The Caramel Custard Experience

Thursday

I had a tricky time sleeping last night… just too much nervous energy and making mental notes of things to say in my interview.

Today was the day I have been looking ofrward to for over 2 years: interviewing for a nursing position on my unit. There were so many candidates! I believe there are 12 people interviewing for 2 positions! Talk about pressure!

I woke up before my alarm went off and took the early rising as a sign to be productive. I turned on OnDemand and completed a few 10 minute workouts, and followed it with some hula hooping. I felt energized, and get showered and stressed for my interview with a clear mind. The nerves did not kick in until I walked into the conference room, where I was greeted by 7 familiar faces: my 2 managers, the head CNA, and 4 nurses. I don’t think I stopped smiling the entire time! I bet I looked like a complete idiot! I couldn’t help it! Not only was getting this interview like a dream, but I felt great about my interview! I walked out feeling calm and confident. I pray that this is sign of good news to come!

Arriving home, I was surprised how hungry I was, despite my late night nervous eating, I whipped up a shake. Today is National Caramel Custard Day. I recalled a Hungry Girl recipe for quick caramel custard, but I thought of one myself to experiment with. My final decision was to make both and decide which one I liked best. I opted for the experiment for breakfast and assumed it would keep me full until my next meal, and that the unusal ingredient was add a different texture to the shake bowl.

  • 1/2 to 1 scoop vanilla proteinWP_004113
  • 1 sugar free Creme Brulee rice pudding cup
  • 2 tsp SF caramel syrup
  • water
  • ice
  • few dashes of cinnamon
  • Spinach and xanthum, optional

I was right! It kept me full until I later woke up from a nap to head off to work! I expected the rice in the rice pudding to add a thicker consistancy, but it actually just blened with everything else. I quite enjoyed it.

I was soo thankful to have slept this afternoon! I woke up feeling refreshed and pleased that my hair and makeup still looked great. Don’t you love when that happens? Especially if you wake up that way! It was time for the Hungry-girl version:

  • 1/2 to 1 scoop vanilla proteinWP_004117
  • 1/2 cup OIKOS non fat plain Greek yogurt
  • 2 tsp SF caramel syrup
  • 1 Splenda packet
  • water
  • ice
  • few dashes of cinnamon
  • spinach and xanthum, optional

This one felt a little lighter, but I had to add sooo much xanthum to thicken it. Both were tasty! The rice pudding-based bowl was a bit thicker and sweeter, while the HG bowl had that Greek yogurt smoothie tartness.

WP_004118I thought the protein from the yogurt would keep me super full but after my rounds at work, I scarfed a Granny Smith! It was delicious, tart, and hit the spot! I also brought my Bubba Keg again, filled with coffee. I fell in love with a new sugar free creamer from Coffee Mate. The name “Italian Sweet Creme” caught my eye and when I read the nutrition label and saw it was on sale, it was a done deal! I haven’t regretted my decision! It soooo good!

WP_004115I was on the floor for the first 4 hours of my shift and spent the remaining 8 in the 1:1. Around 3am or so, I was happy to step out of the room to eat. I was pretty hungry! Either that, or I was really looking forward to my meal! I actually ate a meal of 250 calories! Thats a pretty big accomplishment for me on a night shift! I had packed a romaine salad and including a bunch of different add-ins: chopped pickles, cucumbers, onions, baby carrots, some roasted and unsalted sunflower seeds, bacon crumbles, and dried fruit. The dried fruit was something I forgot I had! It was a Raw Superfruit Mix by  Extreme Health USA. Before buying this blend, I had no idea some of these berries existed: mulberries, sweet and tart golden berries, goji berries, and blueberries. To finish off the salad, I warmed up the Tostito’s Cantina Chipotle Salsa. It was spectacular! I wanted something else throughout the remainder of my shift and ate a knock-off Apple Cinnamon Nutri-grain bar. I typically, don’t find these satisfying, but the mix up from my normal snacks made it pretty enjoyable.

The killer of my shift was working with some of the nurses that I interviewed with earlier in the day. They were completely stone-walling me!  A hint!  Anything! Throw me a bone!

Ahoy, Foodies!

Today is National Butterscotch Pudding Day, so lets begin our Thursday with a little, shall we Mateys?

Sammy, what’s wrong with you? Why are you talking like that? Oh, because its also National Talk Like A Pirate Day. To avoid the scurvy, let add a little Vitamin C into our meals, today, too!

