Tools at Walmart and Shopping Fun

I wound up crashing on the couch last night, but I crashed hard. I guess I needed it. I woke up with a plan for my morning and I stuck with it. I offered dad a Red Velvet Cake Shake. “If I’m going to have a shake, I don’t think I’m in the mood for Red Velvet.” Well, whatchya want, pops? “Are you able to make a Banana Creme Pie?” OK, see you in 10!

Banana Creme Pie

  • 1-2 scoop vanilla protein powder
  • 1 frozen banana
  • 1 Tbsp SF FF Banana Cream pudding mix
  • 1 Tbsp crushed graham crackers

Dad said it was the best shake I’ve made him! Dad was double-fisting this morning with his shake and a mug of coffee.

Before I lost my motivation, I cut my conversation with dad short, suited up, and ventured into the beautiful breeze in Wilmington, this morning, and did a little refrain running for about 2 and 3/4 mile. My destination was to the ACME. They were having a big dollar sale on celery, mushrooms, and assorted produce, and wanted to stock up.

I took my sweet ole time in the store and found some interesting items. I was picture snapping machine:

Oh no! Which to choose? I was a good girl and maintained my self control.

The tiny pepperoni! I had to laugh and just imagined myself giving those out to trick-or-treaters. The poptarts? Both my dad and Barry insisted on the purchase. I have not tried them yet. And the cookies? I’m waiting for an oreo surround by chocolate chip cookies… then I’ll faint into a cookie wonderland.

Speaking of cookies, I found this link that I thought was really interesting! It all makes sense, now! No wonder I love oreos!

Oreos and Cocaine

Frank picked me up at the store and we hit Walmart for a few final items. When walking out of the store, I could not believe my eyes! Not about food, but about the complete tool that was parked next to us. Who the heck makes these stickers, let alone has the audacity to put them on their car. Unexceptable in my book!

Tools at Walmart: I’m going to guess you graduated the bottom of your high school class, spend most of your time looking at yourself, work at McD, have the IQ of that pile of dog waste on the lawn, and probably aren’t the the prettiest sight, yourself…

Okay, off my pedestal. Despite this butthead, I was still in a great mood. I decided to switch up my post-jog routine. Instead of a shake, I remembered Julie’s protein pancakes and made the following:

  • 1 scoop chocolate protein powder
  • 2 egg whites
  • 2 Tbsp cottage cheese
  • 1/2 Tbsp Chocolate PB2

Blend in food processor until smooth.

I topped mine with SF Strawberry preserves and loved every bite!

My day continued to be great when Barry called and asked if I wanted to meet up with his mom and sister. Katie is pregnant and was maternity shopping. As she was trying on mommy-to-be jeans, I wandered around the maternity. First, I through a shirt at her. Its Eagles… what did you expect? Next, a small selection of Luna bars caught my eye. As my eyes traveled along the shelving, another variety of bars caught my attention: Belly Bar Boost. First of all, how cute is that name? With my protein bar impulse, I wanted to grab one, but I have no need for it! (You hear that dad? I don’t need it!) Anyway, still full of curiosity, I checked them out and couldn’t help but smile at the names of the flavors: Baby Needs Chocolate, Lemon Lovey, S’More to Love, and Berry Nutty Cravings. I think its awesome that these pre-natal nutrition bars were made for the mommy-on-the-go!

Then, Mrs. Preggers, as Barry calls his sister, began with the cravings… “I want froyo. Let’s get frozen yogurt.”

To end this day, Barry and I headed back to my place and caught up on some episodes of Chicago Fire. Thank you, OnDemand. Since my dinner was left-over from the night before, I heated up my spaghetti and microwaved a frozen meal for Barry. Both were yummy. What a great way to start my weekend!

Patient Birthdays

Saturday

Today, a very dear patient of mine celebrated their birthday with us at the hospital. Unfortunately, I have celebrated many patient birthdays in the hospital. At least, they are surrounded by people who love them!

This evening, my patient had loads of cupcakes that their family had brought in. I couldn’t leave the room without grabbing one. I decided to ask Amy if she would split them with me.

This is always a trouble, when patients and families give you food. You hate to say, “no,” so you take it. Even when you do say, “no,” they continue to insist, and you take it anyway. My eating had been great all day so I felt little,but some, guilt about splitting cupcakes with my one of my girlfriends for a patient who means so much to me.

