Mama’s Lean-zagna

Meatloaf, Chicken Cordon Bleu, Chicken Noodle Soup, Honey Mustard… just a few of the make-overs I’ve done of my mom’s hit meal! But I cannot forget the lasagna!

Lean-Zagna

24 servings

  • 2 lbs 99% lean ground turkeyWP_007931
  • 1 to 1 1/2 tsp crushed red pepper
  • 3 Tbsp minced garlic
  • 1/2 tsp ground oregano
  • 1 Tbsp dried chopped onion
  • 4 tsp garlic powder
  • 2 Tbsp granulated Splenda
  • (72oz+4lb3oz) (about 15 cups) your favorite sauce
  • 3 (11oz) bags fat free shredded mozzarella
  • 2 lbs fat free ricotta
  • 24 oz lasagna noodles (no-boil if possible)*
  • 1/4 cup reduced fat grated Parmesan

In a large pot, break up and brown the ground turkey. Make sure there are no chunks of meat, make it a nice fine ground. Over medium-low heat, add the spices and Splenda, and toss to coat the meat. Top with sauce, stir, cover, lower the heat and simmer for 30 minutes.

Preheat the oven to 325 F. Combine the ricotta and mozzarella in a bowl, reserving 1/2 cup of the mozzarella. Coat the bottom of a large pan, about 17 x 12 (this is the one time I choose a disposable pan, like a large rectangular roaster) with sauce. Line one layer of lasagna noodles, with edges slightly over lapping. Evenly distribute some of the cheese mix over the noodles. Ladle another ladle of sauce and use the back of the ladle to smooth and even out the layer. Place another of noodles down and repeat with the cheese and sauce. Repeat this process, reserving a small amount (about 1/2 to 3/4 cup) of the cheese mix, until you’re out of noodles (about 3 or 4 layers).

Top the last layer of noodles with the reserved cheese and the remaining sauce. Smooth out the layer with the back of the ladle and distribute the reserved mozzarella and the Parmesan topping.

Bake for 90min. Let it rest 5 minutes before cutting (6 x 4) and serving.

*If NOT using no-boil, just ensure you make up for it by using more gravy (and by gravy, I mean sauce), because the noodles will absorb a decent amount of liquid, and no one wants a dry lasagna.

Oh man! All of the delicious flavor of mom’s lasagna without all the guilt!

While waiting for this to bake I put this together for my kitchen… I think after all my hard work I deserve a nice hunk of lean-zagna!

Hectic Weekend

Saturday

Last night ended with a handful of grapes and a bunch of pretzel sticks with Honey Mustard Dip. I was able to get close to 900 calories in yesterday! It was because I listened intently to my body. I ate when I was hungry, and stopped when I felt full (although I could have ate that whole darn birthday pie, myself). After I reviewed what I ate for the day, I was happy with it. I didn’t eat too much of one thing, and I didn’t eat too little, but that damn number is still hauntingly and dauntingly eating away at me.

I thought about why I could be getting so paranoid. A few things came to mind:

  • Vendemmia (a big wine and food festival coming up)
  • my girlfriend’s wedding
  • Halloween candy
  • Thanksgiving
  • Christmas cookies

I need to be able to take these events like any other person. Just listen to myself. I know this eating disorder is something I will live with the rest of my life, but as long as there are more good days than bad, and supportive people to help get me through them, I can live with it.

Today is National Eat a Hoagie Day. Although it technically wasn’t a hoagie, I made a breakfast sandwich that was pretty tasty of eggs, Canadian bacon, hot sauce and cheddar on toast.

A little bit later, to hold me over until work, was a bowl of Greek yogurt I i splashed some sugar free pumpkin pie spice syrup into and topped with sunflower seeds for a nutty taste. And it really did the trick!

WP_003916I couldn’t quite wait for dinner but needed something in my belly. My assignment was a bit wacky and out of the ordinary, tonight, so I decided to take advantage of a short break and enjoy a tart granny smith apple. About two hours later, I had my actual dinner.

Dinner tonight was a spinach salad topped with half a Lean Cuisine Greek-style Chicken Salad Creation (minus the croutons).