  • 2 scoops cookies n cream protein (1 and 1 of chocolate and vanilla will do)
  • 1/2 Tbsp butter buds
  • 1/2 Tbsp sugar free fat free butterscotch pudding
  • 1/2 tsp cinnamon
  • 1 Tbsp chopped pecans
  • 1 tsp xanthum
  • water
  • ice

WP_003956My vitamin C came in the form of spinach, if you couldn’t tell by the green colored bowl. Oh, and I topped it with ground flax! I experimented with making this into a smoothie by substituting 1/4 cup of Greek yogurt for the vanilla shake mix and 1 tsp cocoa powder. I prefer the shake version better, but not bed.

Frank’s Ascorbic Acid was made with a ton of cantaloupe and half a banana.

I grabbed a shower, hoping that it would get me out of this lazy funk I’ve been. I felt like I was falling asleep in the shower, but after a good facial scrub, smoothie bowl, and a cup of caramel coffee, I felt a little more like myself. I threw on my sneakers and iPod and took a 2 mile walk. My fitness goal was not to go full on running, but rather work on form. It so easy to lean forward when power walking. Instead, I focused on keeping my shoulders back, and my abdominals tight. After a few blocks, you can really feel the muscles on your stomach, obliques, and shoulder muscles!

I felt even better coming home to a bottle of water and having enjoyed a brisk walk on a beautiful day!

WP_003958I made sure to set aside a solid hour and a half to send our resumes! But after that, I actually felt hungry! I had discussed the possibility of making seafood for dinner, with my dad, and he had put in the idea of a tuna melt. Simple! I mixed together a rather delicious tuna salad!

  • 1 can solid white albacore
  • 2 Tbsp light mayo
  • 1 oz roasted red pepper, chopped
  • 3 large black olives, chopped
  • 1 scallion, chopped
  • 1/2 tsp garlic, minced
  • 1/4 tsp reduced fat grated Parmesean
  • black pepper, taste

I ate mine just microwaved, and I made Frank a tuna melt! Not only was it tasty, but its colorful! Spectacular!

After Frank and I ran a few errands, and a little tidying up was done, I got a hold of mom to see what her plans were for the night. I’m really in the mood for Saladworks, I said. “Do you want a turkey sandwich?” No, because then I’ll wind up eating it. “Well, I’m going to get one anyway. You can just eat the turkey.”

Thanks, mom! But it worked out really well! I ate half a Luna Carrot Cake bar to hold me over until dinner, and when it was time, I offered to pick it up. I power walked another half mile, and was pretty stoked that I ran the last block uphill! I ordered a turkey sandwich with extras pickles and onions, American cheese, lettuce, on rye bread, with sweet peppers on the side. Mom typically orders extra mayo. No way, woman! You can add your own mayo!

WP_003967This was so good, that I made another small salad! Every time mom and I get a hoagie from Degnar’s Deli, we get into onion mode. They have the best onions! They are perfectly sliced, crisp, strong and mom and I always wind up slicing onions as a snack. To the second salad, went a whole cucumber, two sweetened gerkins, and a bunch of onion, all topped with salsa! Sooooo good! I thought the combination of pickles in my salad was odd until dad reminded me that they technically are the same thing… duh, Sammy.

This meal put me in quite a veggie mood, and I snacked on celery and sugar snap peas with salsa until mom and I met up with dad and Barry for the Eagles/Chiefs game.

I stuck with my pirate theme and got Captain and Diet Pepsi. Barry got a little intoxicated! But on the bright side, I got to drive his car. (It’s a stick shift, and hes been teaching me.) But I drove home and didn’t stall! Woo Hoo! And Melissa, my favorite bartender made bacon mac n’ cheese, which was good sober-up food. She also let me play around with two new Pinnacle vodkas on the shelf. The first was Caramel Apple, but the one that grabbed my eye was the Pumpkin Pie! Yes, Pumpkin Pie vodka! We started thinking about things that you could drink it with. I suggested Rum Chata and it worked beautifully! Like a pumpkin egg nog!  Melissa, then, added a few drops of Bailey’s. It cut some of the alcohol bite, and I would have poured that shot right into a cup of coffee! MMMM!

A Side Note:

Teresa mentioned to me that I used pigeon peas to make yesterday’s Split Pea Soup. I forgot to address why. Thanks, Teresa!