It was a nice sweet treat that worried me about spiraling into a cupcake frenzy. Both were vanilla cupcakes, one from a bakery around their home, with cream cheese frosting, and the other, a homemade one with cookies n’ cream icing. With my love of oreos, I snagged the cookies n’ cream cupcake and called dibs on the mini oreo topping it! Yum!

Backing up bit, breakfast was a smoothie bowl. Today is National Strawberry Cream. I feel like its kind of an incompletely titled holiday but nonetheless:

Strawberry Cream Protein Smoothie

  • 1 strawberry yogurt
  • 1/2 to 1 scoop vanilla protein
  • frozen strawberries
  • guar and xnathum
  • water
  • ice

I topped mine with Special K Protein cereal for crunch, at first. But then, I realized that freeze-dried strawberries were an awesome topping, too!

Dinner was a bowl of soup, topped with salsa, and a side of celery sticks for snacking. The meal was paired with half an oreo cupcake!

I’m usually not a fan of clerking, but tonight was great because we had tons of discharges and I kept busy for majority of the night!

Sunday

With another shift of work ahead of me, I enjoyed  a yummy coffee protein bowl in honor of National Coffee Day! I actually was a coffee fiend, ironically, all day!

The shake was a blend of Cafe Latte mix, spinach, fresh raspberries, CPB2, and SF raspberry and Kahlua syrups. To top it off, I crumbled a quarter of a Gnu Espresso Chip bar (I’m so bummed this flavor is discontinued). I love having that ability to chew, not just drink my shakes. Plus, it makes the shake so much more filling and is also a combo of chocolate and coffee.

I grabbed a cup of coffee before work, and headed off to my unit. It was another great night on the unit. It was another night of filling (Not So) soup and celery sticks. With this experimentality of mine, I tried adding a little honey mustard and BBQ sauce from the caf. It actually gave the soup a really nice flavor- almost a southwestern inspiration.

Right before dinner, I was surprised how bad I wanted another cup of coffee. Its amazing how tastes change as you age. I was never a coffee drinker until high school- hot tea was always my thing. The only time I would drink coffee was to feel like my dad. Now, I actually am a coffee addict!

I can still remember my parents ordering a cheesesteak with friend onions, and sitting there trying to pick out all the little slivers with my fingers. Or picking off the onions and peppers off a sausage sandwich. Or Thursday Wing nights, when dad would bring home hot wings, I would wash off the sauce before eating them. Now, it seems like every day is started with a cup of the good stuff, almost every meal had peppers or onions, and hot sauce is always my go-to condiment!

They say our bodies change about every 7 years… maybe thats the reason our taste buds change, too!

WP_004058Speaking of changing tastes, I never thought I’d enjoy Cajun Trail Mix. I mean. everyone loves trail mix, but Deb, one of our nurses, brought this bag of trail mix in. I was getting hungry and gave it a try. Those butter roasted peanuts make it! That salty, sweet and crunchy combination of all the ingredients makes this stuff hard to resist!

Getting home, and having worked on the floor for my shift, I was surprised by how hungry I was. I actually would up eating a whole head of romaine lettuce! (I’m like a rabbit.) Some fabulous Rainbow Goldfish joined the party, too.

I can feel the wave of exhaustion rushing over me and I am hoping to have a relatively early start tomorrow. With that, I say goodnight!

Giving

The past few days I feel like I haven’t slept… I wake up tired…

Today, I hit the snooze alarm until the last possible minute. I finally got up, slammed a bottle of water and headed off to the blood bank. I try to make it a point to donate blood as often as I can… Mostly for the free Nutter Butters that follow…

I’m totally kidding! I am a universal donor and love feeling like I’m saving lives for the 1 hour I take to donate!

Following my donation, a little blurred vision, and getting my purple badge of courage, I meandered over to the canteen. The older volunteers are so sweet there! One of them showed me a variety of K cups to choose from and brewed me a Southern Pecan coffee. I sat down at one of the tables, and after examining the goods (ie. the snacks), I switched up my usual Nutter Butter craze for an adorable two pack of Oreos! Who doesn’t like chocolate in the morning??

Afterwards, I snuck into Barry’s house to wake him up to go to Cowtown. I know I was just there, but the day was beautiful, Barry had never been, and it kept us out of the house. We explored for about 2 hours, and I showed him around the barns. My last stop of the trip was to an older gentleman that I always buy gladiolas from. These are my moms favorite flower and since we have been getting along the last few days, I wanted to surprise her. The generous man, then asked if I like eggplant and gave me one for free along with a handful of jalapenos!  How nice!

Mom had picked up eggplant on Saturday when we went and now with all the eggplant in the house, it was time for Eggplant Parm (but we’ll get to that in a second)!

