The Greek Wars

I’m sure you’ve seen the commercials for Yoplait calling out Chobani yogurt. I know my yogurt preference, so I thought this was kind of a neat idea. I decided to host a Greek War at my house.

I kept the challenge completely blind. I wrapped each yogurt container with paper and labeled them A through E. I gave mom, dad, Frank, Barry, and myself a piece of paper listing A to E, ranking 1 through 5 stars, and comments for each yogurt… Oh yeah, I was legit!

The lowest total score a yogurt could receive was a 5 and the highest was 25. It was pretty interesting how honed in your taste buds gets when you’re comparing. I’ve eaten all of these individually, but my opinions surprised me during the tasting.

By the end of the tasting, I was able to rank the Cherry flavors of Yoplait, Chobani, Fage, Dannon, and Shop Rite brand. The real judgement came from mom. She really does not like yogurt of any kind, so her opinion of which tasted the best was one I took seriously. Surprisingly, she was really focused during the testing, more descript than any of the yogurt lovers of the house.

I, honestly, was NOT surprised that Dannon had won our tasting. Its my favorite. I do not care for Fage, never really have, but I never thought I’d rank Chobani lower than the “original” Greek yogurt.

Repeat Movies

It seemed as though the animals were conspiring against me, last night. If it wasn’t one, it was the other, getting me up to go to the bathroom. Oh, and apparently, I was well hydrated, as well, because when the animals let me sleep, my own bladder woke me up.

My plans for today were cancelled. It was supposed to be an early start with a trip to moms work. Apparently,  she talks about me quite a bit and wanted me to meet every one. Well, the people she wanted me to meet weren’t in, today, so away I slept.

I woke up in a daze. I couldn’t believe I slept so late. The weather changed yesterday and the temperature dropped last night. I guess I was just too cozy in my blanket to notice the sun peaking in through the window blinds.

Breakfast, at 1pm was an anticipated slice of toast spread with Be Well Nutella. This stuff is my new addiction. Along with this was a bowl of pineapple.

Mid-day, around 4pm, or so, I finished my Gnu Brownie bar, and vindicated my inner child with a chocolate milk made with Flax milk and sugar free chocolate syrup.

Despite all of my sleep, nothing could get me going today. I curled up on the couch with my glass of chocolate milk, studying for the boards, and discovering the classic “Forrest Gump” on TV. I adore this movie! Some movies I can watch repeatedly! I never get tired of them. Its funny, though, I only watch them when the are on TV…

What movies can you watch over and over again?

Armagedon and “Independence Day are two that are constantly on FX and are always watched in our living room. Yes, we have the DVD, but we only watch it on FX. I literally sit there, completely mesmerized, saying the lines before the movie does!

Stardust is frequently on the Shotime network. I think the magical aspects of the movie are what suck me in.

We all know I’m a dork and a complete sucker for the Harry Potter movies! Yes, I own the books and the movies, and watch the Harry Potter weekends on ABC Family channel. The only time I will not watch these movies is during the 25 Days of Christmas. Come on, ABC Family! What the heck does HP have to do with Christmas? There is literally 1 snowy scene in each movie! One! Give me Snow Meiser, of Nestor the Long Eared Donkey! (Ironically, a marathon was on when I got home from work).

Pretty much any Marvel Comic movie, expect for the Hulk, will pretty much do me in. Fantastic 4, Iron Man, X-Men! Bring it! I think it may stem from my Power Rangers fetish as a kid. I used to pretend to be Kimberly, the Taradactle, the Pink Power Ranger! I used to stand on the couch and body slam my dad, I mean, Ivan Ooze! Yeah, I was kind of a bad ass…

Disney shows the old movies that I grew up watching; the ones that were Disney Original movies when they aired and I watched them. Ironically, one of them was on last night, during work: Zenon: Girl of the 21st Century! I’ve always been fascinated by space and the future, if you couldn’t already tell by my Star Trek and Twilight Zone obsession. Just thinking about Zenon makes me sing, “Zoom, zoom, zoom, make my heart go oum, boom. My super nova girl!

All in all, I was pretty lazy for the afternoon, but was able to squeeze in a nap before mom got home from work. I sat her down and expressed my feelings regarding her actions. She understood how the trigger foods effect me, emotionally, and said she would make a conscious effort to not bring them home. She also acknowledged how the trigger foods she brings home are not healthy and that she needs to make an effort to make better food choices.

