Two In One

I really could go on and on about my love of different fruits. Today is National Blueberry Pie Day so I wanted to do something with blueberries to celebrate. Ever since Barry and I started dating, my love of all things blueberries keeps growing. One thing that hasn’t changed is my love of bananas, as you well remember Walnana!

You know when you but fruit, thinking it will be gone in no time, and suddenly realize “Oh darn! Its mushy”? Well, thats what was happening with the bowl of bananas on the counter. Almost completely black! Which, of course is perfect for baking!

Blueberry Banana Muffins!

make 16 cupcakes (12 muffins)

  • 1 cup mashed bananaWP_005748
  • 1/3 cup unsweetened applesauce
  • 2 Tbsp sugar free syrup
  • 1 tsp vanilla
  • 1/4 cup liquid egg substitute
  • 1/2 cup flax milk
  • juice of 1/2 lemon
  • 1/2 cup granulated Splenda
  • 1 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cup whole wheat pastry flour
  • 1/2 cup rolled oats
  • 1 cup blueberries
  • 1/2 to 2 Tbsp chia seeds (optional)

Preheat oven to 375 F. Combine the bananas through Splenda. In a separate bowl, combine cinnamon through oats. Fold in the blueberries and optional chia seeds. Divide amongst lined cupcake or muffin tins. Bake for 20-25 minutes until the centers come out clean.

Allow the muffins to cool for at least 10 minutes and dig in.

For the sake of the blog, I cut each muffin in half, and experimented with toppings. So far, I can vouch for plain muffin, sweetened cream cheese (fat free cream cheese with a sprinkle of Splenda, smashed banana, and, of course, nut butter!

Fun With Fiber

I have been having way too fun with fiber! It began a few weeks ago with making some bran muffins. Then, this beautiful pear from my Harry and David package was staring at me and I decided to make Pear Spice Muffins! Fan-Tastic!

makes 8

  • 1 (7oz) box Hodgson Mills Bran Muffin Mix
  • 1 large very ripe pear
  • 1/2 cup flax milk
  • 3/4 Tbsp light buttery spread
  • 1/4 cup liquid egg substitute
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice

Preheat oven to 350F. Chop the pear into bite-size pieces. Combine all ingredients and half the chopped pear. Once thoroughly mixed, fold in the remaining pear and divided amongst 8 cupcake tins, lined with cupcake paper. Bake for 15 minutes and enjoy!

Dad and I adored the end result! He kept taking them to work for an on-the-go breakfast. I warmed one up at work and spread a little PB on top and the spread melted and it was fantastic!

??????????????Last night, after making two batches on Blueberry scones, I really went into baking mode! I zested 1 lemon, with the zester dad got me for Christmas, and combined it with powdered sugar, and enough warm milk to make a glaze. Wow! Genius! I love lemon and blueberry!

A few days ago, I began to make my own crackers… yes…. crackers… and dad? He loved them! “I need to put these away before I eat the whole bag!” he said.

The first time I made these, I used ground flax. This last batch, I used milled bran.

Fiberful Crackers

make 48 per batch

  • 1 cup ground flax (meal)
  • OR
  • ¾ cup plus 2 Tbsp milled bran
  • 1/3 cup reduced fat grated Parm
  • 1/3 cup reduced fat grated Parm
  • ½ tsp basil
  • ½ tsp basil
  • 1 ½ tsp granulated garlic
  • 1 ½ tsp
  • Pinch of salt
  • Pinch salt
  • ½ cup water
  • ¾ cup water
  • 2 Tbsp flour of choice

Preheat over to 350 F. Mix all ingredients together and spread into a thin rectangle on a parchment paper-lined baking sheet. Bake for 5 minutes. Remove from the oven and slide a sharp knife over the sheet of fiber to cut 8 strips across and 6 horizontally (Sorry, guys, I’m pretty bad at dimensions). Return to the oven for an additional 5 minutes. Remove from the oven. By this time, the squares are formed enough to be broken. Break up the sheet into 48 separate crackers and return to the oven for a final crisp (5-8 minutes)!

I’m seriously hooked! They go with everything! Salsa, peanut butter (of course), fresh fruit… I even crisped these up more and broke them into my salad as croutons!

Well, being on this bran kick, and in quite a baking mood, I went with the flow and after 2 batches on scones and a batch of crackers, I made another batch of bran muffins. This time with apples (and apple butter)!

  • 1 (7oz) box Hodgson Mills Bran Muffin Mix
  • 1/2 cup apples, skin on, finely chopped
  • 1 Tbsp apple butter
  • 1/2 cup flax milk
  • 1/4 cup liquid egg substitute
  • 1 tsp vanilla extract
  • 1 packet Splenda
  • 1 tsp apple pie spice
  • 1 Tbsp reduced sugar Craisins, chopped

Preheat over to 350 F. Combine all ingredients! Divide amongst 8 cupcake tins, lined with cupcake wrappers. Bake for 15 minutes. Dig in!

Going Bananas with Snow Mieser

Early bird catches the worm? More like, early bird requires an afternoon nap. When I left the house this  morning, it was 19 degrees F outside and there was a coating of snow! BRRRRR! Glad I brought some hot tea with me. My mom was so sweet! She got up before me and started my car so it would be warmed up for me! Thanks, mom! Mr. SnowMieser needs to take a chill pill.