I grabbed the wrong bag of peas from the farmer’s market, but did not realize it until they had already been soaking overnight. I watch shows like Chopped, Cupcake Wars, and Iron Chef because I believe a great chef goes with the punches. I always challenge myself when I watch the shows to try to come up with what I would do if I was on the show. Therefore, once I realized my mistake, I rolled with it, and made it work!

Hectic Weekend

Saturday

Last night ended with a handful of grapes and a bunch of pretzel sticks with Honey Mustard Dip. I was able to get close to 900 calories in yesterday! It was because I listened intently to my body. I ate when I was hungry, and stopped when I felt full (although I could have ate that whole darn birthday pie, myself). After I reviewed what I ate for the day, I was happy with it. I didn’t eat too much of one thing, and I didn’t eat too little, but that damn number is still hauntingly and dauntingly eating away at me.

I thought about why I could be getting so paranoid. A few things came to mind:

  • Vendemmia (a big wine and food festival coming up)
  • my girlfriend’s wedding
  • Halloween candy
  • Thanksgiving
  • Christmas cookies

I need to be able to take these events like any other person. Just listen to myself. I know this eating disorder is something I will live with the rest of my life, but as long as there are more good days than bad, and supportive people to help get me through them, I can live with it.

Today is National Eat a Hoagie Day. Although it technically wasn’t a hoagie, I made a breakfast sandwich that was pretty tasty of eggs, Canadian bacon, hot sauce and cheddar on toast.

A little bit later, to hold me over until work, was a bowl of Greek yogurt I i splashed some sugar free pumpkin pie spice syrup into and topped with sunflower seeds for a nutty taste. And it really did the trick!

WP_003916I couldn’t quite wait for dinner but needed something in my belly. My assignment was a bit wacky and out of the ordinary, tonight, so I decided to take advantage of a short break and enjoy a tart granny smith apple. About two hours later, I had my actual dinner.

Dinner tonight was a spinach salad topped with half a Lean Cuisine Greek-style Chicken Salad Creation (minus the croutons).

WP_003917I really liked the cucumber dill dressing that came with it! Ever since I started making dill salads I’ve started to develop a taste for the herb.

I was proud of myself. When I arrived at work, there was a bowl filled with Reese cup miniatures. I went the while shift ignoring them. 7 pm hit like a tornado and I was non stop! . When I finally got to sit down and breath, o decided a salty sweep piece of chocolate was well deserved.

Sunday

After work, last night, dad wanted me to come over and I was surprised by how hungry I was when I left work. I went to dads house and we stayed up late snacking on veggies and salsa. We even ate half a jar of roasted red peppers! They are so tasty, plain or on a saltine. (Please excuse dad’s pile of mail… its a bachelor pad,,, what do you expect?)I even took a bite of a hoagie, and actual hoagie! It was delicious! I had the calories to spare, and I had a great time!

The temperature seriously dropped, last night. I know I didn’t need to, but I totally put on the footie pajamas! Yes, I am an adult and adore footie pajamas!! Even my dad says how solidly I sleep when I’m in them. I love this picture dad snapped of me. Red handed with a bell pepper and a jar of salsa in my sock monkey footies! We stayed up, I don’t even know until what time, watching Monk. It used to be our Friday thing before I got sick, so I really enjoyed having that with my dad, again. Its another reminded how important my recovery is.

The next thing I knew, it was noon, today, and my dad was waking me up. I went back to my mom’s house to grab my medication, and try to keep busy before work. I first made my Key Lime Pie protein smoothie bowl, that I’ve been craving. Instead of the usually flax or crumbled graham topping, I topped it with flax and Fiber One cereal. It was so delicious, especially paired with a coffee. I recently got a new shipment of sugar free syrups flavors and I’ve been trying them out. Today’s first mug of coffee was flavored with Pumpkin Pie Spice SF syrup, and Eggnog SF syrup. Wow!

I ran out to the oriental market to pick up a few necessities and returned home a bit manic about eating last night at dads. I worked with my best outlet and cooked. Its not really “cooking” but I made my girlfriend a batch of the Sammy San Seaweed Salad.  I can’t wait for her to taste it! I made a final cup of joe for a pick me up before work, flavored with another new flavor, English Toffee SF syrup. I’m glad I went with a second cup of coffee, today, because work had plans to keep me busy.