WP_003917I really liked the cucumber dill dressing that came with it! Ever since I started making dill salads I’ve started to develop a taste for the herb.

I was proud of myself. When I arrived at work, there was a bowl filled with Reese cup miniatures. I went the while shift ignoring them. 7 pm hit like a tornado and I was non stop! . When I finally got to sit down and breath, o decided a salty sweep piece of chocolate was well deserved.

Sunday

After work, last night, dad wanted me to come over and I was surprised by how hungry I was when I left work. I went to dads house and we stayed up late snacking on veggies and salsa. We even ate half a jar of roasted red peppers! They are so tasty, plain or on a saltine. (Please excuse dad’s pile of mail… its a bachelor pad,,, what do you expect?)I even took a bite of a hoagie, and actual hoagie! It was delicious! I had the calories to spare, and I had a great time!

The temperature seriously dropped, last night. I know I didn’t need to, but I totally put on the footie pajamas! Yes, I am an adult and adore footie pajamas!! Even my dad says how solidly I sleep when I’m in them. I love this picture dad snapped of me. Red handed with a bell pepper and a jar of salsa in my sock monkey footies! We stayed up, I don’t even know until what time, watching Monk. It used to be our Friday thing before I got sick, so I really enjoyed having that with my dad, again. Its another reminded how important my recovery is.

The next thing I knew, it was noon, today, and my dad was waking me up. I went back to my mom’s house to grab my medication, and try to keep busy before work. I first made my Key Lime Pie protein smoothie bowl, that I’ve been craving. Instead of the usually flax or crumbled graham topping, I topped it with flax and Fiber One cereal. It was so delicious, especially paired with a coffee. I recently got a new shipment of sugar free syrups flavors and I’ve been trying them out. Today’s first mug of coffee was flavored with Pumpkin Pie Spice SF syrup, and Eggnog SF syrup. Wow!

I ran out to the oriental market to pick up a few necessities and returned home a bit manic about eating last night at dads. I worked with my best outlet and cooked. Its not really “cooking” but I made my girlfriend a batch of the Sammy San Seaweed Salad.  I can’t wait for her to taste it! I made a final cup of joe for a pick me up before work, flavored with another new flavor, English Toffee SF syrup. I’m glad I went with a second cup of coffee, today, because work had plans to keep me busy.

WP_003923I arrived at work to a birthday cake, which I ignored the entire shift! Not like I would have had time to eat any. I barely had time to chart, let alone eat my dinner. A few animal crackers helped to finish through the night, but I could not believe how busy it was! Weekends at the hospital are usually slow! SSSSSSLLLLLOOOOOWWWWW! Its typically filled with discharges and few admissions, and a lot of coworker banter. This weekend, I was lucky if I could grab a drink or go to the bathroom. Even the nurses were feeling the heat!

I was actually kind of relieved when I had to sit 1:1 at 2030. I was finally able to chart, grab a drink, and just breath.

Not So Hot and Spicy

After I left work last night, I headed to Barry’s. We fell asleep watching the first Star Trek movie (the remake, not the ones from the 80s, although those are awesome, as well).

My body must really need some sleep, because I slept until 1130am, again, today!

After a shower, in an attempt to perk up, Barry and I headed out for breakfast. When we went to visit grandma on Friday, we saw a billboard advertising the new Hot and Spicy breakfast sandwich at Dunkin Donuts. With out equal love of spice, we headed to Dunkin, where I got the wake-up wrap and he got it on a cinnamon raisin bagel. Joining the party was a mocha iced coffee for Barry and a sugar free vanilla iced coffee for myself. (I may have snuck some of my Torani syrup into the Dunkin).

The breakfast was an egg with jalepenos, pepper jack and habenero cheese (YUM), and bacon. It was decent for a 190 calorie wrap. And it was most definitely cheesey, but I  wish it had more of a kick! It just tasted like a pepper omelete, to me.

Nonetheless, we had a nice breakfast and headed back to the house for another round of Phase 10. Darn it, Barry! He just had to redeem himself! I lost 😦

But, hey, 2 out of 3 isn’t a bad record!

