Chocolate and Vanilla Cake Walk Into A Bar…

Monday

I spent the entire, and I do mean entire, day in bed! Barry and I both have night shift and neither one of us felt a real reason to get up.  In fact my “breakfast” was a sugar free oreo and a spoonful of Barry’s grandmother’s homemade apple sauce! And that’s just because Barry had them in the room! Haha!

I arrived back home, after picking up dinner for the family, and jumped in the shower. I got out just in time to whip up a shake and enjoy dinner with the family before heading to work. While the family ate their Wendy’s, I made a bowl. Frappe Away I said to myself.

Today is National Frappe Day. What the heck is a frappe? I googled and found out it is typically a coffee and ice cream based drink. Well, no ice cream went into the blender, but Cafe Latte protein powder did. Between Barry and my girlfriend, Rebecca, both of whom call me “Pumpkin,” were partial inspirations for the end result of my meal. Since I, unfortunately, did not have any open cans of pumpkin, I substituted the fiber with a handful of frozen apples. Did you know October is National Apple Month? (I know… I’m a pillar of useless knowledge…)

The crunchy and nutty topper for this bowl was unsalted, hulled pumpkin seeds and Kashi Go Lean cereal.

I headed off to work to find out I was being pulled to another unit, a unit I have never been to before. Its always slightly nerve-racking being pulled to another unit. What are the nurses like there? Whats the acuity of the patients? Am I on the floor or a 1:1? How long will I be on the unit for?

Luckily, none of these things were a problem, tonight. In fact, the nurses were welcoming, sociable, and helpful, and my 11 patients were of managable acuity! I actually was pulled for the complete 12 hours of my shift.

Tuesday

I met with my girlfriend and co-worker, Amy, a little after 1am and we went to the caf, where I grabbed some raw vegetables from the salad bar. Rather than crushing saltines into my Wendy’s chili, I dipped these vegetables. Genius! The Wendy’s near my house was recently rebuilt and opened last week. I have been craving chili ever since. I was floored when I checked the website to find a small chili was 180 calories! I expected a small container, but was content with being able to get a chili, in the first place. When I asked the woman if she gave me the right size, she compared it to the large and I was floored, once again! Score!

WP_004153We’ve been Boo-ed!” Huh? Apparently, theres this game going on around the hospital where units make bags of candies, and sneak them into unit’s break rooms then the game continues. Damn, Butterfingers get me every time! Luckily, I was one and done! Yay, Sammy!

My sleep was cut short today as I was awoken by a call from my manger with some not so pleasant news (more to come on that matter). There was no way I could get back to sleep and, in fact, I was up for the rest of the day before coming back to work. My breakfast? Corn chips and a Babyruth.

All day I wanted to eat, although I knew I wasn’t hungry. But then, I began feeling an emptiness in my stomach, so I ate. It turned out that emptiness was actually part of my emotions. To try to counter act this feeling, it was a two shake day.

I’m sort of childishly excited for today’s food-iday: National Fluffernutter Day! I kept swaying back and forth between making a shake or a sandwich to celebrate. I was never a fan of fluff as a kid. Well, maybe thats not the way to put it. We just never bought it. Same thing with Nutella. We never bought it so I never really developed a taste for it until I tried my little brother’s nutella one day. Same goes for the Fluff. I remember, last year during my refeeding, I would dip Nilla wafers into fluff. Sometimes, I would grab a spoonful of PB and then dip into the Fluff jar. If I wanted something extra sweet, I’d do a nutella and fluff combo!

Anyway, I decided I would feel more satisfied with a bowl:

  • 1 scoop of Chocolate OR Vanilla shake mix
  • 1 Tbsp fluff
  • 1 tsp peanut butter
  • 1 1/2 Tbsp Chocolate PB2
  • xanthum and guar, optional

To substitute for the bread, I topped the sweet bowl with Fiber One bran cereal. (Its pretty shade of green is from added spinach).

A bit after, I realized my anxiety was manifesting itself. Rather than NOT eating, I WAS eating. Luckily, I recognized it, and preoccupied myself with mopping the floor and going through clothes to donate. When dinner time arrived, and heavy eyelids began, I  whipped up another bowl to hold me over until it was time to eat at work.

  • pinch of salt
  • 20 fat free pretzel sticks, broken

It totally hit the spot and I loved the salty sweet crunch that I constantly crave.

I was on the floor for the first four hours of my 12 hour shift. My 1:1 patient was supposed to be going home tomorrow, so I wanted to spend some time with then before they left.

Wednesday

After a breezy first four, my time ended abruptly with assisting to de-escalate an upset parent and assist a nurse with removing an IV. I felt great when I was able to help the mother stop crying and make her laugh.

