Food and Emotions

As proud as I was of my eating last night at work, one thing was on my mind when I left: those donuts from the morning. I decided that slicing a quarter would be a nice treat. Although it didn’t do the trick like I thought it would, it put a sweet tooth in me that needed to be satisfied. I traveled around the kitchen biting into crackers, cheerios, Reese pieces… Anything with a salty sweet crunch. I realized it was anxiety, not hunger. I wish I would have realized it earlier but at least I realized it, and still did not go over my calorie allotment.

I’m finding the closer my exam gets, the more anxious eating I want to do but the more calorie paranoid I get. Yeah… A catch 22 kind of thing. I really am quite nervous for my exam. Just scheduling it made me nauseous and now that everyone has been passing, I have this nightmare that I’m going to be the one that fails.

I have faith in myself. Most importantly, I have faith in the Lord. I know the Lord wants me to be a nurse, to care for His children. I have trial through so much during nursing school, at work, home, and school, and there is no doubt in my mind that I shouldn’t pass. God will guide me.

Start back on track at the next meal.

WP_003387With today being National Creamsicle Day, I honored it by making a Creamsicle Shake using half a packet of Betty Lou’s Low Glycemic Orange Cream powder, water, ice, 1/2 tsp SF orange jello, and 1/4 tsp xanthum. Yum!

Before laying down, in an attempt to sleep before work, I ate a big bowl of watermelon to fill me up!

I’m packing  a Smart Ones Chicken Marsala for my night shift meal to see if it can compare to my beloved Lean Cuisine version.

At this point, in the studying game, I have officially killed two highlighters and am working on #3. I couldn’ t sleep because all I could think about was the exam. I am literally sick to my stomach over this thing. I’m have chest pain and I just want to cry from this nervousness!

Thursday

Although everyone’s meals smelled delicious, my stomach was too upset to enjoy my intended Smart Ones meal. I opted for my emergency soup with saltines. I saved some celery sticks and PB2 for a later snack. The shift went rather quickly as a I spent all my down time studying for the upcoming exam.

Upon arriving home this morning, I was definitely hungry. Since the temperature serious dropped this morning, I opted for something warm. I came across this by accident, one day, I brewed coffee in the Keurig and mixed it with an Atkins Mixed Berry shake.

The box was kind of banged up and I wanted to use it soon, so I took advantage of this cool morning. While sipping on this, I channeled my nervous energy into baking. I was inspired by my Strawberry muffins, the other day, to make a different type of muffin. I, of course, I had to try them out.

Take One wasn’t bad. I think I know what alterations I need to make to satisfy your and my muffin craving.

After studying the day away, after being told I should take the day off, I finally fell asleep for a brief hour or so. Upon waking up, although my anxiety had messed with me to the point of losing my appetite, I wanted to keep with my plans for dinner.

Pistachio and Honey Mustard Crusted SalmonWP_003527

serves 4

  • 2 Tbsp Honey Mustard sauce, or mustard of choice
  • 2 tsp non fat sour cream
  • 1/2 tsp Braggs Liquid Aminos, or reduced sodium soy sauce
  • 1 tsp garlic, minced
  • half 1/8 tsp black pepper
  • half 1/8 tsp dill
  • 1/4 cup pistachios, in shell (15g out of shell)
  • 4 4oz salmon fillets

Preheat oven to 350 F. Combine mustard through spices and mix well. Set aside. Remove the pistachios from the shells and chop. Place the salmon fillets, skin side down, on a baking sheet covered in foil and sprayed with non stick cooking spray. Divide the mustard mix over the salmon fillets and top with chopped pistachios. Bake uncovered for about 8 minutes-10 minutes, until salmons center is opaque.

I served mine with a side of spinach, onion, and mustard, like a pseudo-salad,

After a cinnamon covered almond, I came up with the idea of topping a 100 calorie bag of kettle corn with cinnamon and a packet of Splenda. Kind of genius!

Friday

Recipe for Success

I woke up in the right mindset. I called my Alarm the “Alarm of Success.” I began the day as I do all exam days: with Dunkin and oatmeal. I took a brief jog to the Dunkin to burn off some nervous energy, grabbed my coffee, and like always, I grabbed dad one and a toasted everything bagel with cream cheese. I even got my little brother a little something.