We finished just in time  for me to battle traffic and humidity on my way to work. To aide in my efforts, I went back to Dunkin for another iced coffee. I’ve always been intrigued by the concept of blueberry coffee, so blueberry it was. It tasted like blueberry, but I don’t think I’d get it again. (Wow,  I look hot and tired).

I made it to work just in time. Since I was pulled last night, Amy was pulled tonight and I stayed on the floor with my kiddos.

Dinner was a Lean Cuisine, bulked with some broccoli slaw: Roasted Chicken with Lemon Pepper Fettucini.

I’ve come to the conclusion that frozen meals need for veggies and less crappy noodles and sauce!

Sometimes You Feel Like A Nut

Despite attending Zumba last night, which always exhausts me the next morning, I had no problem rising with the sun when I was asked to pick up a 12 hour day shift for today, which I gladly excepted. I took this opportunity to try the new SmartOnes oatmeal! The Peaches and Cream was delicious! I am so used to Peaches n’ Cream oatmeal being soooooo sweet! This was perfect! Between this, a banana, and a mug of coffee, I was satisfied until lunch.

Lunch was refreshing and crunchy: strips of cucumbers and baby carrots with a bit of fat free dressing. I just love crudites!

Work went well and I kept busy. My eating was fantastic and I was so proud of myself. Dinner was my favorite Lean Cuisine, Chicken Marsala. I just love the risotto and adding the extra mushrooms makes this dish fantastic!

When I got home around 730pm, I was getting hungry again. I ate a bunch of cantaloupe. That wasn’t quite satisfying to my taste buds, so nibbling followed. Surprisingly, what did the trick was a can of almonds I found.

Come on… you know it wouldn’t be that simple… dipped in nutella, of course!

Although I ate more than I wanted to when I came home, the day over all, was good eating day!

Lean Salad

Last night, I wanted something but just could not figure it out. After countless snacking, I realzed a binge had just ensured. A purge quickly followed. I weighed myself, which probably was not the smartest thing to do. I had gained three lobs which put me into quite a tizzy.

I woke up this morning, with a plan to be active. I needed to pick up some prescriptions from WalMart, so that became my destination. I alternated walking and running for the just over 3mile travel. Mom picked me up on my way back, to run some errands.

On the car ride home, I received a call from work asking me to come in early and work a 12 hour shift. I made a shake to fill me up, made with a can of  Pure Protein Strawberry Cream and half a banana. I took a few sips, popped it in the freezer, took a shower, and crashed for a few hours. When  I woke up, I thawed the shake a bit and re-whipped it in the MagicBullet. When it was done, it looked like soft-serve! It was refreshing, and nutritious, filling, and frothy!

I sat in a 1:1 for the first 4 of my 12 hour shift. They kept offering me pizza. UGH!  So tempting! I went on the floor for the next 4 and then back to the 1:1 for the remainder of the shift. It broke up my night a bit.

I made myself some coffee to give me a boost, and as I walked into the break room, I discovered these babies:

Lauren’s Chocolate Chunk Brownies! These are terrible; and by “terrible,” I mean, “I could eat the whole tray.”

Three of these little squares found their way into my tummy over the course of the night. I like when things are small or two to three bites big. It makes me feel like I’m still indulging without completely derailing. I also brought myself a wonderful salad! The grocery store threw Lean Cuisine on sale for $1.99. I was all over it! I picked up one of there new salad additions. For me, half the package surficed as a meal, and I’m saving the other half for night shift on Friday. I split the ingredients and served it over a big container of spring mix! Delicious! The Lean Cuisine Asian-style Chicken Salad consisted of protein, in the form of chicken breast and edemame, and veggies, such as broccoli and carrots, all topped with a sweet sesame Asian vinaigrette! So enjoyable and highly recommended!

I’m Done!

Wow! I seriously have to play catch up with you guys! It has been quite some time since I’ve blogged! I have been studying like a crazy woman for my finals! The good news? It all paid off! I am officially a Graduate Nurse!

We Passed!

After one of my finals, Barry thought I could use some stress relief. You’ll never guess where he took me… SHOOTING! At first, I was really intimidated, since the first gun I was handed was a rifle. But once we went to the hand gun range, I felt in control and really started having fun. “If you hit the target, I’ll buy you dinner.” I hit the target! Woo Hoo!