WP_003923I arrived at work to a birthday cake, which I ignored the entire shift! Not like I would have had time to eat any. I barely had time to chart, let alone eat my dinner. A few animal crackers helped to finish through the night, but I could not believe how busy it was! Weekends at the hospital are usually slow! SSSSSSLLLLLOOOOOWWWWW! Its typically filled with discharges and few admissions, and a lot of coworker banter. This weekend, I was lucky if I could grab a drink or go to the bathroom. Even the nurses were feeling the heat!

I was actually kind of relieved when I had to sit 1:1 at 2030. I was finally able to chart, grab a drink, and just breath.

OIKOS Smoothies Morning

I was sent a recipe for a South Beach Mango Lassi a week or so ago, and with my recent obsession with Indian food, I was more then apt to try it.  Lassies are a traditional yogurt-based drink that you will find on any Indian restaurant menu.

I whipped out a plain OIKOS and told Frank I was making a smoothie, to which he replied, “Will you make me one, too? I just bought yogurt.”

I typically like to add a scoop of protein to my smoothies for staying power, but since I’m out of vanilla, I had to stick with the God gave me.

Frank has been wanting me to make him a Key Lime shake for a while, now and since he had OIKOS Key Lime Greek yogurt, thats what I whipped up. (By the way, if you’ve never had Greek yogurt, this is the stuff to suck you in!)

Key Lime Smoothie/Shake1 5.3oz OIKOS Key Lime Greek yogurt

1 tsp sugar free lime jello mix

ice

1/3 cup milk

water

protein, optional

Combine and blend!

Mango Lassi Smoothie3/4 cup frozen mango

1 5.3oz plain OIKOS Greek yogurt

1 Tbsp granulated Splenda

I planned on taking a walk to the supermarket to pick up some ingredients for some recipes, but as I currently type this post on the pouch, thunder and rain has set in. Change of plans, I guess.

Warning: Gross Alert! 

Before the wind picked up and retiring from the porch, I was typing away, when out of the corner of my eye pounces Bunny. In mid-air, this crazy cat caught a bird! Are you kidding me?

I couldn’t believe it! I was stunned and mortified, and disgusted, and for some awful reason, I could not look away! I called Barry and told him what happened. Only one word found its way out of my mouth, “Ewwwwww.”

“Can you say anything else?” he asked. “Ehhhhhhhhhh.”

I was disturbed. The image is scared in my head as Bunny chomped away at the poor birdie.

Later today…

It really came down today, so I went to the store to pick up the last few things I needed for this weeks recipes! Something was on my mind today, I don’t know exactly what, put something we definitely there. To keep myself busy, I decided to, can you guess, did a little cooking. Stay Tuned!

WP_003251Barry came over after work and I left terrible that I didn’t go to his place tonight. Barry leaves this weekend for army duty and he and I both work this week, so our time is pretty limited together. I was in a funk, with a knotted stomach, and a little dizzy.

After Barry headed home, mom and I ran to Wawa to grab a little gingie (ginger ale), and i finally found it! Diet Cherry Dr. Pepper! I finally got my fix. Knowing I needed something in my tummy, mom and I split a can of Campbell’s Chunky Split Pea & Ham soup.

With a little salt and pepper, this stuff was delicious! It was probably the best canned split pea I’ve ever had. There were big chunks of potato and carrots, and ham! Not little pieces of ham… big chunks of ham! And it was filling!

Berry Muddy

Based off of my Black and Muddy recipe, I started the day with a Berry Muddy Shake:

1/2 pkt Nature’s Plus Spirutein Cappuccino protein powder

2 Tbsp Chocolate PB2

1 Tbsp sugar free Torani Raspberry

Franks consisted of both vanilla and chocolate protein powder, bananas, and blueberry preserves.

The rest of that day, was once again, a lazy one. I randomly snacked on things like pickles, crackers, and cantaloupe until it was time to head to work. I couldn’t quite figure out if I was hungry or not today, but I kept the snacking in check and drank plenty of water!

I arrived to work to find I was assigned to work at the desk tonight. As the clerk, it was a relatively uneventful evening and I could not wait to curl back up in bed!

Since I was feeling quite bloated today, (I drank a TON of water), I opted for a guilt-free soup, although I’m sure the sodium content did not help with the bloating issue. I refer to it as guilt-free because I can eat the whole can of soup for a measly 100 calories! Thank you, Progresso French Onion!