When I got into my patient’s room, the patient was super excited that I’d be spending the rest of the shift with them. I, then ,found out my patient’s discharge date had been pushed back to Friday. That means I get two more shifts to see them.

After the snack I had done earlier in the day, I packed a light meal for work. Plus, my nerves were still so wrecked that I didn’t have much of an appetite. But boy, oh, boy, was I in for a rude awakening.

As if I wasn’t stressed enough, and manifesting it with body hating, I had that Cajun Trail Mix and all of this candy in my face! The nurses agreed that I deserved to have day a candy. Its funny how I eat candy when I’m spazzed. I’m stress eating, but body conscience. I take a bite out of piece and throw it away. Bizarre. Nonetheless, the nibbles did not stop me from hating myself as I returned to the 1:1 after eating some leftover eggplant parm frittata around 3am.

WP_004159Deb brought this in, too! Candy Corn M &M! What a combo! These candy pieces are bigger that the typical chocolates and made with white chocolate instead. Addicting. While trying to find a link to these M&Ms for you, I found these! I’ve never seen these. Ever! Is it for real? Does anyone know? My jaw almost hit the floor and I’m enveloped in curiousity! I returned to my patient’s room, after some well-deserved ranting, and counted down until 7am when I could leave.

Full or body hating guilt and a dwindling self worth, I tried to keep my mind occupied by blogging and reading.

I must admit that I was, finally, able to finish a book that I wanted to read. Its been years since I’ve been able to read a book for fun.

After work, I couldn’t wait to hit my bed. Today, on a day when I actually feel tired after work, I had to stay up to take my uncle to a doctors appointment. His procedure required sedation and he, therefore, needed a ride to and from.

WP_004160Luckily, it didn’t take very long and I killed some time at Wawa grabbing a coffee and a packet of apples to hold me over. Upon arriving home, I snagged a few pretzel sticks and almonds and curled up into a ball to awake about 5 hours late! Victory! I had finally slept!

Once awake, I hopped in the shower and assisted Frank with making my little brother dinner, while also sending out countless resumes! Last night, I was reading up on detox soups, many of which contained beets and ginger. I figured I could work with that and wound up creating what tasted better than Red Velvet Cake!

  • 1 scoop chocolate protein
  • 1/2 small beet, peeled, sliced thinly and microwaved for 3 minutes
  • 1/2 frozen banana
  • 1/3 cup frozen pitted cherries
  • 1/2 Tbsp sugar free fat free cheesecake OR white chocolate pudding mix
  • splash of SF chocolate syrup, for added sweetness
  • xanthum and guar (optional)

I’ve never like Red Velvet Cake. It was always one of those sweets thatI didn’t understand. Its like if chocolate and vanilla cake had a baby and the baby couldn’t decide what it wanted to be when it grew up…

Once the fruits and vegetables were blended, the color reminded me of the cake, and rather than going full on “detox,” I went with the inspiration. I topped my bowl with broken pretzel sticks and chia seeds.

With the remaining half beet, I repeated the slicing, and combined it with sliced baby carrots, a chopped cherry pepper, onions, and chopped sun-dried tomatoes into a Tupperware all to be, later, used to top a bed of chopped romaine and reduced fat blue cheese crumbles. It’s National Moldy Cheese Day, hence the moldy cheese in my salad… Once arriving at work, I was greeted with this:

“Happy Pediatric Nurse’s Week from Bayada Health!” Thanks Bayada. Start my shift with an oatmeal cookie and some M&Ms? Don’t mind if I do. One and done, baby! I was a happy camper, once again, with my self control, and felt no guilt about this treat!

Thursday

I spent my shift much like I did the night before; the first 4 hours on the floor and the last 8 in my 1:1. Before falling asleep, my patient asked if I would care to watch a movie with them. And so we laughed until the movie ended. Around 2 am I was relieved from my post to eat. I warmed the previously prepared vegetables in the microwave and tossed them with the romaine and blue cheese. I love how the warm veggies melt the blue cheese, and their juices combine to create a dressing for the salad! Its a salad with which I’ve never been disappointed! Following my meal, I snagged a mini Twix from the abbondanza supply of candy, and another half a cookie, sealing the deal with a cup of hot coffee.

I always take time at the hospital as a learning opportunity and asked the nurse if she could explain to me the difference between “covering” for carbs and “correcting” with insulin. I was so pleased to discover that I had already had a solid understanding of how to do so, and worked with the nurse making up a few examples to ensure I had a firm grasp on the subject. Woo Hoo!