I sat down at the kitchen table and stuck with tradition. Dad came over to give me good luck hugs and to enjoy a bit of breakfast. I made sure to take a nibble of the bagel, like I always did. I knew I needed to stop studying! I brought Barry lunch at work and killed some time there. As he walked me back to my car, I could feel a panic attack setting in.

I sat in the car trying to breath and divert my attention elsewhere. I checked my email, and it was just what I needed! It was from my manager. Usually I cringe when I get emails from him (you never know whats in store):

“I’m gonna be a nurse! I’m a nurse!” I shouted this in the car as I drove away from Barry’s work!

I headed home, called my grandma for some calming words of wisdom and inspiration, and headed off to the exam. I sat in the car, music playing, singing loudly in the parking lot, and enjoying my sugar free mint pattie, as I always do, pre exam.

This thing was more intense than nursing school exams. I was only allowed my ID and ATT card. They asked me to remove my necklace, but wrote a note that I kept it on since it was a cross. I removed my watch and hair ties off my wrist and locked them in a provided locker. They even noted any visible tattoos! It was intense. Now, I play the waiting game. The nauseous waiting game causing me nervous snacking and more anxiety! The nauseous waiting game causing me nervous snacking and more anxiety and body issues! Yeah… its like that.

Date Week

By some stroke of luck, Barry and I actually had like 9 days off… Together! For the past week or so, we had been working opposite schedules so we wanted to take advantage of the vacation.

The Philadelphia Zoo

Monday, July 15, we began the week with some monkeying around. Seriously, I love the primates at the zoo! We arrived at the Philadelphia Zoo around 11am or so to begin our wickedly humid day. I felt like I was 5 again! The entire drive to zoo, I was singing, “We’re going to the zoo! We’re going to the zoo!”

Barry was starting to get a bit hungry, so we made a pit stop to the nearest kiosk and he ordered chicken finger n fries. I love this picture, mid-chew!

Yeah, Barry, it is hot! Right out of the fryer! Barry and I both have little things that get us oddly enthused, especially when it comes to food. So when he saw the blend-your-own-ICEE wall, he needed to get one!

Seaside

Tuesday began around 9am, with the Dunkin Donut breakfast sandwich for Barry. We spent the next 2 hours driving until we reached my favorite place in the world: Seaside Heights. I love being able to share this place with others. Although the hurricane wiped out all the rides, just being there and walking the boardwalk was a nice time!

Last week, I mentioned that place that fries everything so Barry got deep fried Reeses, and a deep fried cannoli to appease me. Not impressed….

WP_003086He was reunited with Sawmill Pizza! MMMMM Buffalo chicken pizza and a beer! And I took him to few of my favorite games, like Shoot the Geek (its a paintball game that dad and I are obsessed with), the old carousel, and a few super ancient games, like Bimbo. And lastly, delving into his sweet tooth a bit more, I introduced him to Berkeley’s fudge!

Valanni?

Thursday, begin in my house with one of my favorite shakes: White Chocolate Pear, inspired by Harry and David’s Chocolate covered pear collection. I made dad and Frank shakes, too.

Rather than going back to Valanni as planned, I suggested we stay home, to save money (and calories), and cook. To stick with the Valanni theme, I tried my hands at those delicious Brussels sprouts! I found a recipe for Roasted Balsamic Brussel Sprout and Toasted Walnuts and used that as my base.

WP_003112After buying a pound of fresh brussel sprouts and cutting them into quarters, I sprinkled black pepper, a touch of salt and granulated garlic, and 2 Tbsp of balsamic vinegar over them, shook them up, and let them sit. Meanwhile, I chopped 2 Tbsp of slivered almonds, and finely diced half a large granny smith apple. (The other half found its way into my tummy.)

I sprayed a baking sheet with non stick spray, emptied the sprouts on it and baked them uncovered for 20 minutes, tossing occasionally, at 375 F. Sprinkle the chopped almonds over top and bake for another 5 minutes. Removed from the oven and toss with the apple.

While these were baking, I marinated some chicken breast in Annie’s Hot Chipotle BBQ Sauce and threw them on the grill.