As we drove over the Delaware Memorial, Barry and I could both feel hunger approaching, as neither one of us had really eaten and it was much hotter day than we anticipated. I suggested Saladworks, one of my favorite places to eat out, and their was definitely no regretting this decision.

Both, Barry and I, got the “Create-your-own” option. Mine consisted of spring mix, egg whites for protein, roasted red peppers, corn and bean mix (so sweet), cucumbers, and chopped tomatoes with fat free Balsamic vinaigrette on the side. I like to load up on toppings with moisture and and high flavor so it limits the amount of dressing I need. I adored the colors and fragrant of my salad! Its so pretty! I omitted my beloved wheat roll, but I really didn’t need it. One thing I adore about the Saladworks website is that I can calculate everything on their without a hassle!

Barry and I were content with our meals and it really hit the crisp stop that was need to break up such a warm and humid day! We took advantage of an hour to watch some Twilight Zone in the new living room, at Barrys, after which we went separate ways… Barry to the firehouse, and I home.

I couldn’t wait to play with the Hungry-girl eggplant parm recipe. I was inspired by my salad today and decided to add roasted red peppers to dinner. I have grown up on eggplant unlike Barry who only recently tried it when I made stir-fry. My mom always double breaded and fried it. Don’t get me wrong… its delicious… but it pretty much takes every thing nutritious out! My mom would make eggplant parm layer upon layer of the breaded, fried goods, with lots of full fat cheese in between the slices. I have learned ways to stretch flavor, resources and calories, and this dish was created with huge portions!

Eggplant Parm

serves 4

  • 1 large eggplant

Breading:

  • 1 cup Fiber One bran cereal
  • 1/2 tsp reduced fat grated Parmesean cheese
  • 1/4 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • 1/8 tsp black pepper
  • WP_0038511/4 cup liquid egg substitute

Sauce:

  • 1 cup jarred sauce, plus 1/3 cup water
  • 1/2 tsp garlic, minced
  • 1/2 tsp Italian seasoning
  • 1/8 tsp to 1/4 tsp red pepper flakes (optional)

The Rest:

  • 2 oz jarred roasted red peppers
  • 3/4 cup fat free shredded mozzarella, divided
  • 2 Tbsp reduced fat grated Parmesan, divided
  • 1/2 tsp basil

Preheat oven to 375 F. Cut the end off of the eggplant. Slice the eggplant in large coins, to produce about 10. Dab the sliced with a paper towel to try to grab some excess moisture.

In a food processor, blend all the breading ingredients, except egg, until the cereal becomes a bread crumb texture. Dip both sides of the eggplant slices in the egg and then coat with the bread crumbs. Transfer the coated slices to a well sprayed (with non stick cooking spray) baking sheet/ pan. Bake for 25 minutes. Flip the coins and bake an additional 15 minutes.

Meanwhile, over low heat, combine all the ingredients for the sauce. In the mean time, Further chop the shredded mozzarella cheese (this helps the cheese spread more). Then chop the roasted red peppers. Set aside until assembly time.

Spray an 8 x 8 baking dish with non stick spray and spread a thin layer (about 1/4 cup of sauce) evenly over the bottom. Lay half the baked and breaded eggplant on top. Sprinkle half the chopped, shredded cheese, and 1 Tbsp grated parm over the eggplant. Spoon about another 1/4 cup of sauce over this, and top with the remaining cheeses. Lastly, Pour the remaining sauce over the entire dish and sprinkle with basil.

Cover the dish with foil and bake for 30 minutes. Carefully remove the foil and let set for about 3-5 minutes. Cut into 4 squares and serve it up.

We paired ours with salad.

I love the sweetness that the roasted red peppers add to the dish! MMMM! I forgot how much I loved roasted red peppers!!

It was so good, nothing was left! Not a drop in the pyrex! With so much eggplant on hand, I made another, this one turning out even better than the first. Whats also nice about this is that it can be frozen.

A big topic of conversation at dinner was the madness that ensure in college town last night. Main Street was flooded with kids, jumping on cars, yelling, etc… I thought it was about the Eagles winner! I was wrong! Apparently, the cops broke up a huge party and the 1000 kids flocked to Main Street and swarmed! Thats just dumb! It caused enough of a ruckus, though, that not only did campus police get involved, but also, city, county, and state! Here one guys YouTube video of the events…

Blew my mind! I’m so glad I was in the safety of my home, last night, 20 minutes away from the mayhem!