I returned to the room of the 1:1 and spent my remain hours charting on my patient, scouring the web for pediatric nursing positions, working on Be Well Bundo, stretching, and reading another book.

Following work, I drug myself to, yet another, morning appointment, but not before grabbing a bite. Who would think that soup would be the breakfast of choice? On this cold morning, it was all I could think about. I heated up a cup of Progresso’s Chicken and Barley (I’m a sucker for barley), topped with a bran crackers, and warmed myself up.

This time, the appointment required manual labor and as I left the hospital, I prayed the rain would hold off until my task was complete. We are fortunate enough to have a home with a fireplace, my favorite feature of the house. I am planted in front of it throughout the fall and winter months. I’m surprised the floor isn’t indented with my butt print, by now. We were, also, fortunate enough to have been connected with the city to receive free wood. As the city chops trees, the lumbar is piled at a local park on the east side. If you schedule an appointment and complete the labor, yourself, you can take a truckload of FREE wood each month. We took full advantage of it, last year, and I wanted an early start, this year. I took the first available appointment and Frank and I headed over, bundled up, tiredly fighting the weather in a battle of time.

The forecast for the next four days is nothing but cold rain. Oh, joy! According to the weather tracker on my phone, between 7 to 9 there was a decreased chance of rain. Our appointment was for 830. As we pulled up, it was chilly and lightly raining. We loaded up the bed of the truck and by the time I got home, I was dead to the world and it began raining harder.

I stumbled into the house, eyes barely open, and made a B line to the couch where there was an inviting  comforter calling my name. With hoodie up and slipper socks on, I was out in a matter of seconds, contacts in and all (not smart by the way… crazy dry eyes).

I woke around 330pm, or so, trying to go back to sleep. No luck. And here I am. Catching you up on the haps.

Bundo-ized Mama’s Mustard

The decision? Stay awake.

Well not so much stay awake of sleep, as relax and let what happens, happens. After running a quick pit stop, I arrived home around lunch time. Keeping it simple, and only having a bit of an appetite, I repeated yesterday’s Be Well Nutella on toast, this time with a bit of PB. (Life is always better with peanut butter.)

          Except for that one time when I was refeeding and ate half a jar…

After finalizing the post, I fell asleep watching the Harry Potter marathon. It was the perfect nap- right about an hour- enough to refresh and regroup.

Since I had fallen asleep the other night watching the new Die Hard, I asked dad if her wanted to come over to watch it after work. He came over, but not after I sent him on a mission. I have been dying for Mexican food! NOT that Tex-Mex mess- REAL Mexican Food. There are two places that have made my list: El Toro, for take out ( I’m addicted to the Chili Rojo de Puerco and guacamole salad), and El Jefe, for dine in. I made dad swing by El Jefe to get me fried scallions, also known as cebollitas. I’m on a mission to find out just what the spices are that season these onions, so I can try to make them at home. Anyone got any ideas? From what I can find on Mr. Google, its just lime juice and sea salt… That just sounds too simple.

In the midst of keeping things simple, I reached in the freezer and pulled out two Healthy Choice meals Dad and I had gotten a while back.

The cebollitas were perfecto with The Salisbury Steak meals! Although these meals smelled great, I really was not impressed. The eat was small and a little tough, there wasn’t much flavor to the gravy, the mashed  potatoes are never a good idea in any frozen meal, but  I always enjoy the veggies.

It was interesting having both my parents watching the movie with me, all of us getting along.

Snacky-Sammy began to set in, in which I ate a Special K Chocolatey Pretzel cereal bar. Barry came over after work and ordered Chinese food for dinner, so did Frank and my brothers. I ordered a small hot and sour soup, shocker, and stole one of the guys dumplings (I love that dipping sauce!) Thinking f I treated myself to a small craving, the urge would go away, Barry and I picked up Reese Whoppers. Thats right, peanut butter coated malted milk balls! A few of these, and I was set!

Moms mood quickly change after my dad left. She went to the store and returned with this:

I immediately approached her about the recent conversation we had regarding bringing home trigger foods, and she began accusing me of telling her what to do. I’ve said it before, its just not easy when you are not surrounded by support.

To take my mind off the full pizza sitting on my kitchen table and the minor anxiety that followed my soup, I cooked. I decided to whip up some homemade mustard sauce to be used in a recipe later this week. (By the way, be prepared for a few Bundo-ized comfort foods).

I promised this recipe about a month ago, so here it is. Its actually my moms recipe, that I altered. Every party we host or attend, this mustard is always requested. Yeah, its that good! My mom’s recipe calls for  sugar and  eggs, and very un-precise measurements of the remaining ingredients.