We went to Applebees where I enjoyed one of their new items, Napa Chicken and Portabellos. I substituted steamed vegetables for the potatoes. It was a winner, smothered in onions, mushrooms, and roasted peppers!

Things have been going really well with Barry, which I’m happy about.

Last night, after  a couple dates of him treating, I took him to see Iron Man 3 in 3D IMAX. It was his first IMAX movie and Iron Man 3 was the perfect movies to see for him!

My eating was pretty spectacular last week, but last Thursday, I indulged on night shift. This past week was Nurse’s Week and every unit has a theme and a party. This year we went for a Pirate theme and I made a delicious tropical fruit salad!

But the cookies and Heath bar topped brownies were staring me down. After indulging in the brownie and cookie, and developing a serious tummy ache, I headed home feeling overly anxious. For the rest of the day, I felt so guilty, I only ate a banana and mixed berry shake.

Things regulated themselves out but ever since then, I have been feeling my anorexic mentality creeping back up. This is kind of freaking me out. It took me quite some time to get myself to eat dinner at work tonight. I’m glad I did because it was very good. My girlfriend told me her favorite Lean Cuisine was Shrimp Alfredo, so I gave it a shot. It already came with peas and broccoli, so I added about 3 oz of fresh broccoli florets, pepper and garlic to it and it was really tasty! I usually do not care for any frozen meals containing shrimp because it usually gets tough and rubbery, but this was an exception. WP_002342 Back tracking, breakfast was Sensato’s High Fiber Butter Pecan Hot Cereal. This stuff isn’t too great by itself, but I sprinkled a teaspoon of cocoa powder and a packet of Splenda, and it did the trick. I served it with a bowl strawberries on the side… YUM! WP_002340 In a nut shell, I’ve been loving not having to worry about school. I have never been so excited to clean my house or my car! I keep being asked why I’m so excited. I reply, “Because I have time now!”

A Little Late for St. Patty’s Day

Wednesday wasn’t too exciting of a day, but one this that was specifically a highlight was this:

I picked up my stole and tassel for graduation! Isn’t it pretty! The symbol on the stole is the key of Phi Theta Kappa, the honor society! I can’t wait to walk up onto that stage, in less than a month, wearing these!

I got home to an fuji, cinnamon, and cottage cheese before trying to catch some Zzzz before work. Five hours isn’t too bad. Upon waking up, Glee the Concert was on TV. I kept my guilty pleasure on while I spent an hour or so sending out resumes for Registered Nurse positions in Pediatric hospitals.

Say some prayers for me! I found a couple positions open in  New York!

I headed off to a great night a t work. I had a patient that I noticed some abnormals in and mentioned it to the nurse. She evaluated the patient, confirmed my findings, and thanked me for realizing these symptoms. She wound up calling the doctor to evaluate her.

I don’t want this to sound odd, but I’m glad I had this opportunity. I mean, it reaffirms that I should be in this field, that I have accurate nursing judgement.

Moving on with the night, I had a pretty consistent night of 10 patients. Dinner was Lean Cuisine’s Chicken Marsala. I used the magical, edible fungi to bulk this up. I was disappointed to see like four pieces of chicken in this meal. Luckily, I sliced up about 4 mushrooms before leaving for work. It was really great once I added the mushrooms. I was surprised by how cheesy the parmesean pea and mushroom risotto. With some added shrooms, this is definitely an “eat again” meal!

A Sucker for Staying Power

I spent the night at dads last night. When I am over, I like to make sure we eat breakfast together before he heads off to work. While brewing a pot of coffee, I played around in the kitchen and created a breakfast pizza! Its not your typical breakfast pizza that you would get at a deli, but its very similar.

A couple weeks back, I discovered 80 calorie, low carb, low fat Everything wraps by Tumaro. I thought this would be a nice incorporation with breakfast since it reminded me of an everything bagel. I sprayed a large skillet with non still cooking spray and laid the wrap over medium high heat. Meanwhile, chop up your choice of toppings. Today, we had peppers, onions, tomatoes, mushrooms, and spinach. Combine 1 egg with 1/4 cup of egg whites, or egg substitute. When the wrap has started toasting, remove from the pan. Spray the skillet again and lay the wrap, uncooked side down. Pour the eggs over top, sprinkle toppings and seasonings, reduce heat to medium low and cover. While the eggs are solidifying, I cut up a slice of Borden’s fat free PepperJack cheese,  and scattered that over top the egg.

