I know…

While the guys BBQ’d burgers and dogs and made mac n cheese for dinner last night, I steamed a big bag of California blend frozen veggies, seasoned with garlic, basil, and a drizzle of light Italian dressing. “Is that good?” Barry asks. “Try it.” “Wow, that is good!” “I know….” ¬† ūüôā

We fell asleep watching Part 1 of the Half Blood Prince, last night, and awoke with a serious coffee craving. The coffee really hit the spot today. Barry and I split a Cinnamon Raisin English muffin, dipped in sugar free syrup.

The heat has been pretty intense lately and it really got to me today. I had every intention of going to Zumba, but every time I stood, I got light headed. I tried to drink a lot of water today, but still had to blow off class.

Mid-morning, I got a crazy hankering for grilled zucchini. Dad and I headed to the farmers market. My belly was growling something fierce and I opted for some seaweed salt. Dad ans I are addicted to the stuff! I may have tapped into this container while still shopping.

Also making an appearance this afternoon was a new KIND bar: Dark Chocolate Chili Almond.

Dad described it really well as, “nondescript.” After having Chilies and Cherries in Dark Chocolate ¬†by Chocolove and really catching that bite, I expected more from this bar… more of a spice or a kick.

When we got home, I lit up the grill and grilled hot dogs for the guys and zucchini for me.

Slice the zucchini in half, lengthwise. Using a spoon, deseed the vegetable to create a boat.

Spray the exposed zucchini with nonstick cooking spray and place down on the grill, so the green is facing up. Grill over medium-high heat until grill lines are evident and water has clearly been drawn out of the vegetable, approximately 15 minutes. (This may take longer depending on how well you want the zucchini cooked.) Flip the zucchini over and lightly brush with pesto, or red sauce, and sprinkle with black pepper.

Top with desired toppings.I topped mine with sliced tomatoes, turkey pepperoni, and fat free shredded mozzarella, granulated garlic and crushed red pepper flakes!

Grill for another 10 minutes or so, or until the desired wellness of the vegetable.

Later this evening dad called me to tell me how he was still impressed with how tasty the grilled zucchini was!

I picked up a peach at the market, earlier, in honor of National Peach Ice Cream Day. Taking a cue from Hungry-girl, I sliced the peach in half, sprayed the exposed fruit, and grilled it skin side up. Still warm, with well defined grill marks, about 13 minutes on medium high heat, I served it with a scoop of Breyers Vanilla Carb Smart Ice Cream!

Since I wasn’t going to Zumba, I sat on the porch with some fresh brewed iced tea and studied for the boards.

I was very content, hunger-wise, for the majority of the day.Right until around 9pm… I did some snacking to figure out jut what I was looking for… the winner? Pineapple!

My accomplishment of the day: single handedly eating a whole pineapple!

I sliced up a pineapple after dinner, and throughout the night, I kept stealing slices of it. It was the best pineapple I’ve had all season! Is it bad to eat a whole pineapple in 1 day? I’m not sure, but I’d rather eat that than ice cream or cookies. (I did eat a few cookies, today, though…) ¬† :/

And now? Well, I can’t sleep. I think all that pineapple gave me a sugar high! So until I start fading, its blog fun and Rugrats reruns on late night TV.

Candy Bars

This morning I decided to cook breakfast for everyone at Barry’s house. When I say “everyone” I refer to Barry, his two house mates, my girlfriend Maggie, another housemate’s girlfriend, and myself. Barry’s favorite breakfast food is pancakes, and his favorite fruit is Blueberries. Therefore, blueberry pancakes it was!

I mixed my normal complete pancake mix, spiked with some vanilla extract and cinnamon. After dividing the badder on the skillet, I sprinkled in handfuls of blueberries. I had a banana, so I sliced some up and threw some slices in some pancakes.

We went food shopping for the guys house and obviously got a little carries away.

In the bright side, I finally found raspberries! As soon as I walked in the house, I threw a handful in some cottage cheese, and topped it with cocoa powder and Splenda! (Its even better with chia seeds.) I have jonesing for this!

