The Caramel Custard Experience

I had a tricky time sleeping last night… just too much nervous energy and making mental notes of things to say in my interview.

Today was the day I have been looking ofrward to for over 2 years: interviewing for a nursing position on my unit. There were so many candidates! I believe there are 12 people interviewing for 2 positions! Talk about pressure!

I woke up before my alarm went off and took the early rising as a sign to be productive. I turned on OnDemand and completed a few 10 minute workouts, and followed it with some hula hooping. I felt energized, and get showered and stressed for my interview with a clear mind. The nerves did not kick in until I walked into the conference room, where I was greeted by 7 familiar faces: my 2 managers, the head CNA, and 4 nurses. I don’t think I stopped smiling the entire time! I bet I looked like a complete idiot! I couldn’t help it! Not only was getting this interview like a dream, but I felt great about my interview! I walked out feeling calm and confident. I pray that this is sign of good news to come!

Arriving home, I was surprised how hungry I was, despite my late night nervous eating, I whipped up a shake. Today is National Caramel Custard Day. I recalled a Hungry Girl recipe for quick caramel custard, but I thought of one myself to experiment with. My final decision was to make both and decide which one I liked best. I opted for the experiment for breakfast and assumed it would keep me full until my next meal, and that the unusal ingredient was add a different texture to the shake bowl.

  • 1/2 to 1 scoop vanilla proteinWP_004113
  • 1 sugar free Creme Brulee rice pudding cup
  • 2 tsp SF caramel syrup
  • water
  • ice
  • few dashes of cinnamon
  • Spinach and xanthum, optional

I was right! It kept me full until I later woke up from a nap to head off to work! I expected the rice in the rice pudding to add a thicker consistancy, but it actually just blened with everything else. I quite enjoyed it.

I was soo thankful to have slept this afternoon! I woke up feeling refreshed and pleased that my hair and makeup still looked great. Don’t you love when that happens? Especially if you wake up that way! It was time for the Hungry-girl version:

  • 1/2 cup OIKOS non fat plain Greek yogurt
  • 2 tsp SF caramel syrup
  • 1 Splenda packet
  • water
  • ice
  • few dashes of cinnamon
  • spinach and xanthum, optional

This one felt a little lighter, but I had to add sooo much xanthum to thicken it. Both were tasty! The rice pudding-based bowl was a bit thicker and sweeter, while the HG bowl had that Greek yogurt smoothie tartness.

WP_004118I thought the protein from the yogurt would keep me super full but after my rounds at work, I scarfed a Granny Smith! It was delicious, tart, and hit the spot! I also brought my Bubba Keg again, filled with coffee. I fell in love with a new sugar free creamer from Coffee Mate. The name “Italian Sweet Creme” caught my eye and when I read the nutrition label and saw it was on sale, it was a done deal! I haven’t regretted my decision! It soooo good!

WP_004115I was on the floor for the first 4 hours of my shift and spent the remaining 8 in the 1:1. Around 3am or so, I was happy to step out of the room to eat. I was pretty hungry! Either that, or I was really looking forward to my meal! I actually ate a meal of 250 calories! Thats a pretty big accomplishment for me on a night shift! I had packed a romaine salad and including a bunch of different add-ins: chopped pickles, cucumbers, onions, baby carrots, some roasted and unsalted sunflower seeds, bacon crumbles, and dried fruit. The dried fruit was something I forgot I had! It was a Raw Superfruit Mix by  Extreme Health USA. Before buying this blend, I had no idea some of these berries existed: mulberries, sweet and tart golden berries, goji berries, and blueberries. To finish off the salad, I warmed up the Tostito’s Cantina Chipotle Salsa. It was spectacular! I wanted something else throughout the remainder of my shift and ate a knock-off Apple Cinnamon Nutri-grain bar. I typically, don’t find these satisfying, but the mix up from my normal snacks made it pretty enjoyable.

The killer of my shift was working with some of the nurses that I interviewed with earlier in the day. They were completely stone-walling me!  A hint!  Anything! Throw me a bone!

Pregnant Combinations

WP_003977I reluctantly woke up this morning after a wrong night of sleep. Oddly enough, I began my morning with my (Not So) Split Pea Soup. I topped it with broccoli slaw and FF shredded mozzarella. Yum!

I have one, and only one, problem with the show Cupcake Wars. Every time I finish an episode, I really want to eat. Today was no different. I went to the kitchen around lunch time, knowing I wanted something to eat, something to hold me over until 7pm, but not knowing in the slightest what I wanted. I wound up nibbling on a few things, trying to find my taste. The concept of nibbling really gets to me! As soon as ate, I immediately was swamped with a heavy chest and anxiety. Ok, breath, relax, your fine. I tried to clear my mind and fall asleep.

I, again, could not sleep. I kept waking up and tossing. I woke around 530pm, reviewed my resume and cover letter with my mom, and somehow felt incredibly behind.

WP_003978Today is National Punch Day! Not exactly a significant food holiday, but nonetheless, I began my shift with a punch-inspired shake and a coffee, flavored with SF raspberry and SF white chocolate syrups. We had a ton of cantaloupe in the fridge and it needed to be used. I also had a jello mix that I’ve never even touch and felt this would be the perfect opportunity for it!