After a shower and an effective conversation with mom, I headed off to work, with a coffee in my hand, for an odd shift: 11pm to 11am. The unit needed coverage from 7am to 11am and I offered to help. To power me through the night, I brought a Peachy Pistachio Chobani Flip. Frankly, I was curious. I’ve never been impressed with peach yogurt, and have never even thought out peach and chocolate together. This flip cup was peach Greek yogurt with dark chocolate chips and pistachios. Mild is the only way I can describe it. The bitterness of the dark chocolate paired well with the tart and sweet yogurt.  There was just the right amount of chocolate to satisfy my raving but not make me want to go into chocolate overload. The pistachios were like the surprise at the bottom of a cereal box: you forgot it was there, but what a nice treat it was!

My only qualm is the amount of sugar in it, but sugar content is an issue with any flavored yogurt, really.

The girls and I also split a bag of 94% fat free kettle corn. (We are popcorn people on my unit).

My assignment was more than I usually have so I kept incredibly busy. This worked out for me because it allowed me to listen to my body cues and not snack! I was so busy, that in the 12 hours at work, I never even was able to pick up my NCLEX book!

Around 7am, I sat down to give myself a bit more fuel to power me through the end of my shift. I love this individual packages by Oscar Meyer. They are the perfect size for someone like me, plus, they freeze and defrost great, so I can buy them when they are on sale and eat when I ‘m ready for it. With this 6 slice packet, I made turkey roll-ups, filled with dill pickle halves, celery, and bell pepper slices. I love the crunch from the veggies, the sweetness from the peppers, and saltiness from the lunch meat. A packet of graham crackers also joined the party.

I was surprised by how awake I was for the last four hours of my shift. I think what really helped get me through the night, was not my 2 cups of coffee, but a combination of two beverages. I’ve noticed the carbonation in the soda helps make me feel full, so when I picked my girlfriend up a Diet Cherry Coke on the way to work, I thought I’d second that notion. Also, my green tea concentrate from Herbalife always perks me up, fills me up, and boost my metabolism, as an added bonus!

I felt so on top of my game, this shift. So much better than last shift! The 12 hours flew by! Now its 11am, and I have dilemma… To sleep or not to sleep? That is the question…

Chocolate Rain

Today began early with working day shift. I woke to a gloomy Friday morning, much like most of the east coast. Once I arrived at work and received my assignment, I made a mug of coffee (thank you, Mr. Keurig) and grabbed my breakfast.

WP_002566It has taken this paranoid mind of mine a while to come around to trying this mornings breakfast. I have heard rave reviews about this yogurt from everyone I’ve spoken to about it, but thought 230 calories was a bit much for yogurt. Nonetheless, I finally tried out Chobani flip Almond Coco Loco. This was actual coconut yogurt with actual shredded coconut in it! So sweet! The add-ins were shaved dark chocolate and almond slices. It was quite the rich breakfast, but very filling.

As I entered the break room, I was greeted by sourdough pretzels, red velvet iced sugar cookies, Hershey kisses and Italian chocolates. One of the girls on night shift was raving about this Italian chocolate called Baci so I made a point to grab one. Wow! Smooth velvety chocolate, draped over chopped hazelnuts!

I must admit that my eating was not ideal today. I offered to work overtime to help out the unit, so my dinner wound up being sourdough pretzels and dark chocolate Hershey kisses. Dessert, was a red velvet cookie. I don’t even like red velvet, but there is something about these cooked that get me every time. Yes, I know, I am the pillar of health.WP_002567

Cautiously battling the rain home, I passed a family of geese. It reminded me of how even during these miserable days, there is always something beautiful. Always something magical. Always something to make you smile. The weather was miserable, but the baby geese followed their mom and it reminded me how excited I was to spend the evening with my mom and how thankful I am that her and I battled our addictions and illnesses together and how much stronger a relationship we have now.

On the way home, my body craved more chocolate… veggies. Luckily, there was no guessing what I wanted. A small order if steamed veggies with garlic sauce, no rice, and a small hot and sour soup. Finally, some actual nutrients!

100 and Counting! Sweet and Sour Pork Stir-fry

I am so excited! This is Be Well Bundo’s 100th post!

This blog has helped me so much with managing my crazy, hectic life, growing as a person, reflecting on my life, holding me accountable for my actions, and most importantly, helping to enjoy life again. I am truly thankful to the readers for helping be through my eating disorder.

As hard as I tried, I could not get warm today. Everyone of my patients said to me, “Your hands are so cold! Were you living in an ice box?” Temperatures have really dropped in Wilmington. Where are you sunshine and warmth? I miss you! I took my break early today, just to warm up with some coffee. I also enjoyed a Chobani Pear greek yogurt, that my friend Barbara got me hooked on. To even us out, I brought her Yoplait 100 greek Tropical yogurt. She loved it!