When I made this for my grad party, I used a 50/50 mix of Splenda and sugar, last night I tweaked it a bit more. The granulated Splenda, as awesome as it is, does not have the same melting point as sugar. The more sugar, you use in this recipe, the silkier, the mustard looks. I’ve made this before using all Splenda, and the taste does not change. The mustard just looks a bit thicker, rather than silky.

yields approximately 3/4 cup

3/4 cup liquid egg substitute

2 Tbsp white sugar

1/4 cup, plus 2 Tbsp granulated Splenda

5 level Tbsp of Colemans dry mustard powder

pinch of salt

1/2 cup distilled white vinegar

WP_003239Combine all the ingredients, except vinegar and blend until smooth. Allow the blend to sit at room temperature for at least 30 minutes, reblending the mix, occasionally. Reblending and settling at room temperature ensures the eggs do not immediately cook once over the heat and the flavors are evenly distributed. In a small pot, over the lowest heat setting, pour the mustard in. (Scrape the sides of the bowl to make sure you get all of the blend in the pot- every drop counts). With a spatula, continuously scrape the sides of the pot and stir the the mustard, until it begins to thicken. Once the mix begins to slightly stick to the spatula, pour in the vinegar and continue to scrape the sides of the pot and stir continuously. This is the longest process of the recipe, but the end result is worth it. Continue the stirring on low heat to ensure the eggs are fully cooked and the vinegar cooks out.

WP_003241The mustard continues to thicken and take on a sheen (The more sugar in the recipe, the shinier the mustard). Once at a smooth thickness, pour into a separate bowl, cool, and refrigerate for storage.

This mustard is probably one of my favorite condiments! I’ve put it on grilled cheeses, grilled chicken breast, and later in the week, I will be crusting a meatloaf with it! Stay tuned and enjoy!

Repeat Movies

It seemed as though the animals were conspiring against me, last night. If it wasn’t one, it was the other, getting me up to go to the bathroom. Oh, and apparently, I was well hydrated, as well, because when the animals let me sleep, my own bladder woke me up.

My plans for today were cancelled. It was supposed to be an early start with a trip to moms work. Apparently,  she talks about me quite a bit and wanted me to meet every one. Well, the people she wanted me to meet weren’t in, today, so away I slept.

I woke up in a daze. I couldn’t believe I slept so late. The weather changed yesterday and the temperature dropped last night. I guess I was just too cozy in my blanket to notice the sun peaking in through the window blinds.

Breakfast, at 1pm was an anticipated slice of toast spread with Be Well Nutella. This stuff is my new addiction. Along with this was a bowl of pineapple.

Mid-day, around 4pm, or so, I finished my Gnu Brownie bar, and vindicated my inner child with a chocolate milk made with Flax milk and sugar free chocolate syrup.

Despite all of my sleep, nothing could get me going today. I curled up on the couch with my glass of chocolate milk, studying for the boards, and discovering the classic “Forrest Gump” on TV. I adore this movie! Some movies I can watch repeatedly! I never get tired of them. Its funny, though, I only watch them when the are on TV…

What movies can you watch over and over again?

Armagedon and “Independence Day are two that are constantly on FX and are always watched in our living room. Yes, we have the DVD, but we only watch it on FX. I literally sit there, completely mesmerized, saying the lines before the movie does!

Stardust is frequently on the Shotime network. I think the magical aspects of the movie are what suck me in.

We all know I’m a dork and a complete sucker for the Harry Potter movies! Yes, I own the books and the movies, and watch the Harry Potter weekends on ABC Family channel. The only time I will not watch these movies is during the 25 Days of Christmas. Come on, ABC Family! What the heck does HP have to do with Christmas? There is literally 1 snowy scene in each movie! One! Give me Snow Meiser, of Nestor the Long Eared Donkey! (Ironically, a marathon was on when I got home from work).

Pretty much any Marvel Comic movie, expect for the Hulk, will pretty much do me in. Fantastic 4, Iron Man, X-Men! Bring it! I think it may stem from my Power Rangers fetish as a kid. I used to pretend to be Kimberly, the Taradactle, the Pink Power Ranger! I used to stand on the couch and body slam my dad, I mean, Ivan Ooze! Yeah, I was kind of a bad ass…

Disney shows the old movies that I grew up watching; the ones that were Disney Original movies when they aired and I watched them. Ironically, one of them was on last night, during work: Zenon: Girl of the 21st Century! I’ve always been fascinated by space and the future, if you couldn’t already tell by my Star Trek and Twilight Zone obsession. Just thinking about Zenon makes me sing, “Zoom, zoom, zoom, make my heart go oum, boom. My super nova girl!

