What Time Is It?

Hey Kids! Do you know what time it is?????

Thats right! Happy Peanut Butter and Jelly Day!!!

You know if its a holiday involving any nut butter, I’ll know about it! A classic side kick to peanut butter is jelly, of course, and one of my favorite collections of such items is Polaner’s Sugar Free with Fiber collection! Well, recently, I’ve gotten on the mason jar bandwagon, and since doing so, have wanted to make  my own jam. Pops brought home a big container of blueberries and JAM, I mean, “BAM!” Don’t have a canner? No worries… Neither do I.

No Sugar Added Blueberry Jam

makes 16oz (approx. 32 Tablespoons

  • 2 cups blueberries or strawberries
  • 1/3 cup water
  • 1 Tbsp lemon juice (zest would probably be a nice addition, as well)
  • 1 1/2 Tbsp No Sugar Needed Pectin
  • 1/3 cup granulated Splenda

Mash blueberries to your preferred consistency. (I like chunks remaining, just makes it a bit more textured.) Transfer mashed blueberries to a medium pot with the water. Sprinkle with Splenda and pectin. Turn heat to medium high. Continue to stir constantly and you bring the mixture to a boil for 1 minute. Thats it!

Remove the pot from the heat, transfer mixture to clean jar(s). To seal jar(s), tighten the lids to a finger-tightness. If you have a canner, now is the time to use it… If not? Follow along:

In a large pot, place the sealed jars, and fill the pot with enough water to cover the top(s) of the jar(s). Bring to a boil. Check on the jar(s) every few minutes. Use a utensil to poke the center of the lid(s). If the lid dips when pressure is applied, continue to boil, rechecking the lid(s) every few minutes. Once the lid(s) are solid and no longer “pop,” turn off the heat, and carefully remove the jar(s), using tongs, and allow the jar(s) to cool at room temp. Then you can refrigerate.

Fun Fact: What the heck is the difference between jelly, jam, and preserves??

The difference between them comes in the form that the fruit takes.

  • In jelly, the fruit comes in the form of fruit juice.

  • In jam, the fruit comes in the form of fruit pulp or crushed fruit (and is less stiff than jelly as a result).

  • In preserves, the fruit comes in the form of chunks in a syrup or a jam.

Strawberries and Mango

I wanted to make today a mildly productive day, and it was. It began with two super yummy shakes!

When I got down to some random frozen fruit, I diced it all up and made one big frozen fruit salad, containing bananas, apples, and assorted berries. This, combined with chocolate protein mix, made and incredibly delicious and creamy shake for Frank. Since I love froyo, oh, so much, and am constantly topping my sugar free strawberry with chunks of mango, I took the cue.

1 scoop vanilla protein powder

1/3 cup halved, frozen strawberriesWP_002900

2/3 cup cubed, frozen mango

1 Tbsp Torani sugar free coconut syrup

Wowzah! That was a tropical dream!

After my shake and a cup of coffee, I grabbed Beauty and pampered her! She got her nails trimmed and a nice bath! It always amazes me how much a dog can shed! Nonetheless, she got a little pep in her step and went to show off how clean and fluffy she was to Bunny.

I think that little pep tired this old gal out… nap time for Beauty!!!

Following her bath, I checked on my discounted pears I had picked up. Perfect consistency for my Bakeri-inspired coffee cake! I’ve cooked for Barry, but never baked for him. I made a slight alteration to the recipe. Rather than layering the thinly sliced apple, I finely diced it and incorporated it into the batter. I then layered the pears, since they cook down a lot easier.

I did have some pears left over, so I did the same and tossed them into the last layer of batter. I feel like the cake was so much moister this time around, since the juices from the apples were evenly distributed.

Barry stopped by after work and I gave him some. It must have been good because he didn’t have any left by the end of the night and told me it was “delicious” and that I should feel free to make it anytime.

I did not have much an appetite today… but Frank wanted to take me out for dinner… for sushi… Dilemma. I compromised. We ordered a large hot and sour soup (always with added hot sauce) and a large shrimp with steamed vegetables, with garlic sauce. Much healthier and portion controlled than going to a sushi buffet.

I love this stuff! I could eat it all day! Its just so refreshing, and I’ve really gotten Frank hooked on the stuff, too!

To finish off my night, a little Zumba! I mentioned last week that the instructor invited me to help lead the class. I did it for the first time, today! It was funny, at first, because I had to remember I needed to be the mirror image of what I usually do. It took a few seconds, but it finally got it. Dancing really gets me going and I think the instructor could tell how much fun I was having. Plus, it makes me go harder knowing that people are watching me, and that if I’m having a good time, they will, too!

After showering off my Zumba stank, and folding some laundry, and posting this post, of course, I will spending the rest of the night in bed sending out resumes.

Today has been a filling day! As always on Wednesday mornings, I woke up and made a shake to start off my day, give me some brain power for a study session and an energy boost for a post study workout!

I had some pumpkin left over in the fridge so I used some of that in this morning’s smoothie. Between the protein from the yogurt and the fiber from the pumpkin, I was stuffed for hours!WP_001663

3/8 cup (or 1/4c plus 2 Tbls) canned pure pumpkin

6oz Honey Greek yogurt

handful of spinach

1 Splenda packet

a couple dashes of pumpkin pie spice

water

ice

After an informative study session, I NEEDED to hit the gym! Being sick puts a major damper on working out, and I needed to get my mojo back. (Plus, I figured it would tire me out so I could sleep this afternoon before night shift). I used my Couch to 5K app to create today’s treadmill routine, followed by some core and lower back work.

I good workout to me is one where I leave the gym drenched in sweat and a smile on my face! And today was one of these days!

When I got to my dads I got crazy hungry, and dad just happens to have Super Chunky Peanut Butter. A spoonful down the hatch!

Dad asked if I wanted to take a quick visit to the store. Ladies and gentlemen… the reason why I love discount produce oh so much:

WP_001667

$1.97 for all of these ginormous strawberries! I went to town! Oh boy, are you all going to love this treat: cottage cheese, nutella, and fresh strawberries! Protein… fruit…. so full! So yummy!

Forget those frozen berries in the freezer! These are going into a shake tomorrow for sure!

Surprising Snow

Yesterday was such a great day and I wanted today to be just as good. I woke up early this morning to get to the hospital to gather information on my patients for tomorrow.  This is what I was greeted with this morning:

SNOW!

SNOW!

And when I left work?

More Snow!

More Snow!

I spent a couple hours gathering information, I headed home and whipped up a shake.

thick n creamy

thick n creamy

I threw in some kale, frozen strawberries, ice, chocolate protein powder, and Stonyfield Chocolate greek yogurt.

I really needed something crunchy this morning, so I ate ate some dry Special K Vanilla Almond cereal on the side.

I have work until 2300, tonight and then its up early Monday morning for clinical. I’m going to be so sleepy! Idid not have time to work out today though because I still needed to do my paperwork for tomorrow.

Apparently, the census at work dropped because I got a call asking if I wanted to take a cancel.. No Way Jose! I’m glad I came in though, because although we did not have aton of kids, I certainly kept busy… And I got another perfect stick! Woo Hoo!

Today was another good eating day! I’m liking this . Two days in row? Heck, I KNOW I’ll make it three, then four, and so on.

I almost got carried away with these and some PB
