I mentioned an incredibly addicting salsa that my friends had at their grad party a few weeks ago, and was determined to figure out how to make it! Alas, after some playing in the kitchen, I made it for my grad party! Oh my gosh! This stuff is crisp, refreshing, and I can’t wait to try it in my eggs!
Corn, Black Bean, and Avocado Salsa
2 slightly firm avocados, diced
1 can Green Giant Southwestern Style Corn
1 large purple onion, diced
1/2 cup dried black beans, or 1 1/2 cups cooked
2 beef steak, or hearty tomatoes, diced
1 1/2 Tbsp minced garlic
1 pouch Wholly Guacamole
1/2 bunch fresh cilantro, chopped
granulated garlic and black pepper, to taste
Soak and boil the dried beans, if necessary. Drain all cans. Combine all ingredients in a large bowl and refrigerate until ready to serve.
I served this my new favorite chip: Sea Salt Popcorners. These were the perfect pairing! MMMM so fresh and crisp! You’ll have a hard time stopping yourself with this salsa!