All in all, I was pretty lazy for the afternoon, but was able to squeeze in a nap before mom got home from work. I sat her down and expressed my feelings regarding her actions. She understood how the trigger foods effect me, emotionally, and said she would make a conscious effort to not bring them home. She also acknowledged how the trigger foods she brings home are not healthy and that she needs to make an effort to make better food choices.

After a shower and an effective conversation with mom, I headed off to work, with a coffee in my hand, for an odd shift: 11pm to 11am. The unit needed coverage from 7am to 11am and I offered to help. To power me through the night, I brought a Peachy Pistachio Chobani Flip. Frankly, I was curious. I’ve never been impressed with peach yogurt, and have never even thought out peach and chocolate together. This flip cup was peach Greek yogurt with dark chocolate chips and pistachios. Mild is the only way I can describe it. The bitterness of the dark chocolate paired well with the tart and sweet yogurt.  There was just the right amount of chocolate to satisfy my raving but not make me want to go into chocolate overload. The pistachios were like the surprise at the bottom of a cereal box: you forgot it was there, but what a nice treat it was!

My only qualm is the amount of sugar in it, but sugar content is an issue with any flavored yogurt, really.

The girls and I also split a bag of 94% fat free kettle corn. (We are popcorn people on my unit).

My assignment was more than I usually have so I kept incredibly busy. This worked out for me because it allowed me to listen to my body cues and not snack! I was so busy, that in the 12 hours at work, I never even was able to pick up my NCLEX book!

Around 7am, I sat down to give myself a bit more fuel to power me through the end of my shift. I love this individual packages by Oscar Meyer. They are the perfect size for someone like me, plus, they freeze and defrost great, so I can buy them when they are on sale and eat when I ‘m ready for it. With this 6 slice packet, I made turkey roll-ups, filled with dill pickle halves, celery, and bell pepper slices. I love the crunch from the veggies, the sweetness from the peppers, and saltiness from the lunch meat. A packet of graham crackers also joined the party.

I was surprised by how awake I was for the last four hours of my shift. I think what really helped get me through the night, was not my 2 cups of coffee, but a combination of two beverages. I’ve noticed the carbonation in the soda helps make me feel full, so when I picked my girlfriend up a Diet Cherry Coke on the way to work, I thought I’d second that notion. Also, my green tea concentrate from Herbalife always perks me up, fills me up, and boost my metabolism, as an added bonus!

I felt so on top of my game, this shift. So much better than last shift! The 12 hours flew by! Now its 11am, and I have dilemma… To sleep or not to sleep? That is the question…

Dork-ing It Up

I mentioned, yesterday, how important it is to surround yourself with positive vibes. Last night, I did just that. I typed up last night’s post while getting ready for bed, however the whole “going to bed” thing didn’t really happen.

Barry and I decided to stay up since neither one of us had anything to do in the morning, and that way we could sleep late.

I really enjoyed last night. We stayed up, playing Phase 10 and watching “Chopped” on Food Network until about 1am. We were googling exotic foods and talking about NASA and space travel…

It was a plain, simple night in and I loved it!

We awoke around 11am, today, and desperately tried falling back asleep. No such luck. So up we went to fix some coffee and enjoy our respective yogurts. I had the the Dannon Light & Fit Blueberry Greek and he experience Greek yogurt for the first time with OIKOS Blackberry. I also broke off a piece of a Gnu Brownie bar to give me a PMS chocolate-fix.

We continued to dork it up after breakfast while watching an episode of “Star Trek: Next Generation” and the final “Lord of the Rings” movie. Yes, I’m aware how exciting we are, but after my freak out on Monday night, surrounding myself with positive people and events really made a difference.

I ran a few errands on my way home and grabbed another Special K cereal bar, Red berries, for a mid-day snack to hold me over until my shake, which I will make before heading to work. I also managed to pick up these little cuties from Five Below!

Unfortunately, today is another day of belly bloat. Super uncomfortable! When I get bloated, I’m never really sure if I’m hungry or not, so I’ve been trying to keep hydrated. If I keep drinking and still feel hungry, I’ll eat, but as of right now, I feel like a bowl full of jelly. HAHA

In the world of animals, I told you I’d get back to you about the Blue Buffalo I got for the kids. Beauty scarfs Wellness, like devours it. She kind of sniffed the Blue Buffalo and walked away. She eventually ate it, but I’ll save some money and stick with the Wellness brand.

In the world of bars, I had a Maple Glazed Pecan and Sea Salt KIND bar. How good does that sound?! I wasn’t sure after my first bite, but after my second I began to pick out the maple notes, then the mild saltiness. Its nice low GI treat with 6g protein and 5g fiber.