I wasn’t super hungry for dinner, so I tried Fage’s Pineapple Fruyo,¬†topped with chia seeds. I really enjoyed the big chunks of pineapple!

In other catching up details, last weekend was quite busy. I participated in the NAMI Walk on Saturday and my little cousin received her First Holy Communion!

NAMI stands for the National Alliance on Mental Illness. Battling depression, and having developed a sweet spot for the mentally ill during my Psych rotation, I really wanted to participate in this walk. A classmate of mine, Dave, jogged with me. Unfortunately, this walk was during the height of my allergy induced stuffiness. “Dave! Slow down! I need to blow my nose!”

Olivia, looking too cute, received her first Eucharist, the second sacrament in the Roman Catholic religion! I was very proud of her!

So, you are probably wondering why the title of the post is “Candy Bars,” yet not once have I mentioned a single¬†piece¬†of chocolatey¬†guilt… Time for some reviews! The two bars that I will be reviewing today, remind me of two of my favorite candies! The first is the Chocolate Caramel Cluster Zone bar; the other, the Chocolate Hazelnut Atkins bar.

I bit into the Chocolate Caramel Cluster bar on my way to work one night and was surprised at the presence of actual caramel! A Baby Ruth candy bar is nougat, peanuts, and caramel covered by chocolate, and thats exactly what I tasted when I bit into this bar! Its time for a side-by-side comparison, shall we?

After my first bite, I¬†savored¬†the bar, thinking I had tasted this before… but I wasn’t referring to the bar… It tasted like Ferrero Rocher! I love biting into those wafer bars to find a creamy chocolate with a hazelnut center!

I heard the doorbell rang, and I could not go back to sleep. So I woke up and made a shake to wake me up, fill me up, and help replenish my muscles from the morning workout. Since today is National Peanut Butter Lover Day, I threw together the classic:

Night shift was smooth sailing with the exception of a few fevers. And my eating was good, too!

As soon as I got home, I crashed! I woke up around 1 pm, just in time to get ready for another shift.

A dark chocolate covered pineapple that I picked up from the Farmer’s Market. Interesting…

Tonight, something amazing happened. I’ve never been more flattered! A mom grabbed me and told me to visit her daughter. Apparently, her Aunt brought her a stuffed puppy dog and she sleeps with it every night. Her mom asked her why she named the puppy, “Sammy.” She said, “after my nurse friend Sammy!” I was floored! So sweet! Is this what it feels like to be a nurse? To establish that relationship with a patient? I love it!

Dinner was Chicken and Carrot ravioli topped with green beans and basil pesto. Yum!

I ate dinner early so I got hungry around 9:30pm and grabbed a snack pack of Lorna Doones. This was my first interaction with these cookies and i must say, they were satisfying and delicious.

A girl from work kept talking about calzones and chicken wings on our way out the door and I started to crave a calzone! My step dad ordered pizza last night so when I got home I snacked on a piece of left over.

My eating is not perfect but it is getting better every day and I’ve been more in tune with being able to recognize fullness. Thank God!

 

Working a Twelve & Some Serious Cereal

Saturday:

I did not have much of an appetite this morning when I woke up, so I headed to work with some snacks, just in case. Lunch was healthy… pineapple and cottage cheese. The other day mom bought a pineapple and it was so sweet and delicious, she ran back to the store and bought 2 more! I’ve been in my pineapple glory!

When I got to the unit, Julie was there with my girl scout cookies. I totally forgot I ordered these. Down the hatch went some do-si-dos. Those are some dangerous cookies!

Later, I made a bowl of oatmeal, that I actually meant to eat earlier in the day. I find that with a lot of instant oatmeal, with berry flavors, they are just too sweet! I mellow it out with some ground flax. I’ve never tried this oatmeal before, so I did not know its sweetness. I have to say though, the flax made it all the better!

I never actually wound up eating dinner tonight. Not because I was too busy to eat, but because a certain chica (myself) ate a few too many cookies… and got a belly ache.

Silly Sammy… oh well, at least my dinner for tomorrow night is already at work.

Sunday:

I went home, craving real food! I wound up eating a bowl of cereal and some pineapple.

