Good Ideas with Daddy

Once again, I woke up with a recipe in my head. Dad, too, woke up with a breakfast in mind. We combined our ideas and it was fantastic!

I prepped everything at my house and walked to my dads to start our Sunday. By the way, “Get Ready” by the Rare Earth is a great power walking song.

Dad bought these Honey Ham steaks off the managers rack for like 69 cents and really wanted that with eggs. That sounded pretty darn tasty to me and I knew this concoction in my head would play perfectly with the sweet and salty ham.

  • 1 scoop vanilla protein powder
  • 2 eggs whites, or 1/4 cup liquid egg substitute
  • 1/2 Tbsp SF FF Butterscotch pudding mix
  • 1/2 Tbsp PB2, or 1 tsp creamy PB
  • 2 Tbsp cottage cheese
  • splash of water
  • 1 tsp Toffee bits (optional)

Blend all, except bits, in a food processor until smooth. The PB and pudding makes this batter a bit thick, so I recommend a splash of water. Spray a heated and sprayed skillet. Fold in toffee bits if desired,  and dollop the batter and use the back of the spoon to spread batter.

In my opinion, these dollar stacks did not need butter or syrup. I drizzled the slightest bit of SF syrup over it. Just like I expected, the salty sweet honey ham paired perfectly with the salty sweet butterscotch and peanut butter!

Breakfast was packed with protein and deliciousness, and was completed with a mug of coffee.

Following breakfast, I dove into household chores, like laundry, flipping the mattress, changing the bed linens, and over all, house cleaning. We then ran a few errands, while listening to the Eagles/Dallas game on the radio. Upon arriving back home, I had a bit of a chill. Its a beautiful sunny day, but still breezy. I really don’t know I’m complaining about a little 10 mph wind, when yesterday I had 120 mph wind whipping at me body…

Either way, another daddy-daughter combo idea came into fruition. “Have you had those pumpkin pie pop tarts, yet?” dad asked. Nope. “Why don’t you throw one in the toaster to hold us over until dinner.” Hey, want to split a mug of hot chocolate? “Sure.”

Two words: Good Ideas!

The pairing of the warm, toasted poptart, which actually did taste like pumpkin pie, and the warmth of my special hot chocolate was absolutely perfect to warm us both up! I mean, it sounds so simple but I’m still impressed. Haha!

After watching a terrible Eagles performance and finishing up a bunch of cleaning, dad had another good idea. I say its a good idea because I’ve been craving sushi! He had been craving the Chinese Buffet. And, after all, it is International Foods Week. Mexican yesterday, Asian today. We met Barry for dinner at the Hibachi Grill and Buffet. Sunday dinner is the best time to go because they amp up the seafood selection! I loaded up on sashimi and vegetables! I hit up the raw bar and I hit it hard! Mussels, tuna, salmon… and then green beans, shrimp, mushrooms, spinach and such from the hot plates.

I was starving and, oh, so, happy, with our decision to some out to the buffet! MMM I was in veggie and sushi heaven… times 3!

 

Calzone or Pizza?

Yesterday, I had every intention of a new recipe for you and I was really excited about it, but….

WP_003389My day began early with and orange banana shake (I prepared one for Frank for when he got up) and a trip to my moms new job. It was followed by lots of food shopping for her and then a doctors appointment. The doctor was really excited to see me healthy and at an ideal weight! By the time I left, the shake had definitely worn off and i was hungry! I grabbed a snack bar and slammed like 30oz of lemonade… NOT a good idea. By the time I got home, I felt terrible and got sick! I think there was just too much acid at one time from the lemonade.

This totally sucked since my dinner involved tomatoes and I decided to stick with soup. I actually made another batch of Italian Peasant Soup since I had so much cabbage left, and a half grilled cheese. It did the trick and dad and Frank were more than happy to benefit from it.

Note to self: Italian Peasant Soup cures belly aches.

Of course, even though I was full, snacky Sammy snuck up…

I’m not kidding when I tell you that I looked like a rabbit, tearing off 1 leaf at a time off a head of romaine lettuce and dipping it into salsa! (Which was genius and all since salsa has absolutely ZERO acidity!)~ that was sarcasm…

Today began rather early for a Saturday, as I picked up a shift for a girl at work. After my cup of coffee, made with my new Cashew Milk (35 calories a cup), and rounds, my tummy began sending me the “feed me” signal. I microwaved some liquid eggs substitute, while toasting a cinnamon raisin bagel thin. As odd as it sounds, I spread a tablespoon of sugar free orange marmalade on the toast, popped my micro-egg on there and had  a delicious breakfast sandwich that lasted me until about 1pm.