In the world of recipes, to keep myself busy before, I made a very anticipated recipe: Homemade Nutella! You know I’m addicted to the stuff, so based off Katie’s Healthy Nutella recipe, I created a virtually sugar free, low fat, low carb chocolate hazelnut spread. I dig it!

The day I took Barry to Wholefoods, we picked up a bag of hazelnuts to make this, but life got in the way and I decided today was the day! Sorry, Barry, I just couldn’t wait any longer!

Be Well NutellaWP_003208

  • 2 level cups raw hazelnuts (240g)
  • 1 1/2 tbsp pure vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup plus 2 tbsp sugar free maple syrup
  • 2 packets Splenda
  • 1 Tbsp sugar free chocolate syrup
  • 1/4 tsp plus 1/8 tsp salt
  • 1/2 cup milk of choice (I used unsweetened Flax milk)

Roast the hazelnuts for about 9 minutes 400 F. Rub them together in a paper towel to get the skins off. Be careful, as the nuts are pretty hot. In a food processor (I used the MagicBullet) blend the nuts until they begin to be ground very fine, almost nut butter-like, Add all other ingredients, adding 1 at a time and blending. Continue to blend until it’s smooth!

The Bullet was not the easiest thing to use for this, but my food processor at this house is a hand crank, and that just was not happening. I alternated between adding wet and dry ingredients between blending. Because the Bullet isn’t exactly full of space, I removed some of the ingredients and blended in small batched to ensure it was well mixed and smooth.

WP_003211In the world of work, I am working a 12. I threw together a shake using a bit of the nutella and some random frozen fruit with protein mix…nothing to write home about. I also made a mug of coffee to take with me. I totally forgot I had this 12 Coffees of Christmas box in the cupboard. I found it while digging out the ingredients for today’s nutella and butter pecan coffee sounded too good to pass up. It smelled amazing!

WP_003212Although I kept busy, time was not passing as quickly as I had hoped. I encountered a tempting blueberry muffin that everyone was snacking on. I had not had one in a long time at treated myself to the quarter that looked like it had the most blueberries! PMS loved the sweet blueberry muffin and after grabbing a soda for my patient, it also decided it wanted a Dr. Pepper. Not just any Dr. Pepper, but a Diet Cherry Dr. Pepper. I was off to the vending machine only to discover Cherry Cola and Diet Dr. Pepper! Darn it! 23 flavors it is…

Around 230am, I hit the wall! I got so tired and bolted to the caf for some coffee. The bad thing about night shift is that your body is not used to being awake, and therefore, gets those crazy late night snack urges, like oreos! Snacking smart, I packed a sliced bell pepper! I just love that crisp and sweet bite from those things! But those oreos are not easy to resist. I also packed a tempeh salad using spring mix, baby carrots, tomatoes, onions, bell pepper, beets, and fakin’ bacon tempeh. Hmmm bacon… yup, Walden Farms Blue Cheese dressing it is!

It was a  really satisfying salad! I could have kept on eating it (ya know, if I didn’t already eat it all)!

Berri Yummy

This morning began with my Copy Cat Shake! I love this one! But I must admit, it was a rather clumsy morning. When I initially transfered my shake into my travel bottle, I spilled quite a bit onto the counter. Then, once I got into the car, I tipped the bottle over and some spilled onto the floor. And smart me, I don’t have floor mats. Despite trying to clean it up, I’m so nervous that the next time I walk in my car, I’ll be choked by the stench of sour dairy products.

I have felt bloated all day! Seriously uncomfortable! I keep looking at my belly thinking What the heck is going on? Where did that come from? You look pregnant!

This gets frustrting, especially since I’ve been happy with my eating last last two days. When I arrived home, after todays events, I wanted something sweet. Not because I was necessarily hungry, but just because. I allowed myself two Nutter Butter cookie sandwiches. This quickly spiraled, not terribly, into pretzel sticks and nutella. Although it was not an earth-shattering binge, it was one of which should not happened. (And I’m sure all that salt did not help the bloate feeling.)

Anyway, todays events began around 830 with a drive to the funeral home. I attended the viewing and as I went down the line of daughters, my emotions were harder to hold back. “He loved you! He always wanted to best for you,” said his oldest daughter. That was it! The waterworks started. We headed over the church, were the euologies were presented but the 3 daughters, and some of the grandchildren. When the beautiful ceromony ended, I reunited with my grieving family in front of church. As I hugged my cousin, he grabbed me tight and began to cry. He is one of those people, who I can not see cry. As soon as I see a tear in his eye, I started crying… it never fails. The burial consisted of a bagpipper and a 21 gun solute.