Although the sprouts weren’t like the ones at the restaurant, I still enjoyed them. I, did, however, learn a few things in the process of making these:

  • fresh brussel sprouts take much longer to roast than frozen ones
  • Valanni must dowse the sprouts in balsamic vinegar, because the sprouts that were well coated tasted the closest to the originals
  • try and try again… Since I know I’m on the right track, it only gives me more incentive to try to get this down!

Harry Potter

Every night for the past week, Barry and I have watched a Harry Potter movie. Needless to say, when Barry found this shirt at the zoo, I just couldn’t stop laughing!

To finish off Date Week, we watch Deathly Hollows Part 2, and each enjoyed a bowl of Edy’s Slow Churned Caramel Praline Crunch Yogurt Blend, topped with jimmies! We’ve been having a debate, since Seaside, as to call them sprinkles or jimmies…. Its okay, I know the truth… Jimmies (wink).

Is That For Real?

Last night, Barry and I went shopping for some patio furniture. I told I’m we could only get the table if I was allowed to put it together! Being handy gives me some feeling of accomplishment.  I get really proud when I can put things together. So after a lovely table was assembled, I learned that Blueberry Craisins, besides be addicting, are really good in yogurt!

Moving on…

With internet and Photoshop and the ever evolving technology, its hard to figure out what’s real and what’s just a joke.

I mean, think about it… How many times has Morgan Freeman died or McDonald’s twitter account been hacked?

I saw this breakfast sandwich and thought it was a spoof on Paula Deen, in the midst of her recent dealings in the court. Needless to say, when I walked into Dunkin, I couldn’t believe they actually had a bacon and egg sandwiched between a glazed donut! (Paula is famous for her burger between two Krispy Kremes).

Barry and I have been talking about this sandwich for days, now, and he finally gave into temptation this morning on our way to the shore.

Barry didn’t think the flavors meshed, so naturally I had to try it. I promptly corrected his blasphemy. The saltiness from the bacon and sweetness from the glaze… I held the sandwich for a hot second and was still tasting glaze on my fingers 30 minutes later! That glaze gets everywhere!

While Barry was driving, I searched this breakfast sandwich, only to find some other interesting food combinations all of the world.

Some items that I found interesting and dangerously tempting to try:

  • We have a local farm that makes bacon ice cream. I’ve had it and its not super impressive, but you still can’t take away how decadent bacon, ice cream, fudge, and caramel sound together!
  • The Carl’s Jr. Breakfast Sandwich sounds right up my alley. I won’t lie to you… whenever I get BK breakfast, which isn’t very often, I always put my tots on the sandwich! Carb on Carb!
  • Hardee’s Monster Biscuit is like a breakfast meat-lovers paradise! The only thing missing is scrapple!
  • 100×100 Burger is so unrealistic! Who thinks of this? I just want to point out that the only person that might be able to eat this whole thing is Joey Chestnut, and I would want an EMT on standby to revive him after his cheese induced heart attack. (by the way… 1 slice of cheese is around 80 calories… thats 8000 calories of cheese, alone!)

Yeah, that says “Fried Butter!” Yay, Seaside!

  • Um, mac and cheese buns… with mac and cheese… and bacon… and more cheese…. and mayo… Zombie Burger has really done  it!
  • Speaking of Mac and Cheese… the mac and cheese pizza is tasteless from CiCis. I had it when the the company first opened and    was not impressed with anything from the menu.
  • After seeing everything that you can fry at the stand in Seaside, I’m not impressed with the KitKat Pops from the Pizza Hut in the Middle East.

  • (Slide 2) The ‘Merica Burger just looks like a heart attack.
  • (Slide 5) A Sloppy Joe on a Krispy Kreme! I dig sloppy joes because they are, well, sloppy… I can only imagine the pairing of    sweet donut to the tangy sauce…
  • (Slide 9) Sonic’s PB and Bacon Shake= Instant obesity. Check out the sugar content! 82g of sugar and 79g of fat!
  • (Slide 16) BK Japan puts pumpkin on some buns with a nut sauce. The concept sounds delicious in spite of the pumpkin being      fried, but, hey, maybe this will be the next BeWell make over!
  • (Slide 23) When I was a kid, stuffed crust pizza was my jam. Now, Pizza Hut UK has a hot dog stuffed crust. After looking up the    nutritional facts, I may have to dabble in a homemade version, because the concept just sounds too good!