Keep the eggs covered until cooked completely through. We are hot sauce and egg people in the Bundo house, so that was the final touch. Slide the fully cooked pizza out of the pan, slice and enjoy! I didn’t have an appetite for hours!

After dad left for work, I met up with my other dad, my stepdad, and we headed to the Farmer’s Market. I like going here for a couple reasons:

  • cheap! (lots of good stuff, for low prices)
  • ridiculously scrumptious pizza (Mama Gina’s is the best!)
  • Amish market (need I say more?)
  • produce (yum!)
  • puppies (theres a pet store and groomers in the  market, I just want to take them all home!)

Its also just a nice way to spend an hour or two out of the house.

On the way home, I stopped by the grocery store to see if I could grab some fruit cups. I didn’t find my fruit cups, but what I did find was a new bar to try!

I’ve really been on a malted milk ball kick, so when I came across Kashi’s Go Lean Dipped Chocolate Malt Crisp bar, I had to indulge! Oh my gosh! Love it! Its like candy! This whole bar has the same ammount of calories as a serving of Whoppers, but with less fat, less sugar, and more protein that actually fills you up, makes you feel satisfied, and has some serious staying power! I wasn’t hungry again until close to2 am at work!

I got to work early tonight to meet a friend at the Oncology Prom. Every year my hospital host Prom for the Oncology kids. I friend of mine is a former patient and invited to come! They really go all out for these kids! They serve dinner, theres a DJ, everyone looks beautiful! Last year, David Akers was the guest. This year, it was Miss Teen Delaware. After a couple dances, I helped clean up and headed to work. (Did I mention that I woke up at 5pm and could not fall back asleep today!?)

Like most meals at work, this one had to be microwaved. It was another Lean Cuisine (I think I prefer Lean Cuisine over Smart Ones): Grilled Chicken Ceasar. But wait! Thats a salad, not a frozen meal! What I liked about this meal, was the light,  cheesey sauce and the broccoli! The ceasar sauce was not rich, like many cream gravies. I added some chopped frozen asparagus to the mix for a variation in texture. It worked out quite nicely. I finished the meal with a small, refreshing navel orange.

During dinner, I saw one of the nurses, Kris, make a face and grab her belly. “Are you okay?” Guess what? She was having contractions! I’ve delivered babies, but its pretty cool seeing someone who belly you watched grow, start having contractions!

I was pulled to another 1:1 on my night shift. I usually dread night shift 1:1 because I’m terrified that I’ll fall asleep. This one was different. This patient shared a very similar background with me. We got to talking. While my patient sleep, I drew a picture about the true meaning of “beauty”, and wrote a note on the back. Ironically, this patient drew a picture of me and wrote a note on the back. Great minds think alike. We shared our email addresses. They say to be careful what information you share with your patients, but I find that sometimes, in order to deliver your best care, you need to bend this rule a bit. Sharing a similar story with your patient, makes them trust you. Its like give and take: they share, you share, they share even more. Anyway, I love making connections with my patient’s and trying to be there for them, not just when I am on the clock. I’m glad I met this patient.

Newark Deli and Bagel

Yesterday breakfast was oh so simple and oh so yummy: Toasted Blueberry Crumble bread, by Sara Lee, topped with Bar Harbor Blueberry Jam, my favorite! It was compliment with a navel orange and my new coffee I got when I had a layover in Denver.

I was expecting, I guess, a syrup flavor, in the coffee, as if I would receive it from a coffee shop. Instead, it was a mild mocha flavor (I love mocha). I really enjoyed its subtle flavors.

After trying to cram in some studying, I headed off for an interesting  and semi-frustrating night at work. I can’t share much, due to HIPPA, but I can say it involved an aggressive patient. I love my job, but some days are rough.