As of today, I have two more clinical days left. I must say that I never thought of loving a nursing home, but I have really fallen in love with my patients. With the clock running down, I starting to feel the pressure of getting all of these assignments completes, lectures watched, and exams aced! Staying focused on school is the key, not on food and exercise.

To celebrate, the 100th post, lets enjoy:

Sweet and Sour Pork Stir-fry

(adapted from Food Network)

1 lbs pork tenderloin, fat removed, cut into 1/2 inch pieces

2 1/2 Tbsp balsamic vinegar

pinch of salt

1 Tbsp corn starch

3 Tbsp ketchup

3 Tbsp Splenda, granulated

1 Tbsp low sodium soy sauce

1/3 cup water

3 cloves garlic, minced

1/2 tsp salt

2 large carrots (or about 6 oz), sliced

1 bag frozen stir fry vegetable blend

1 1/2 to 2 cups frozen broccoli florets

Toss the pork with 1/2 Tbsp vinegar and a pinch of salt in a bowl. Mix the remaining 2 Tbsp vinegar, soy sauce, cornstarch, ketchup, Splenda, and water and remaining salt in another bowl.

Spray a large skillet with some non stick cooking spray, over medium high heat. Add the pork and slowly stir until pork is mostly opaque. Remove the pork using a slotted spoon. Wipe out the skillet and re spray with non stick spray.

Add the garlic, carrots, broccoli, and stir fry blend over medium heat, and cover. Add a bit of water if garlic is starting to stick to the pan. Once the vegetables start defrosting, add the pork, and pour the sauce over the mixture. Stir and cover. Frequently shake the covered skillet to move the ingredients around. Occasionally stir the mix, until sauce thickens. (Its important not to over cook the pork.)

(Confession: I forgot the cornstarch! Which is probably why the sauce didn’t thicken, but it was still delicious!)

Frank wanted rice with dinner, so I made him and dad brown rice, while I got the opportunity to try out my new shirataki rice by Miracle Noodle that came in from netrition.com a few weeks back.

First of all, I was surprised how much I liked this rice! I was pretty darn skeptical. It looks like a weird caviar, doesn’t it? In fact, I’m going to order more!

Hefty Hefty Hefty

WP_001648I don’t think my body likes to eat at 6 am, because every time I do, I feel ridiculously uncomfortable… I know… I’m a mess. But at least, I really enjoy these Special K Brown Sugar Cinnamon Pastry Crisps. Even as a kid, I’ve always liked PopTarts. What I like about this product is that I get the feeling like I’m eating a PopTart without the guilt and calories!

I’ve really been on a yogurt kick, lately… but I don’t hate it!

Today, I was inspired by Black Forest Cake and topped my Chobani Black Cherry yogurt with some Fiber One 80 Chocolate cereal and sunflower seeds. It was really tasty, crunchy, sweet, and nutty!

WP_001651 As I entered the hospital cafeteria, a basket of little red spheres caught my eye. I bought one of these and was going to save it for later snack. As I finished up my yogurt, this ball of health whispered, “you know you want to… just do it.” “Ok,” I said. CRUNCH! MMMMM What a delicious apple!

Today was a great day at clinical! My patient paid me a great compliment by recommending that I become a doctor. “I’ve lived 81 years. Take it from me. I know personalities and what you’ve got is natural. Its a gift from God. Wonderful natural personality! You’ve made me smile… first time since I’ve been here. You’re making me better. You’ve really got a gift from God.”

Oh wow! I was blown away!

Tonight, Frank cooked dinner: Chicken Alfredo with onions, mushrooms, and broccoli ( You know I LOVE some broccoli!) Frank and I have very similar tastes, when it comes to food… but he wouldn’t let me make a healthy alfredo. Boo…. Still yummy though. I ate mine over Tofu Shirataki Macaroni style noodles! I love this product!

I’m still rocking a bit of a stomach bug, but getting better every day! To end tonight, after hours of research for school, heres something I found a bit humorous… While in the bathroom I saw this sign on the door at the hospital.