Barry shared this with me. I’ve heard of the Tur-Duck-en, but this is a whole new level of crazy!

Seaside Temptations

Kohrs Bros. Custard. Sawmill Pizza. Midway sausage, peppers, and onions.

These are things I crave every summer, only to be gotten at Seaside Heights, NJ.

The day began seriously early as Barry and I left the house around 5am, him for work and me for the shore.

Last night, I made a ton peanut butter and jelly sandwiches, using a variety of different jams and breads.

This morning, before leaving to meet my cousins in Philly, I packed us up water and watermelon…

All the sandwiches, carrot sticks, celery sticks, crackers, and pretzels to keep the 7 of us going.

Once I arrived in Philly, we loaded the truck up with our crab cages and took a quick pit stop to Dunkin Donuts, where I grabbed a small sugar free caramel iced coffee and an egg white turkey sausage wake-up wrap.

The drive up to seaside was filled with uncertainty, as it rained on and off. The drive into Seaside was quite different than normal. In the distance, growing up, I could always see the ferris wheel. This time… Nothing.

We arrived to Dock Outfitters. This is the first place I ever went crabbing and the first time I was ever on a boat. It was a tradition that poppop took everyone crabbing here. My cousin, Eddie, and I have so many memories of growing up in Seaside. We were greeted at the dock by some ominous clouds that quickly followed with some serious rain.

The little girls were really into trying to learn the tricks of crabbing from Eddie and me. After grabbing hot chocolate for the little ones and and a coffee for myself to warm us up, the girls headed back to the car to warm up and dry off a bit.

We packed things up around 11, when the lightening was supposed to hit (which it never did), and drove a few minutes into the borough of seaside to hit the boardwalk.

It was bizarre. My childhood memories destroyed and washed away by Hurricane Sandy. We drove around checking out all the damage and watched the construction workers clearing away debris and rebuilding the boardwalk.

I was so happy to see that a few places still remained. The Sawmill was still there, with their massive 27 in pizzas! Yes, this slice is bigger than my head…

Midway was rebuilt, and the Kohrs stands were still running. And I would have been devastated if Jimmy’s Breakfast was gone. Jimmy’s has been a family tradition since they opened. My grandparents would take us here for breakfast every morning.

No rides remained, and half of the Carousel Arcade was wiped out! I was thankful that some of the old rides were salvaged. The chuck wagon  and the space ship were rides that have been around for over 35 years! I’m glad that the kids of this generation will get to love them as much as I do.

Eddie took Cindy and the kids onto the beach. The sand had been so eroded, there was a wall of sand they had to climb to get back to the boardwalk. The water was much too cold for me!

I really enjoyed walking the boardwalk with Eddie and his family. It was like old times, again, like when we were kids… Eddie and me  🙂

As we continued to venture the boardwalk, it was sad, but still wonderful to see the new and old shops opening up and seeing all the hard work people were putting into “restoring the shore.”

We found a small place called something similar to “We Fry Everything.” What it should have been called was “Danger, Sammy Bundo!” or “Sammy’s Fortress of Food Induced Panic Attacks!” I’ve had fried oreos before, we know how I love oreos… but fried kit kats! Nutter Butters! Cannolis! Reese and banana sandwiches!

Oh, my goodness! I died of a deep fried sugar coma just thinking about its potential mouthwatering indulgence!

Despite all of the spectacular treats on the boardwalk, I was having a bit of a rough time eating. I could only bring myself to eat the half PB&J and baggy of celery I packed. I opened up to mom and dad when I got back home about having a hard time eating and made sure I ate… well I went to town on a bag of carrot sticks… like a lot of baby carrots! Haha! Better than nothing, I guess.

We headed back to the dock as the sun came out and as high tide approached to finish our day together. We only wound up catching about 15 crabs or so, but I loved watching the girls trying to learn the ropes from Eddie. Eddie and I decided that this has to become a tradition for us!

After a great shift at work, and a good day of eating, (and absolutely no sleep, whatsoever!) Barry picked me up to go food shopping.