Mondays and Tuesdays are tricky for me. I have to be at my clinical site by 0645 and I’m there until about 1330. We get  a lunch break, but until then, theres not much time to eat. These are the days I tend to bring my bars, so I can snag a bite on a “bathroom break.” I also tend to bake bite size/ snack size muffins and things that I can nibble on throughout my morning.
Thats what I did today. Yesterday, I took advantage of my new Walnut butter and adapted a recipe from Julie and made these babies:

ImageOatmeal Banana Nut Butter Cookies! Julie’s recipe used PB, but I wanted to incorporate my new nut butter! And, duh, banana and walnut? Wal-nana! Always a winning combo!
Since Walnuts, and Walnut butter aren’t super flavorful like peanut butter, I did a 1:1 mix and voila!

Oatmeal Walnana Muffin Cookies
makes about 4 dozen

2 ripe bananas, mashedImage

2 Tbsp plus 2 tsp creamy peanut butter

2 Tbsp plus 2tsp Artisana Walnut Butter
1/3 cup unsweetened applesauce
1/2 cup Splenda brown sugar
3 Tbsp liquid egg whites
1 teaspoon vanilla
3 1/4 cup old fashioned oats
1/4 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Preheat the oven 350 degrees. Line a cookie sheet with parchment paper or spray with cooking spray or use a mini muffin tin.
Mix bananas, nut butters, apple sauce and Splenda together. Add egg and vanilla. In a separate bowl, combine oats, flour, baking powder, baking soda and salt. Slowly add the oat mixture into the banana mixture until everything is combined. Place spoonfuls of dough on the cookie sheet or into the tins and bake for approximately 10 – 12 minutes.

This batch gave me around 52 pop-ables. This recipe also gave me the opportunity to use my new cookie scoop that I got myself for Christmas, too! I get excited over the weirdest things, don’t I? haha
They turned out better than I expected! The banana flavor shown brightly and the nut butters were complimentary, not overbearing, as some nut butters can be! I can’t wait to try other nut butters! But, oh man, were they good!I got out of clinical early today and decided to bring dad some lunch at work. I stopped by ImageClaymont Steak Shoppe (known for their cheesesteaks) and picked him up some lunch! This thing was huge! I dressed it Philly style: fried onions, mushrooms, and wiz. For lunch, I packed Banana Chobani flip and Multigrain PB Cheerios and Chocolate Fiber One 80.
What can I say? “So nice, I ate it twice!” But don’t get me wrong, I definitely helped dad finish that steak. 😉

These cookies were like sugar cookies that melted in your mouth! I love Newark Natural Foods (the “co-op” as we call it)! I always get amazing baked goods from them!

When I got home, I welcomed the almond butter by spreading it on one of the walnana nuggets! MMM!
While we are on the subject of bananas, still, have you ever had Larabar’s Banana Bread? You know I have a freakish obsession for bars, so I’ve decided to start a bars files on the page reviewing some bars.
The Banana Bread wasn’t what I expected. I has an almost burnt taste? Yeah, I guess thats the word…
What I like about Larabars, is what I like to call “pure.” There is nothing artificial in the bars and most of them are quite delicious! As for the Banana Bread, I’ll pass. The Bananas Foster Uber Bar is a little better and a lot nuttier. Its difficult to include banana into bars, unless its baked in. A lot of bars containing banana, use banana chips, which, in my opinion, take away some of that natural sweetness that attracts me to the fruit. I’ll keep on trying banana bars, but as of now, they’re not my first choice.

I’m super stoked to try Thursday’s crock pot meal! Dad and I grabbed the last of the ingredients today! I stopped by the co-op in Newark to pick up some garam masala and Good Karma Flax  Milk.
Lots of studying to do tonight. With all this work in my life, I’m going to go bananas!

Birthday and Bananas

I’m a bargain shopper. One of my favorite places in the grocery store is the discount rack. I found a bunch of banana for 95 cents! They still looked good so I got them.

Bananas are an awesome fruit, so versatile! I can eat them as is, slice them in my cereal, oats, or yogurt….

But Sammy, you can’t possibly eat all of those before they go bad. What ever will you do?
I’ll tell ya! With super ripe bananas, I can make a mean healthy banana bread (recipe will be posted once baked), or freeze them! I love freezing bananas! You can throw those babies in your oatmeal using Katie’s melted banana trick, or slice them up and dip it in Nutella, or my favorite…. SMOOTHIE/PROTEIN SHAKES!!! (You had to have seen that one coming!)

I fell asleep early last night. The beauty of going to bed early in how well rested you feel when you wake up. Unfortunately, in my case, I may have fallen asleep a little too early, as I woke up at 0300.
This morning wasn’t so much breakfast, as much as it was a hodgepodge of various foods, including a Vitalicious Sugar Free Banana Nut Muffin.

I realize that I can have a food plan, as I did this morning, but as soon as I question my plan, or overthink it, thats when things go arye (as in binge). BOO! I was disappointed and crunched on time before work, so I started my car and went for the shortest and coldest run ever (around the block lol). I needed to feel like I did something to counteract my actions.
Back to bananas…
Can you guess what lunch was today? Chobani’s new flip cup yogurt! “What goes best with bananas?” I asked myself. “Duh! Peanut Butter and Chocolate!” So to compliment my already favorite yogurt flavor, I added Multigrain Peanut Butter Cheerios and Fiber One’s new 80 cal Chocolate squares!

After work today, I danced around the house with my mom. Sometimes the best workouts are ones that I just make up and dance around the house!
I then met up with my family at Immediato’s Bistro to celebrate my Uncle’s Birthday at his favorite restaurant  Wow! Food! Delicious! Click here to check it out!