For a snack to hold me over, I brought half a large cucumber! I love cucumber! Especially during the summer. They are so crisp and refreshing,and oh so guilt-free! I tried an interesting combination, I will admit. I had a small pack of strawberry preserves, and dipped a slice of cucumber in it. I was surprised with the refreshing, moist, and mildly sweet treat. (I’ve warned you many times… I’m a weird one.)

To finish my night, a Special Dark Chocolate Hershey Miniture and some nutella and Suzies!

Summer Flavors

This morning began with my stomach feeling well and an excitement to utilize some fresh fruit from the fridge! I made Frank a Berry Colada Smoothie

It was so filling and refreshing! 

Frank went with me to run some errands. Beauty was in need of dog food and Walmart is the ONLY place I can find Dannon Light and Fit Greek Blends Toasted Coconut Vanilla! They only had 2 left, which I quickly snatched up! Its so hard to find the Greek Blends

Once we arrived home, I made a batch of tuna fish, which Frank really enjoyed! He loved the Greek yogurt, cucumber, and dill combination. He ate it on wheat saltines, while I served mine on Suzies Corn, Quinoa, and Sesame Puffed ThinCakes

The remainder of my day was a pretty lazy one. I just kept counting down until Zumba! Thank goodness it was a 6pm, and not a 7pm, class tonight. I made a cup of coffee around 3pm in the hopes it was give me a boost. No luck. An afternoon nap, maybe? I usually refuse naps because  I’m notorious for not sleeping later that night. I attempted a nap, but it just didn’t help.

It was definitely the sleepiest Zumba class I’ve ever done! Half way through class, my belly was growling. I drank water but I guess it was legit hunger. I walked in the house after class around 715pm to Frank grilling BBQ pork chops and homemade brown pilaf with sun-dried tomatoes, corn, and capers! Heavenly!

I Skyped with Barry a bit and I’m looking forward to relaxing in bed the rest of the night.

Eggs and Doctor’s Day

Wednesday night, I ate some homemade wonton soup I found in the freezer. Yum!

It was an easy shift since I was placed in a 1:1. Although I did not have any school stuff with me to pass the time, I spent my night researching downtown San Jose and eateries to better prepare myself for next week’s trip. I found a variety of places including Indian, sushi and vegan!

Arriving home, I made a cup of decaf tea and sleepily waited for my uncle to drop of some much anticipated cookies. Ever since my grandmother passed away, he has turned into “Barry Crocker.” His specialty is ricotta cookies. I love his ricotta cookies! The texture is so unique! He typically makes Lemon Ricotta Cookies that I devour every time! I mean, these cookies go fast! Everyone wants them! He called me and said he would drop off his latest creation: Chocolate Chip Ricotta Cookies! They looked like chocolate chip scones, but wow! They had the same texture as before, but no with a chocolate treat. One word: Addicting!

I spent the remainder of my afternoon taking a brisk walk to the supermarket for some few essentials for the weekend, then tidying up the house, and doing a bit of ab work.

Before I left the house, mom really wanted to make some popcorn. Last year, when I was in Nashville, TN for the International Convention, I picked this up. I though the novelty of it was too cool! Its a cob of corn… to make popcorn! You just slide this, what looks like Halloween corn, into the provided bag, fold the bags edge closed, and pop away!

I arrived on night shift apt! I don’t know why… this energy, though, helped power me through a night of 10 patients! I was greeted on the unit by these little dudes:

I forgot we had an egg decorating contest to help raise money for the asthma foundation. In first place, was Angry Birds.

I had one of the best night shift meals in a while! I told you that falafel dip was going to be a Bundo house staple, and I meant it. I mixed the remaining dip left over from the falafel with some tuna fish. I laid this on a bed of spinach, along with tomato and onion and wrapped in an Everything tortilla! At work, I lucked out and found some roasted red peppers on the salad bar and threw those on there, too! To join the party… some celery and carrot sticks with reduced fat Ranch dressing and a fresh and crunchy bean salad, also from the salad bar. Dessert was a Fiber One brownie!

It figures that the one day I mess up on eating meat, it would be the morning of Good Friday! Ugh! My girlfriend and I split some chicken fingers! I haven’t eaten them in ages!