WP_003396The girls always order out on the weekend shifts, but I was determined to stick with my lunch. But watching them eat Seasons salads and calzones made me really want a calzone from the place, as I ate my turkey and pepper romaine wraps.

One of my favorite calzones is ham, spinach, and ricotta. I had ricotta, ham, and spinach in the refrigerator… What is a Bundo to do? To take my mind off the intensity of studying and work, I did one of the things I do best: Cook!

Do I make the calzone or whip up a pizza?

I opted for the later since I’ve had it in dough, but never on top of it!

I picked up a super huge head of cauliflower from the farmers market. I’m serious! Talk about a “head!” Its as big as mine! And guess who has enough for another pizza?

Ham and Spinach Pizza

serves 8

The Crust:

  • 1 medium to large cauliflower, chopped
  • 1/4 cup liquid egg substitute
  • 3/4 cup shredded fat free mozzarella, further chopped
  • 1 tsp dried oregano
  • 1/2 tsp dried parsley
  • 2 clove garlic, minced (1 tsp minced)

The Toppings:WP_003409

  • 1/2 cup pizza sauce
  • 3/4 cup fat free ricotta cheese
  • 3/4 tsp Italian Seasoning
  • 1 tsp garlic, minced
  • 1/8 tsp black pepper
  • 2 cups (85g) fresh spinach, finely chopped
  • 8 slices 98% fat free ham, or low sodium
  • 1/4 cup plus 2 Tbsp fat free shredded mozzarella
  • basil for sprinkling

Steam the cauliflower with 1/3 cup water in a microwave safe bowl covered with plastic wrap. Microwave about 9 minutes. Carefully transfer the steamed cauli into a food processor and blend until the cauliflower is a rice consistency. You should have about 2 1/2 cups of “riced” cauliflower. Mix that with egg, cheese and spices. The mixture will form a dough like consistency. Spread the dough on a hot pizza stone or a baking sheet (my least favorite part- it may take a bit of work to finally smooth out) and put in the oven for about 20 min at 400.

Next, roll ham slices, slice lengthwise, then across the two halves until a bunch of hammy shredded are made. Set aside. In a small bowl, combine ricotta with garlic, a handful if the chopped spinach, Italian seasoning, and black pepper. Set side. Pull out the crust and using a spatula, ensure it is not sticking to the pan/stone. Spread a large spoonful of the ricotta mix on the crust along with the mozzarella. Dollop sauce and remaining ricotta mix around. Top with ham and the remaining spinach.Sprinkle some dried basil over the whole pizza and put it back in the oven for another 5 to 10 min.

OIKOS Smoothies Morning

I was sent a recipe for a South Beach Mango Lassi a week or so ago, and with my recent obsession with Indian food, I was more then apt to try it.  Lassies are a traditional yogurt-based drink that you will find on any Indian restaurant menu.

I whipped out a plain OIKOS and told Frank I was making a smoothie, to which he replied, “Will you make me one, too? I just bought yogurt.”

I typically like to add a scoop of protein to my smoothies for staying power, but since I’m out of vanilla, I had to stick with the God gave me.

Frank has been wanting me to make him a Key Lime shake for a while, now and since he had OIKOS Key Lime Greek yogurt, thats what I whipped up. (By the way, if you’ve never had Greek yogurt, this is the stuff to suck you in!)

Key Lime Smoothie/Shake1 5.3oz OIKOS Key Lime Greek yogurt

1 tsp sugar free lime jello mix

ice

1/3 cup milk

water

protein, optional

Combine and blend!

Mango Lassi Smoothie3/4 cup frozen mango

1 5.3oz plain OIKOS Greek yogurt

1 Tbsp granulated Splenda

ice

water

pinch of cardamom

Blend away!

I planned on taking a walk to the supermarket to pick up some ingredients for some recipes, but as I currently type this post on the pouch, thunder and rain has set in. Change of plans, I guess.

Warning: Gross Alert! 

Before the wind picked up and retiring from the porch, I was typing away, when out of the corner of my eye pounces Bunny. In mid-air, this crazy cat caught a bird! Are you kidding me?

I couldn’t believe it! I was stunned and mortified, and disgusted, and for some awful reason, I could not look away! I called Barry and told him what happened. Only one word found its way out of my mouth, “Ewwwwww.”

“Can you say anything else?” he asked. “Ehhhhhhhhhh.”

I was disturbed. The image is scared in my head as Bunny chomped away at the poor birdie.