I had grabbed some habeneros from the farmers market a week or so ago, and inspired by the Dunkin Donuts breakfast we had the other morning, I was down to battle it out!

Not So Hot and Spicy

After I left work last night, I headed to Barry’s. We fell asleep watching the first Star Trek movie (the remake, not the ones from the 80s, although those are awesome, as well).

My body must really need some sleep, because I slept until 1130am, again, today!

After a shower, in an attempt to perk up, Barry and I headed out for breakfast. When we went to visit grandma on Friday, we saw a billboard advertising the new Hot and Spicy breakfast sandwich at Dunkin Donuts. With out equal love of spice, we headed to Dunkin, where I got the wake-up wrap and he got it on a cinnamon raisin bagel. Joining the party was a mocha iced coffee for Barry and a sugar free vanilla iced coffee for myself. (I may have snuck some of my Torani syrup into the Dunkin).

The breakfast was an egg with jalepenos, pepper jack and habenero cheese (YUM), and bacon. It was decent for a 190 calorie wrap. And it was most definitely cheesey, but I  wish it had more of a kick! It just tasted like a pepper omelete, to me.

Nonetheless, we had a nice breakfast and headed back to the house for another round of Phase 10. Darn it, Barry! He just had to redeem himself! I lost 😦

But, hey, 2 out of 3 isn’t a bad record!

We finished just in time  for me to battle traffic and humidity on my way to work. To aide in my efforts, I went back to Dunkin for another iced coffee. I’ve always been intrigued by the concept of blueberry coffee, so blueberry it was. It tasted like blueberry, but I don’t think I’d get it again. (Wow,  I look hot and tired).

I made it to work just in time. Since I was pulled last night, Amy was pulled tonight and I stayed on the floor with my kiddos.

Dinner was a Lean Cuisine, bulked with some broccoli slaw: Roasted Chicken with Lemon Pepper Fettucini.

Nelly for a Day

Test day began with a bowl of oatmeal, as all test days do. Today was Very Berry by Better Oats (its a pretty sweet oatmeal, if you like sweet).

After some studying at home, I met the girls at Dunkin Donuts for some pre test cramming.

It seemed like a lot of the information in this exam was review from previous semesters. Those are always the ones to watch out for because you think yeah, I got this… and it almost gives you less drive to study.

After the exam, I drove 20 minutes in the opposite direction of my house to get fingerprinted for my nursing license! That has a nice ring to it: “nuring license.”

While on my way home, I swung by a few grocery stores down that way. I am firm believer that if you find a product you really like, its worth going to that store on occasion  For instance, the Giant on Rt. is the only grocery store around me that I can find VitaPizza or FiberOne bread and tortillas!

On my way home, my phone vibrated. I had been awaiting a call from dad to see how is doctors appointment went. When I stopped at a red light, I checked my phone to see I had a text message, a picture.

A few weeks ago, dad had a piece of tissue removed from his cheek to get a biopsy done. Today, the doc told him today, that it was pre-cancerous. The doc cut the lesion away. I’m really thankful that dad had this checked out early before it developed into something far worse. But this gives me the opportunity to get on my nursing pedestal and preach about the importance of protecting your skin.

Always use a sunblock. Trust me, you will still tan with a sunblock, if that is your concern. Also, pay attention to you skin. If one day you look at yourself and say, “was that always there?” you might want to check that out. Or if a mole looks a little different to you or if your skin has a pigment change, like a liver spot, you might want to check that out. I am not saying be paranoid about your skin, but be cautious and proactive.

Johnny Garlics

3:35am- dad calls, “Are you up?” “5 more minutes”

This sleep deprived lady woke up, threw he last minute items in her bag, made some coffee, and was out the door to catch a 6:30am flight. Whenever I catch a flight, dad and I always swing by Dunkin Donuts for their latest breakfast. This morning, we split the new Steak, Egg, and Cheese wake-up wrap. I was surprised how tasty it was.

After a big hug, I boarded the plane. A little over 5 hours later, we landed in Las Vegas. I was definitely bummed that I was in Vegas and didn’t even get to get off the plane. I was able to sleep for about an hour or so on the first flight, but as soon as we took off from Vegas, I was out! As for on board snacking, I had brought some bars to hold me over. Can you guess what flavor my taste buds were wanting?