I lectored at Church this morning and it was really nice to see some friends I hadn’t seen in a while. Deacon pulled me aside to tell me how worried he was about me and how happy he was to see me put on weight. I like to hear things like that but I’m definiately ready to get rid of this belly I put on.

This morning, I ate a packet of Quaker Cheddar Grits. When I first opened the packet, the chedder smell reminded me of the Easy-Mac cheese.

Even though its been sunny, the wind chill was just too cold for me, so Day 5 of Couch to 5K was out today. Instead I did a 12minute warm-up with Dave Sinclair OnDemand and followed it up with¬† Julie’s Jump Rope n’ Abs Workout.

I’ve really been on a serious cerel kick, lately. Every time I go for a snack, cereal is the winner. For lunch, before I headed to work, I finished off my Cinnamon Pecan Special K cereal. If you recall, I said earlier that I did not care for the cereal with milk, but by itself, its a keeper. Well, the same goes for Kashi’s Berry Blossom cereal. I had a bit of each left and decided on a combo deal. YUM! I don’t know if the Special K tasted better because all the nuts and cinnamon settled to the bottom of the back, or what, but it was tastey!

Dinner was what I did not eat last night: Lean Cuisine Chicken with Basil Cream Sauce. Ialso steamed some frozen oriental vegetables to soak up some of that excess sauce. I added some black pepper, like I do with most things. Myfavorite part of this frozen meal was the Italian green beans! This isn’t a favorite meal, but the added veggies helped and I could eat those green beans all day!

Dessert came with a little sugar and some staying power. A granny smith with some hospital PB made its way into my tummy.

I start my new rotation tomorrow morning at a new clinical site. I’m kind of exciting since the place does similar work to my actual job, but the paperwork looks a little intimidating.

Rain Delay?

I grudgingly drug myself out of bed this morning as I heard the rain pounding on the windows of my room. As I hit play on the workout video, I received a phone call. Who the heck is calling me at 0530 in the morning?! It was my clinical instructor.

“Wow! The rain must be pretty bad to cancel clinical.” Nope, my instructor was sick.

Today has been a different kind of day. Rather than getting to the hospital at 0630, I reported to school at 0930 to assist the first semester students with the skills they were learning. This was considered my clinical hours. Breakfast was a Chocolate Caramel Special K Protein Bar.

This bar was pretty decent. I would probably get it again. It has caramel flavored chips numerously scattered throughout the bar and it has a nice crunch.

During the lunch break, I was not hungry, so I utilized the gym. Its hard to believe that after 4 years of being here, this was the first time I used the gym. It was much smaller than I had expected, but I used to elliptical to really try to burn some calories. I completed Julie’s 20 minute Elliptical Workout.

When I got back to class I was rosey and sweaty, but I felt great! After the class finished, I headed down to the caf, turned on a lecture on my laptop, and enjoyed a Dannon Light & Fit Pineapple Greek yogurt, topped with chia seeds, and a Kashi Happy Trail Mix Cookie. The coconut from the cookie really went well with pineapple.

I can only watch lectures so long before I need a break, plus I needed to charge my laptop, so I headed back to the gym to clear my head and played around with some strength training. I used Julie’s 30 Second Rest Workout to base my workout:

PROBARs Old School PB&J meal bar tastes like a seedy peanut butter and jelly! I typically don’t like to eat bars that are more than 250 calories, but this flavor was calling my name. It had a great flavor and¬†consistency. I either love or hate PROBARs, and this was definitely a love. One thing I really like about this brand, is the use of whole flax seeds!

This was followed by a binge. I’ve really been on a roll with these binges lately, haven’t I? I was really feeling great after working out today! It really frustrates me that this keeps happening. I don’t know if this has ever happened to you, but its almost like my hand has a mind of its own. Like I verbally tell myself to stop by my hand keeps putting food in my mouth. Its the weirdest thing.

I plan on working out tomorrow after clinical. I always feel better after I work out.

I guess it was an interesting day all over. I woke up this morning hearing that the Pope was stepping down, then I see that some butthead got Wilmington on the national news for shooting up a courthouse!