Later today…

It really came down today, so I went to the store to pick up the last few things I needed for this weeks recipes! Something was on my mind today, I don’t know exactly what, put something we definitely there. To keep myself busy, I decided to, can you guess, did a little cooking. Stay Tuned!

WP_003251Barry came over after work and I left terrible that I didn’t go to his place tonight. Barry leaves this weekend for army duty and he and I both work this week, so our time is pretty limited together. I was in a funk, with a knotted stomach, and a little dizzy.

After Barry headed home, mom and I ran to Wawa to grab a little gingie (ginger ale), and i finally found it! Diet Cherry Dr. Pepper! I finally got my fix. Knowing I needed something in my tummy, mom and I split a can of Campbell’s Chunky Split Pea & Ham soup.

With a little salt and pepper, this stuff was delicious! It was probably the best canned split pea I’ve ever had. There were big chunks of potato and carrots, and ham! Not little pieces of ham… big chunks of ham! And it was filling!

Easter Sunday

Happy Easter, everyone!

This morning began with Easter mass, one of my favorite masses of the year. I love seeing a packed Church, all the little kids in their Easter outfits, and reuniting with people I haven’t seen in years (like kids I went to grade school with, and people my dad when to grade school with! Yeah, its a pretty tight congregation)!

After stopping by the cemetery, I headed home to prepare Easter breakfast. I found a recipe for Carrot Cake Waffles a while back and immediately knew that  I had to make these today! Using Katie’s recipe, I adapted them to be whole wheat and low fat waffles. I also made a cream cheese drizzle to go on top (whats carrot cake without cream cheese frosting?), and accented the dish with some crushed walnuts. I hope you enjoy!

Carrot Cake Waffles with Cream Cheese DrizzleWP_001719

makes 8-10 waffles

Waffles:

3/4 cup Heart Smart Bisquick

1/2 cup whole wheat flour

2/3 cup shredded carrots

1 cup flax milk (milk of your choice)

2 Tbsp sugar free syrup

2 Tbsp unsweetened apple sauce

1 1/4 tsp cinnamon

2  1/2 tsp vanilla extractWP_001723

Cream Cheese Drizzle:

1/4 cup fat free cream cheese, room temp

4 Splenda packets

1/4 cup flax milk

1 tsp confectionery sugar (I use Ideal brand)

1/2 tsp vanilla extract

Combine all the waffle ingredients in a bowl and whisk together. Heat your waffle iron and heavily coat with non-stick cooking spray. Pour 3/4 to 1 cup of batter on heated and sprayed waffle iron. (You can add more milk if you want to thin out the batter). Cook until your liking. Whisk all ingredients for cream cheese frosting together. Drizzle frosting over waffles and top with shopped walnuts.

After some operator difficulties, they were beautiful! I loved the coloring of these waffles and the bit of natural sweetness that carrots release when they are cooked. I really enjoyed these and cant wait to make them again. The drizzle was just sweet enough to really play off the carrots. I served these with some super quick and easy Banquet Brown n’ Serve Maple Sausage Patties. The maple sweetness accented the syrup in the waffles!

Using the ingredients above, each waffle only contains about 80 calories or so! And you get a some vegetables early in the day!

I bet these would be pretty spectacular Belgium waffles, too!

With it being the end of Lent, I took a nibble of a protein bar today while dad got back his chocolate! We both messed up once on Lenten promises, which I think is pretty good.

A typical Easter dinner in the Bundo house is a bake spiral ham, fingerling potatoes, cabbage and green beans. This year, I will be working. Frank surprised me and baked a ham just in time for me to take some to work. To substitute for the cabbage, I brought some brussel sprouts. I think I’m the only person in my house who loves these little balls of leafy goodness! I finished this meal with an Easter brownie!

As arrived home after a busy shift, I had two feelings: sleepiness and a hankering for ham. I entered to kitchen to find 1 left over waffle from this morning. I folded this in half and laid a few slices of spiral ham while some lemon tea brewed! A great way to end my Easter night!

As I drove to work and reflected on the day, I started remembering some Easter memories from my childhood. The one I can see most clearly is when I was about 9 years old. My mom said, “What else did the Easter Bunny bring you? Whats behind the picture?” The picture she was refering to was one of those RoseArt velvet coloring pictures… anyway… I peak around the back of the picture to find two rectangular papers. As I read the tickets to myself, it clicked and I began jumping up and down. “What is it?” my mom said. “I GOT BACKSTREET BOY TICKETS!!!!”

HAHAH yes, I was a BSB junkie back in the day and BSB was my first concert! What are some of your favorite Easter memories?