We finished the afternoon at the luncheon. I didn’t feel it was appropriate to photgraph my food here, concidereing the circumstances. I filled my plate with loads of fruits and vegetables. The grilled chicken breast and roast beef were tops! I ket going back for more. I treated myself with a cookie and order three cups of coffee. Yes, three! Not because I was THAT tired but because the mugs were so tiny! It held maybe three ounce of coffee!

Feeling full and bloated, I was worried about my eating the rest of the day. After snacking on some rice cakes and nutella, I made a roasted cauliflower salad on spinach with some sliced honey ham.

Shortly after, I recieved an interesting phone call from a friend from high school asking to help him with a film project. He is curently filming a trailer to get funding for a company to start production on an independent film. Our society is obsessed with zombies. I just don’t get it. Nonetheless, I played a mourner at a funeral (of all days to play a mourner), who at one point is killed and eated by a zombie. I can not wait for the screen shots to come back so I can share them with you! Its hilarious to think about some of the shots he got! It took my mind off how much body hating I was doing and it was a fun time.

After filming with some high school friends, Mags and I went out for froyo.

I hadn’t had frozen yogurt in the longest time! I did not have any last summer because I was “sick.” The two of us used to go out every week for froyo back in the day. I made very smart decisions at BerriYummy! I grabbed a shot of no sugar added vanilla froyo and topped it with sliced almonds, strawberries, raspberries and mangos, and, I’ll admit, a sprinkle of crushed butterfinger! Spectacular! A winning combination! (Mags went with the chocolate cravings).

 

After departing, I headed home and went to pretzel town.

Sometimes You Feel Like A Nut

Despite attending Zumba last night, which always exhausts me the next morning, I had no problem rising with the sun when I was asked to pick up a 12 hour day shift for today, which I gladly excepted. I took this opportunity to try the new SmartOnes oatmeal! The Peaches and Cream was delicious! I am so used to Peaches n’ Cream oatmeal being soooooo sweet! This was perfect! Between this, a banana, and a mug of coffee, I was satisfied until lunch.

Lunch was refreshing and crunchy: strips of cucumbers and baby carrots with a bit of fat free dressing. I just love crudites!

Work went well and I kept busy. My eating was fantastic and I was so proud of myself. Dinner was my favorite Lean Cuisine, Chicken Marsala. I just love the risotto and adding the extra mushrooms makes this dish fantastic!

When I got home around 730pm, I was getting hungry again. I ate a bunch of cantaloupe. That wasn’t quite satisfying to my taste buds, so nibbling followed. Surprisingly, what did the trick was a can of almonds I found.

Come on… you know it wouldn’t be that simple… dipped in nutella, of course!

Although I ate more than I wanted to when I came home, the day over all, was good eating day!

I’m a Nurse, but what do I know?

I a so tired of having an upset stomach! I left work early last night around 3am. When I arrive home I snacked on bread and pretzel sticks in the hopes of absorbing any acid that could be irritating my stomach. For the past few days, saltines and diet ginger ale have been m best friends. But its just unnatural for this to be a diet for 3 days straight.

I curled in bed and had the hardest time falling asleep. I finally fell asleep in the fetal position, with my behind up in the air and my face in the pillow, around 5:15am, I believe. I slept until about 9am and enjoyed a small fuji apple. In fact, the apple hit the spot so well I ate another for dessert later in the night. After my apple, I whipped up a bunch of shakes! For Frank and James, a filling Banana and Nutella shake for their fishing trip; for dad, a Cherry Cheesecake Shake for is drive to work!

I walked down to the Dunkin Donuts for Customer Appreciation Day, and got a free medium iced coffee. It was just what I needed to start the sunny day! With a little caffeine and an apple in my belly, I was motivated to start my day! I went for about a 3mile walk to the store to pick up a few items. On the shopping list was PopTarts. I never buy PopTarts, but a little birdie, named Barry, told me about the new ones filled with peanut butter. Did you really think I could resist this?

They were great! My one problem with PopTarts, not just this particular flavor, but all of them: the CALORIES! 200 calories per pastry. Hello! There are two pastries per pack! Do think people only eat one? PopTarts are delicious! Come on! Nonetheless, both of the Chocolate Peanut Butter PopTarts found their way into my stomach throughout the day.

To off set the sugars, I snagged the last BBQ chicken thigh left over from the guys dinner last night, shredded it up, and tossed it with roasted bell peppers and cauliflower.

