologues! I saw them last year and felt so empowered, so invigorated . I needed to be part of this. Today was a dress rehearsal and I can not believe how fantastic it has come together!

PS. My eating was fan-freaking-tastic today! Not too much, not too little! Things are definitely turning around! Yay!

Friday:

Over the next few days, nothing but studying was endured. In fact, I could not make it to dress rehearsal for the Monologues and they almost cut my out of the show! I know, crazy, right.

Test Day breakfast: Peaches and Cream Oatmeal with flax and a cup of tea

Sometimes in life, you need to make a judgement call. I stand by mine. As much as I love the show, my education comes first! Luckily, God blessed me with both! I passed my exam, and last night was opening night of the Monologues! It was a brutal exam and an excellent show! For the next few nights, I will be in the show! All the money we raise goes to Project Life Line, and organization aiding rape victims and those victim of sexual abuse or assault. It covers a wide variety of problems, and its an amazing feeling to know that I am helping bring awareness to such issues.

Since I ate “dinner” Friday morning, it was meat free. I love Amy’s meals for a meat free option! This morning I ate Amy’s Mexican Tamale Bowl. I WP_001545always add a decent amount chili powder and hot sauce to spice it up! I split a veggie omelette with a friend at work and made it like a huevos ranchero with the tamale pie! Genius!

As I came home from work this morning, I could not decided whether to hit the sack or indulge my growling belly. Belly it was and I dug into a big bowl or assorted cereals (Cheerios, Kix and the like) and a fruit salad!

I have to say though, one of my favorite things I ate this week was called a Crazy Apple. They are apples that have been flavored. I tried out the Pomegranate Grape and couldn’t get enough. It wasn’t an overwhelming overly sweet grape flavor like I was afraid of. I can’t wait to try the Tropical flavor!