I was thankful for my dinner break, not only because I needed a breather, but also because dinner was delicious! I was pretty darn impressed by this Lean Cuisine meal: Ranchero Braise Beef with Chipotle Mashed Sweet Potatoes! I brought some frozen corn to have with it. It was sweet, with just a bit of spice! The corn was the perfect pair for this meal! I called dad and insisted he try this meal for lunch one day at work, just like I totally insist you, give this one a try!

This morning, mom and I woke up early to go food shopping . While in the area, I took mom to one of my favorite breakfast spots: Newark Deli and Bagel (lovingly called “NDB”)! They make all the bagels in house, and they are delicious! They are also known for their chicken salad. Dad loves this stuff! One of his favorite things is chicken salad on a toasted asiago bagel. Their breakfast are phenomenal! Crispy bacon! Juicy sausage! They even have egg whites! This morning, I split a sandwich with mom, one they I never had before. I ordered a rye bagel with egg whites, tomato, roasted turkey, and pepperjack cheese! MMMM I’m definitely getting this one again! That half a sandwich, paired with a small caramel nut coffee, was perfect and it held me over for most of the day!

Work tonight was consistent. Dinner was another Lean Cuisine, one, for which, I had high expectations: Roasted Garlic Chicken with creamy Parmesan spinach. I added steamed broccoli  I really expected a better flavor. There was not as much garlic as I had hoped, in fact, there was not as much flavor as I had hoped.

I start my new clinical rotation, tomorrow, at a long term care facility for the elderly. Wish me luck!

Working a Twelve & Some Serious Cereal

I did not have much of an appetite this morning when I woke up, so I headed to work with some snacks, just in case. Lunch was healthy… pineapple and cottage cheese. The other day mom bought a pineapple and it was so sweet and delicious, she ran back to the store and bought 2 more! I’ve been in my pineapple glory!

When I got to the unit, Julie was there with my girl scout cookies. I totally forgot I ordered these. Down the hatch went some do-si-dos. Those are some dangerous cookies!

Later, I made a bowl of oatmeal, that I actually meant to eat earlier in the day. I find that with a lot of instant oatmeal, with berry flavors, they are just too sweet! I mellow it out with some ground flax. I’ve never tried this oatmeal before, so I did not know its sweetness. I have to say though, the flax made it all the better!

I never actually wound up eating dinner tonight. Not because I was too busy to eat, but because a certain chica (myself) ate a few too many cookies… and got a belly ache.

Silly Sammy… oh well, at least my dinner for tomorrow night is already at work.

Sunday:

I went home, craving real food! I wound up eating a bowl of cereal and some pineapple.

I lectored at Church this morning and it was really nice to see some friends I hadn’t seen in a while. Deacon pulled me aside to tell me how worried he was about me and how happy he was to see me put on weight. I like to hear things like that but I’m definiately ready to get rid of this belly I put on.

This morning, I ate a packet of Quaker Cheddar Grits. When I first opened the packet, the chedder smell reminded me of the Easy-Mac cheese.

Even though its been sunny, the wind chill was just too cold for me, so Day 5 of Couch to 5K was out today. Instead I did a 12minute warm-up with Dave Sinclair OnDemand and followed it up with  Julie’s Jump Rope n’ Abs Workout.

I’ve really been on a serious cerel kick, lately. Every time I go for a snack, cereal is the winner. For lunch, before I headed to work, I finished off my Cinnamon Pecan Special K cereal. If you recall, I said earlier that I did not care for the cereal with milk, but by itself, its a keeper. Well, the same goes for Kashi’s Berry Blossom cereal. I had a bit of each left and decided on a combo deal. YUM! I don’t know if the Special K tasted better because all the nuts and cinnamon settled to the bottom of the back, or what, but it was tastey!

Dinner was what I did not eat last night: Lean Cuisine Chicken with Basil Cream Sauce. Ialso steamed some frozen oriental vegetables to soak up some of that excess sauce. I added some black pepper, like I do with most things. Myfavorite part of this frozen meal was the Italian green beans! This isn’t a favorite meal, but the added veggies helped and I could eat those green beans all day!

Dessert came with a little sugar and some staying power. A granny smith with some hospital PB made its way into my tummy.

I start my new rotation tomorrow morning at a new clinical site. I’m kind of exciting since the place does similar work to my actual job, but the paperwork looks a little intimidating.