During this shift we also decorated for our unit’s Doctor’s Day. Our night shift crew prepared everything for breakfast while today;s day shift staff will set up lunch. We had bags of Quaker Quakes, Fage yogurt, coffee, fruit… etc.

But the niftiest of all was the cake! We filled empty sterile syringes with red icing and med cups with M&Ms:

I headed home in fun because I ate a bit more than I had wanted. After chatting with mom for about an hour, I started to feel a hungry stomach (which kind of cheered me up slightly knowing that I recognized what my body wanted). Before heading to bed, I pulled out OIKOS Pomegranate Greek yogurt and topped it with chia. MMMM I forgot how much I liked this one! (And my Scooby Doo spoon from the bottom of the Rice Krispies box, to embrace some childhood).

I was able to get about 2 hours of sleep before I woke up. I guess I turned off the alarm I had set for Church, but I still woke up on time. I guess the Big Guy really wanted me there! This is something I look forward to every Good Friday. (Today is Good Friday, by the way… the day Christ die on the cross.) Every Friday during Lent we celebrate what is known to Catholics as the Stations of the Cross, marking key points leading up the the crucifiction. On Good Friday, the congregation meets a few blocks away and processes towards Church with a large wooden cross. We pause at intervals to read the stations, and as we process we sing hymns. I love the unifying feeling of this event and the fact that we take time to reflect on our lives, faith, each other, and our blessings.  I am a lector at my Church as read a station every year. This year, I also acted as song leader, leading the congregation in the hymns between stations. I wanted to be more involved this year, and I helped carry the cross in between two stations. I had three favorite parts about today’s procession: 1) all the new faces, 2) it was my mom’s first time attending, and 3)even the little kids got involved this year!

Afterwards, I whipped up a new recipe that I guarantee you will see again on this blog! My mom and I love eggplant. I eat mine in any way but fried, and my mom ONLY eats hers fried, therefore, I am always looking for healthy eggplant recipes to snag my mom from the dark side. I used Hungry Girl’s recipe for an eggplant stir-fry and let me tell ya, I was impressed! I find with some of her recipes, that theres a potential for bland-ness or that I need to acquire the taste, but not with this one! And an added bonus what how absolutely easy it was!

To top it off and add some different textures, I steamed up some frozen stir-fry vegetables. I can’t wait to try this with tofu! I’ve had a decent amount of requests from readers about tofu recipes, so this is a contender.

MMMM! It was everything you’d expect! Sweet and sticky and just a little kick!

I had gotten a coupon for Payless Shoes for 20% off my purchase  and since I’m going to be hitting California soon, I thought I could use a nice pair of black staple pumps. After playing around with some shoe indulgence and a fashion shoe (haha puns!), I decided on a comfy pair of peep-toes.

Sweat It Out

Bet you thought this would include some awesome workout, huh? On the contrary…

The worst part about feeling under the weather, is my absolute lack of motivation! I don’t want want to stay awake or work on my projects, let alone work out. So the rest of the night was spent attempting to finish up some of this school work!

While on the phone with pops last night, I asked for him to decided today breakfast shake… He seemed adamant about cherries. So I took out a Dannon Light and Fit Cherry Greek yogurt. On a side note, I like to buy yogurt when its really cheap and freeze it. I use these in my shakes.. it adds to the thickness of the shake, like using ice cream… Anyway, the following went into the bullet:

I spent my day with dad at his office. I knew I’d get work done if I was not home. It was a nice day seeing dad in action. To help nurse this… whatever congestion thing is going on with me… dad pulled out this nifty Cup of Soup instant soup packet. As much as I’m not a fan of these because of sodium content, it was just what I needed! That and another mug of hot tea!

A little school work was completed but mostly I watched Hallmark movies and ate Chinese food. Yes, we ordered out again. Frank was so impressed with my dinner last night that he wanted it for himself tonight. So he ordered that and I ordered the veggies with chicken. Woah baby, that was a lot of chicken! There’s just something about eating all those veggies and protein that just makes ya feel good! Mmmm I also ate a big bowl of hot and sour soup, my favorite Chinese soup to help me feel better. I think it worked since half way through it, I took off my robe from sweating! That’s the way I like it!
Hot and sour soup has always been of of those foods I’d love to make but never got around to doing.