  • 2 scoops Vanilla shake mix

  • 1 tsp sugar free fat free Strawberry-Banana jello
  • water
  •  ice

My manager asked me to a work a 12 tonight, which I gladly accepted. I packed myself a bowl of Split Pea Soup from the other night for dinner. I sat on 1:1 for my first 8 hours of my shift. I was pretty happy once 4am came! I ate my soup and topped it with salsa and mozzarella! Total genius! The more I eat this soup, the more I love it and the more I realize how filling it is! And the beauty, is that it keeps me full!

I must say, I was kicking some serious butt at work. I love when I feel completely on point!

Saturday

WP_003982I stopped by the supermarket to pick up a few things for some upcoming recipes. When I got home, I finished my celery sticks that I was too full to eat at work. It was pretty funny. My mom and I, ever since I was a kid, have loved snacking on scallions. I bit into one this morning that rocked my senses! It was so strong! My eyes were watering and my nose was running!

Despite not sleeping well yesterday, and being at work for 12 hours, I wasn’t tired when I got home. I started unloading the dishwasher, and prepping for tonights dinner and tomorrows breakfast. Soon enough, Frank was up and I whipped him up a smoothie. I, then, gave my dad a call, and requested a favor. I’ve been working on some “manly” shake recipes and dad was more than game to be my guinea pig!

WP_003983I debated making myself a shake for breakfast, as well, and thought I deserved a switch up. I toasted a low fat Nutri-Grain Eggo, smeared it with Chocolate PB2, and mashed raspberries! The remainder of my morning was not how I imagined it would be. I never did go to sleep. I anticipate a full on crash later tonight. Mom and I spent like 2 hours listening to music, as I danced around the room and hula hooped. I hula-ed so hard my abs started to get sore.

We slept the rest of the afternoon running errands. Food anxiety only struck once today. Mom had gone to Panera for iced tea and came out with a baguette and my favorite cream cheese ever: Honey Walnut! I decided it was okay to treat myself and tore off the butt of the loaf and dipped it into the cream cheese, and there we went. Oh boy!

The good news, is that after I went to mass, which was the anniversary mass for my grandmother’s death, I was feeling much better. I headed home and created a dinner only pregnant chicks and myself could enjoy. Mom really wanted mashed potatoes and creamed corn, which is one of my all time favorite food combos! I tricked mom and made a batch of my Garlic Cauli-Mash, and topped each bowl with creamed corn. Delicious. I paired my bowl with a spinach salad with chopped roasted red peppers, pickles, and cucumbers, topped with salsa. It sound gross! And it sounds like a crazy combo, but somehow the saltiness of each produce played off each other. This started a frenzy, but in a good way!

I actually got to 900 calories today, not that I was counting or anything…

I reignited my adoration for creamed corn! Oh gosh! I just love that stuff! I haven’t had in in, geez, probably a year. The night was filled with mother-daughter time, celery, the most crisp and fresh bell pepper I’ve ever eaten, some crackers, salsa, Jax (a snack I haven’t had in ages), and lots more produce. By the time I realized that a food coma would be evident, I was sort of painfully full! At least I had a great night with my mom, she was pleased to see me enjoy eating, and I didn’t freak out.

Like I said, with a complete lack of sleep and a full stomach, only an episode of Star Trek is in my near future. Good night, everyone! I hope your Saturday was as enjoyable and mama-filled as mine!

Fiber, Ice Cream, and Indian

Today was my first day of patient care at my new clinical site. Without revealing too much, I can say that two of my three  patients kept me on my toes as soon as I got onto the unit with abnormal breathing and chest pain! But no worries! They are feeling much better!

This is a much different setting than a hospital, but I like that I get to really know my patients since I get to be with the same three patients for the next three weeks.

Since I have trouble eating super early in the morning, I took a 10 minute break around 1045 and indulged in a cup of coffee and a Vanilla Blueberry Luna Fiber Bar. Let me tell ya, as long as these are around, Nutri-Grain will never get business from me. They remind me of a Nutri-Grain bar, since its baked and fruit filled, but less calories and less sugar. The Luna Fiber bars come in three flavors, all phenom: Chocolate Raspberry, Peanut Butter Strawberry, and Vanilla Blueberry. The only down side is that I can only find these in a few stores, so when I get to those stores, I really stock up!

Mom asked me to swing by Walgreens on the way home and I really wanted a cookie. As i wandered the store, something caught my eye.

I ate half for an afternoon pick-me-up. Gooey caramel, chocolate, ice cream! I just wish there were more cookie crunches.

I spent the remainder of the afternoon watching lectures and working on paperwork for school. Using all that brain power builds up an appetite. Not really in the mood for any meat, I took out an Amy’s Light and Lean meal: Mattar Paneer. You know I’ve really been on an Indian food kick and this was yummy! It was perfectly seasoned and oh so savory and filling! I loved the flavoring of the peas, paneer (Indian cottage cheese) and lentils mixed with the rice.  This picture just does not do it justice. (Actually, my pictures look pretty terrible.) But if you like a dish full of savory flavor, this is where its at!

The remainder of the night, I’m in study mode for the exam on Thursday.

By the way, today is the Day of the Mushroom. You could totally utilize those bad boys and make yesterday’s dish!