Every time I see this: Scrub, Scrub Scrub… Flush, Flush, Flush…

New Favorite Yogurt

This morning began with a filling shake:WP_001596

1 Tbsp raw crunchy Almond butter

2 scoop Chocolate Metabolife

1/4 tsp almond extract

1/2 tsp coconute extract

1 Tbsp shredded coconut

a handful of spinach

1/8 tsp xanthum

ice

I intended this to be a sort of Almond Joy shake, but it did not taste much like an almond joy…

I scurried off to a study group for a bit then hit the gym. I had no motivation, plus I had been nursing a stomach ache since last night. Wanting some cardio, and yet still not wanting to be at the gym at all, I alternated running and crunches:

1-5 minutes       8.0 incline          4.0 speed

5-10minutes      1.0 incline          6.5 speed

crunches and lower back extentions

then repeat three times

I wasn’t enthused by my workout, but its better than nothing.

Arriving at work for night shift, I was greeted by a pizza… oh boy… a small slice was my fix. My main meal was a plum, Muir Glen Savory Lentil Soup, and Kashi Honey Almond Flax Bar later.

The highlight of food today, was, by far, my new favorite yogurt! Yesterday, my friends Barbara was eating Chobani Pear greek yogurt. I had never seen it before. Afterfinding out where to get it, I swung by ShopRite on my way home, and viola, Pear Chobani and chia seeds! Oh goodness! It was spectacular! I loved the actual peices of pear in this yogurt and the texture the combination of fruit and chia gave this protein boost snack!

Surprise Yogurt

I love going to sleep early! I was in such a funk last night, that I barely watched any lecture. I think I was asleep by 830 pm. That did not help with getting out of bed this morning, though. I id have time to enjoy a small bowl of Kashi Go Lean cereal topped with blueberries and flax milk.

I said yesterday how excited I was to start this clinical rotation. Boy, was I in for a rude awakening today. Thank God I was paired up today with my friend, Barbara, because I would have lost my mind! My patient was so complicated and required a lot of work. Its difficult because as a student, I do the job of both the tech and the nurse in the clinical setting. I am also limited on what I can do by myself, as a student. I felt very confident walking onto the unit this morning, but I felt like my instructor did not have a nice thing to say to me. Ugh!

Lunch break was much anticipated! I bought Chobani Flip Raspberry Choco Fix. I didn’t really read the label but, I figured it would raspberry yogurt with chocolate chips. Nope!  I opened it looking puzzled at the appearance of the yogurt, then read the label. It was chocolate chip yogurt! Who ever heard of such a thing?! MMMMM! I flipped over the raspberry puree and sprinkled some chia seeds. I can’t wait to get this one again! (I also split a slice of pepperoni pizza with another team mate to make my stressed out self feel better.)

I needed to finish up some stuff on campus, so I met with Barbara on campus and we did our thing. As I came home, I had one thing on my mind: Dinner. I was not supper hungry, but I definitely knew what I wanted. I took out some tuna fish and mixed in some southwest black bean and corn salsa, garlic powder, and chili powder, and ate it tapas- style with Roasted Sweet Onion Brown Rice and Sweet Potato Triscuits, from their new Brown Rice line. I have also had the Roasted Red Pepper Brown Rice and Red Bean ones which taste like a fiesta in my mouth! On the side I peeled and roasted some carrots and sprinkled them with some cinnamon. Its like sweet potato fries minus the starchy carbs! Yum!

I’m in another funky mood tonight. I think being able to hit the gym tomorrow will turn things around.

I heard the doorbell rang, and I could not go back to sleep. So I woke up and made a shake to wake me up, fill me up, and help replenish my muscles from the morning workout. Since today is National Peanut Butter Lover Day, I threw together the classic:

Tonight, something amazing happened. I’ve never been more flattered! A mom grabbed me and told me to visit her daughter. Apparently, her Aunt brought her a stuffed puppy dog and she sleeps with it every night. Her mom asked her why she named the puppy, “Sammy.” She said, “after my nurse friend Sammy!” I was floored! So sweet! Is this what it feels like to be a nurse? To establish that relationship with a patient? I love it!

Dinner was Chicken and Carrot ravioli topped with green beans and basil pesto. Yum!

I ate dinner early so I got hungry around 9:30pm and grabbed a snack pack of Lorna Doones. This was my first interaction with these cookies and i must say, they were satisfying and delicious.

A girl from work kept talking about calzones and chicken wings on our way out the door and I started to crave a calzone! My step dad ordered pizza last night so when I got home I snacked on a piece of left over.

My eating is not perfect but it is getting better every day and I’ve been more in tune with being able to recognize fullness. Thank God!

 

Black and Gold

I was hoping to get some sleep after work, but instead, I made a trip to Wholefoods, made some Garlic and Cauliflower soup, and took a quick 45 minute nap. This nap is what powered me for the remainder of the day.