Midway through the day, the stomach aches started back up. Before I knew it, I was back to the saltines. In the last two days, I’ve eaten two sleeves of saltines! Oh yeah, then I got sick. Yay. :/

After lying on the couch for a little bit, a craving hit me that I had last night: a calzone, panzarotti, or stromboli. I just wanted something related to pizza, but not pizza. I think its because everyone on Facebook keeps talking about the Festa (the Italian Festival) around the corner from my house. I mentioned it to Frank, and a small ham and spinach calzone arrived about 45minutes later. We split it four ways, and my stomach felt mysteriously better.

Today has been a filling day! As always on Wednesday mornings, I woke up and made a shake to start off my day, give me some brain power for a study session and an energy boost for a post study workout!

I had some pumpkin left over in the fridge so I used some of that in this morning’s smoothie. Between the protein from the yogurt and the fiber from the pumpkin, I was stuffed for hours!WP_001663

3/8 cup (or 1/4c plus 2 Tbls) canned pure pumpkin

After an informative study session, I NEEDED to hit the gym! Being sick puts a major damper on working out, and I needed to get my mojo back. (Plus, I figured it would tire me out so I could sleep this afternoon before night shift). I used my Couch to 5K app to create today’s treadmill routine, followed by some core and lower back work.

I good workout to me is one where I leave the gym drenched in sweat and a smile on my face! And today was one of these days!

When I got to my dads I got crazy hungry, and dad just happens to have Super Chunky Peanut Butter. A spoonful down the hatch!

Dad asked if I wanted to take a quick visit to the store. Ladies and gentlemen… the reason why I love discount produce oh so much:

$1.97 for all of these ginormous strawberries! I went to town! Oh boy, are you all going to love this treat: cottage cheese, nutella, and fresh strawberries! Protein… fruit…. so full! So yummy!

Forget those frozen berries in the freezer! These are going into a shake tomorrow for sure!

Backstreets Back

Yesterday, when I packed my salad and yogurt, I wanted something to keep it cold, well, cool, at least.

I could not find my lunch box, however, I could find my very old lunch box.

I woke with one thing on my mind… breakfast, specifically a  breakfast sandwich! In honor of National Frozen Foods Day, I compromised and whipped out a Special K frozen Sausage, Egg, and Cheese on Multigrain Flatbread breakfast Sandwich (with hot sauce, of course). Ok, two things on my mind…. Coffee!

3/4  cup  chopped kale, ribs and thick stems removed

1  small stalk celery, chopped

1/2  banana

1/2  cup  apple juice

1/2  cup  ice

1  tablespoon  fresh lemon juice

I was really excited because my shake looked like Christmas (the green from the veggies and the red from the apple skins). It was a filling shake, but definitely not tops. I can’t see myself making this again. However, it did give me another throwback to my childhood As I cut up the fruit, I could not help but to sing….

Today is a studying kind of day! I need to kick some serious butt on these next two exams!

The remainder of my day was spent with my nose in the books. Snacking of course, was necessary to give me some brain power. Two snacks were particularly aces in my book:
Wasa Light and Crisp cracker with sunflower butter and nutella, sprinkled with sunflower seeds! A banging 100 calorie snack!

My dessert for the night was a makeshift parfait. I was all out of fresh fruit but I still had some fruit cups and thus a fruit cup and cottage cheese parfait was born. It was topped with some ch-ch-ch-chia seeds for a little texture!

Antioxidants

You know I never let anything go to waste. I had blanched a pear in some lemon juice and frozen it a while back. I woke up really wanting to use this pear in a shake this morning. I had seen a couple shake recipes using pears so I played of of those to make this mornings shake:

2 -3 tsp cashew butter

1 scoop Herbalife Vanilla Formula 1

1/2 pkt Fruitein Rainbow Shake mix*

1 cup Bai5 Brasilia Blueberry

I wanted something filling, with some natural sugars to keep me powered through this study day. This shake is like an antioxidant heaven!

Studying ensued for the rest of the day. I realized I needed my first study break after a period of delirium when I began baby talking to Beauty… a quick little circuit should do the trick.

Back to studying until hunger kicked in… As I grabbed some Wasa, nutella, and Planters Berry PB, mom went and got Arby’s for dinner (Yay, coupons!). French dip with a bit of horsey sauce! Yum!

I also had an Orange Cranberry Gnu bar, which did a great job holding me over for a while! (look for the Gnu review, coming soon!)

Studying for the rest of the night! Wish me luck tomorrow!

* I found Fruitein at the co-op and wanted to give it a try. The Rainbow flavor caught my eye as a power house of health! It has over 115 Whole Food Concentrates. I mean, the ingredients list blows my mind: white fig, carrot, pomegranate, yellow pepper, pineapple, garlic, spirulina… and things I’ve never heard of: noni? mangosteen? wolfberry? The shake is vegetarian and gluten free.