I went with the South Beach bar. It tastes like a cookie! I wound up making friend with the gentleman next to me ans we worked on sudoku and crossword puzzles. I was surprised that the airline actually had 100 calorie packs… bring on the Lorna Doones!

Once my grogginess wore off and I entered the San Jose terminal, we grabbed the rental car and headed for a late lunch, which was really our dinner. I was stoked to head to Johnny Garlics. This restaurant was a must on my trip. Its Guy Fieri’s restaraunt.

We were greeted with a basket of the best focaccia I’ve ever eaten. It was much softer and airier than any focaccia I’ve ever tried and it was seasoned with tons of garlic and herbs. I saw Guy talk about some dishes on Diners, Drive- Ins, and Drives, and ever since I saw it, I knew I needed to try it. The dish that I chose is actually an appetizer, and I rounded it out with some grilled asparagus. Sashimi Won Tacos! Marinaded Sashimi Ahi Tuna, in a fried shell, topped with mango jicama salsa, and drizzled with a wasabi soy mayo. They were all served over a bed of shredded cabbage, carrots, and bell pepper. Wow! The tuna had almost a teriyaki flavor, and the sweet fruits of the salsa paired with the heat of the wasabi perfectly!

My chapter advisor and her husband, who joined me for lunch, got the Roasted Garlic soup. I love garlic soup, so I tried some of hers and it was fabulous and topped with grated cheese! My advisor got the Bourbon Buffalo Meatloaf, served with garlic mashed potatoes and grilled asparagus, and her husband opted for the lunch special of half a Sonoma salad and half a Cajun Chicken Fetttucine.

We finally checked into our hotel and I dove into my bed. But I needed to go register for the convention. Afterwards, I headed back to the room to unpack and call the parentals (theres a 3 hour time difference). We found out that there is nothing but restaurants in Downtown San Jose, so we had to drive to a SafeWay to grab some water. While I was there, I also grabbed some fruit to keep in my room along with two bottles of wine to bring home…

V Day

V- Day…. Sounds an awful lot like D-Day, doesn’t it?

I’m really not that cynical when it comes to February 14th. I’m just not too pleased with the result of my exam today. In fact, I came home thinking I did pretty well, checked my grade, and dug into to PB for emotional support.

So I met my girlfriends at Dunkin, as I do every test morning and enjoyed a small coffee and oatmeal. I ate Better Oats Fit Cinnamon Bun oatmeal. It really hit the spot! Before the exam, popped my Russell Stover’s sugar free Mint Pattie.

Apparently, the grades of the exam were all over the place! Luckily, I had my valentine dinner to look forward to.

Valentine’s Day is the one day a year, dad and I make sure we get to eat steak! We headed to Texas Road House! YUM!

Mocha Chip Balance bar- Chewy and sweet with a mild mocha flavor in the chocolate chips. Every time I enjoy some coffee-like anything, I think of Meaghan. That being said…

Dunkin Donuts Mocha Mint Ground Coffee

Primal’s Vegan Teriyaki Jerky, made from seitan- dad and I enjoy jerky as protein snack every now and then, and I got him to try this. Its a little softer than most jerky.

Walnana Cookie Muffins– it seemed only fair since she sent me the walnut butter used in making these little bites of heaven.

Unreal Candy– candy unjunked. I sent her the snickers, PB cup, and peanut M&M versions. Unreal does not use anything artificial. Even the coloring is derived from beets and tumeric and other vegetables and spices.

Coconut Peanut Butter by Earth Balance- I thought I grabbed her chunky, which is what I got hooked on, but, apparently, I grabbed creamy. Coconut can really make or break an item, but I gave it a shot. This nut butter uses coconut oil, rather than peanut oil. The coconut flavor is so mild, but adds just a pop of pizzazz.

Chia Seed cookie- its like a sugar cookie, but, gosh, it melts in your mouth!

Sunflower Thumbprint cookies- raw, and made with sunflower seed butter and preserves! Both cookies I got at the co-op and are locally made, but for the occasional special treat, totally worth the money!

White Chocolate Dipped Mixed Nut bar by Think Thin Crunch- crunchy and perfectly sweet! And while we are on the subject of white chocolate, the last item included was…