Every year, my girlfriend’s sorority host a Black & Gold Party. Each girl brings two dates. Its a way for the new inductees to meet other people. I’m a date every year.

This year was different, though. It was like I was back! I drank a little, I celebrated my friends birthday with some cake and nachos (without a panic attack), I socialized and laughed and danced, and reunited with some old friends. (And I had my first Bobbie hoagie since recovering!)

My crew of friends make the same cake for everyone’s birthday. Why? Because its that good! Its called the “Better than Sex” cake. I’m trying to figure out a way to make it a little healthier, but heres the jist:

Bake a Devil’s Food cake according to package instructions. While still hot, remove from oven and poke holes in the top with a fork or chop stick. Pour a can of sweetened condensed milk over top. Drizzle with caramel topping and cover with cool whip. Lastly, top the cake with chopped Heath Bars.

WP_001371I crashed at my girlfriend’s apartment and woke up early to head to campus, making a pit stop at 7-Eleven for some much needed coffee. I could feel some anxiety starting to set in as I thought about all the calories I had consumed last night. Immediately, as I arrived on campus, I headed toward the gym and had one of the best, and sweatiest workouts I’ve had in ages! I completes Julie’s Make Your Face Sweat Treadmill Workout . She was not kidding when she said “sweat.” I know I have a good workout when my shirt is wet from sweat! Minutes 32 to 40 really intimidated me but I pushed forward. I needed to adjust this just slightly. Every so often during those ten minutes or so, I dropped back down to 4.0 speed to catch my breath a bit (for about 30 seconds), but enough to still keep my heart rate up. Even with the modifications, I managed to run 3.88 miles an burn around 500 calories! SWEET!

After this, I asked the girl at the gym to make me a circuit, explaining that I just wanted to burn today! With a few modifications to her set-up, this is what was completed.

I finished with ten minutes on the elliptical. After a shower, I grabbed my laptop from the car, enjoyed a protein and fiber fix in the form of Chobani Flip Vanilla Golden Crunch topped with ground flax and hit the library to watch a lecture before class.

Low-Carb Pizza

I loved sleeping in this morning!

I didn’t want to eat anything too heavy this morning, so I pulled out another new yogurt to try: Chobani Key Lime Crumble Greek yogurt. When I bought it, I thought “mmmm grahams and yogurt.” When I peeled back the foil, I noticed white chocolate chips in with the graham!

I sprinkled a little ground flax on top to play off the graham! Perfecto! Sweet, tart, crunchy!

My girlfriend Megan (not Meaghen from NY, Megan from clinical) told me about this recipe awhile back and I knew it was a must-make meal! Megan is someone I guess you could say admire. Shes a runner and lives a very healthy lifestyle. She also is one of the people that helped smack me back into reality with me eating disorder. Because of her, I found running as an amazing outlet for my crazy days! Thanks, Megan, not just for the recipe, but for helping me find myself again, the healthy way.

1 md head of cauliflower, riced

1/2 cup fat free shredded mozzarella

1/4 cup liquid egg whites

2 cloves garlic, minced

spices, to taste

I used Italian seasonings like basil, oregano, black pepper, garlic, and parsley. Give this a good mix and spread onto a pizza stone or baking sheet and bake at 400 F for about 20 min.

Remove from the oven, and top with whatever you please. Since its a Friday during Lent, I’m utilizing yesterday’s crock pot recipe and topping the crust with roasted vegetables, pesto,  2 sticks, grated, of Weight Watcher’s smoked mozzarella, and another 1/4 cup of shredded fat free mozzarella!

The original recipe calls for 1 cup of cheese, but I used 1/2 and chopped it into smaller pieces to ensure it was equally spread throughout.

Everyone really liked the unique and crisp flavor of the crust! This meal was a big hit! We already started discussing other ways to play with the recipe!

I was the queen of procrastination, today! Rather than watching lectures, I loaded the dish washer, cooked and baked, unloaded the dishwasher, re-loaded it with the dishes I had just made, got on the phone with dad to harass him about when her was coming over for dinner, cleaned off the kitchen table, and right as I was going to go back to the lectures, dad came over… good timing!

I baked one of my favorite breakfast/desserts! I had it for the first time in NY with Meaghen, and wanted to play around with it to make it myself! Success! I’ll share the recipe to my Cranberry Walnut Apple Pear Crumb Cake with you tomorrow! (I say dessert because its great warm, with a scoop of vanilla froyo!)