(Not) Down with the Sickness

Did you know March is National Noodle Month? Neither did I.. but it worked out that I brought a noodle dish for dinner last night. Last night I brought Smart Ones Shrimp Marinara and bulked it up with some Fettucine Tofu Shiritaki Noodles and broccoli. I’m glad I spiced it up a bit. The shrimp was a little chewy, also. I don’t see myself getting this one again…

Eating was pretty decent last night, thank God! I got all my work done so quickly that in my down time I watched a lecture! Woo Hoo!

I have sooo much work to do this weekend! I need to kick some serious butt.

Today came with sleep deprivation, stress, but uber excitement! I was watching my goddaughter today! It has been so long since I’ve seen her and she got to play with all her Christmas presents over here!

Before I picked her up, I made dad and myself a cup of coffee. I also whipped up last night’s smoothie for dad, while I enjoyed a little sweeter Apple Crunch shake:WP_001432

I loved having Kinley over! She is so smart! She shocked me when she grabbed a coaster and put her cup on it, or at lunch when she out her napkin on her lap! She only a year and a half! My baby girl is a genius!

But I have to say, I felt exhaustion kick in around 11am. Luckily, mom said she would watch Kinley while I took a power nap! I haven’t seen my mom with this much energy in a long time! I woke up with a bit of a scratch throat. Oh no! I can not be getting sick! I immediately brewed up some ginger and lemon tea and shot back a glass of Airborne. It was only a matter of time until the stress of the past few weeks, plus working with kids with respiratory illnesses, caught up with me. Fingers crossed- I’ve nipped this in the bud!

Right as we arrived back at Kinley’s house, she was passed out! And I had worked up quite an appetite! Frank, my step dad, called while I was out at the supermarket picking up a few things and asked if I wanted Chinese food. I LOVE Chinese food! On the occasion  I’ll make it from scratch, but I had been wanted Chinese food for the past few weeks, and, hey, he was treating! I opted for one of my favorite and more health conscious choices: Steamed Vegetables with Shrimp, and a side of garlic sauce! This meal NEVER disappoints! I love the sweet and spicy bite of the garlic sauce, the protein from the shrimp (no meat of Fridays), and the fresh, crisp, crunch of the veggies. I’ve said it once, and I’ll say it again, “I just don’t know how these places get their veggies so perfectly steamed!” (My stepdad always gets the ribs, so I had to sneak in one of those!)

The immediate dessert was, duh, a fortune cookie. Later, it was a salty sweet favorite: 94% fat free Kettle Corn popcorn and nutella drizzle!

The remainder of the evening is going to be spent ATTEMPTING to watch renal failure lectures, without falling asleep (I’m in desperate need of solid sleep!) and winding down with some chamomile and honey tea.

I started my testing morning as I typically do, with a bowl of oatmeal. Using package oatmeal is super easy on test mornings. I decided on Very Berry oatmeal by Better Oats. I find this oatmeal to be rather sweet, so I cut it down by adding some nut butter and ground flax. This brand of oatmeal already has flax seed, but a little more won’t hurt me. This morning, I used the soy nut butter. I figured the oatmeal would mask its interesting flavor. I was right, and this breakfast kept me very full. It was paired with a cup of coffee.

After the exam, I hit the gym. As I began my warm-up on the elliptical, I checked my email. I did not really have an idea of what I wanted to do today so it worked out that I was greeted with an email from Julie, pbfingers. The idea of spending a little extra time on the elliptical appealed to me so I stayed on, like she did today, and completed her Upper Body Super Set. (Since our small school gym does not have a barbell, I used the bend for the chest presses.) There was a girl at the gym who wanted to work on her arms so I invited her to join me. Time goes by sooooo much faster when someone else is with you!

Post workout, I arrived home to enjoy a banana and finish some homework. I also steamed a very petite bowl of baby carrots.

Nap time! Literally.. thats all I got was a nap. I only slept for about 2 hours, so it looks like tonight will be a caffeined night shift. Therefore, I got my booty up, took a shower and made a shake and some coffee.

Back in January, Julie posted an energizing smoothie that caught my attention. I made a mental note to use my frozen mango for this… well, apparently I stuck that mental note way too far in the back of my head, because I just now remembered it. I figured this would be the perfect pick me up for night shift!

Woah Mama! This was delicious! I had to control myself. Plus, it was super filling. It also turned out nice and thick and ate it with a spoon out of my tumbler. I called dad up, as I slurpped away at this tumbler full of yum, and told him that he was going to get one for breakfast tomorrow! He could not refuse!
