There are two things I take very seriously when I enter an Asian restaurant: the Hot & Sour Soup and the Seaweed Salad. I have had soup with absolutely NO flavor. I’ve had salad that tastes like room temperature salted seaweed. Unacceptable!

I am pleased to bring you Sammy Seaweed Salad!

Sammy Seaweed Salad

serves 4

  • 1 1/4 oz dried seaweedWP_003888
  • 3 Tbsp rice vinegar (not seasoned)
  • 2 Tbsp reduced sodium soy sauce
  • 1 Tbsp sesame oil
  • 1 tsp ginger grated, or paste
  • 1/2 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • 2 packets Splenda
  • 1 cucumber
  • 1 oz carrots, or 2-3 large baby carrots
  • 1 scallion, chopped
  • 1/2 to 1 teaspoon sesame seeds, more for garnish

Soak seaweed in warm water while preparing the rest of the ingredients. In a medium bowl whisk together vinegar through Splenda. Drain the seaweed, and add fresh warm water. Prepare the vegetables. Chop 1 large scallion stalk. Using a vegetable peeler, create strips of cucumber and carrots to produce about 1/2 cup of loosely packed short cucumbers strips and 1/2 cup loosely packed carrot strips. Drain the seaweed once more and rinse. Take scissors and snip through the green bunch to produce some smaller pieces. Squeeze the excess liquid out of the seaweed (it gets slimy) and transfer to the sauce bowl. Toss the contents together. Add the vegetables and sesame seeds, toss and refrigerate. Once chilled, serve, and garnish with additional sesame seeds, cucumber, and carrots strips.

For those of you who are skeptical about eating seaweed, here are some interesting benefits of the salt water plant:

Seaweed contains vitamins A and C, and is also a source of calcium, which is one of the reasons some red seaweed supplements are included as part of some treatment plans for osteoarthritis

I also learned that you don’t have to be Japanese to make a kickin’ seaweed salad!

Its mild and sweet, refreshing, and crisp, and I could have eaten the whole damn bowl! I actually ate about half of it!

Surprise Yogurt

I love going to sleep early! I was in such a funk last night, that I barely watched any lecture. I think I was asleep by 830 pm. That did not help with getting out of bed this morning, though. I id have time to enjoy a small bowl of Kashi Go Lean cereal topped with blueberries and flax milk.

I said yesterday how excited I was to start this clinical rotation. Boy, was I in for a rude awakening today. Thank God I was paired up today with my friend, Barbara, because I would have lost my mind! My patient was so complicated and required a lot of work. Its difficult because as a student, I do the job of both the tech and the nurse in the clinical setting. I am also limited on what I can do by myself, as a student. I felt very confident walking onto the unit this morning, but I felt like my instructor did not have a nice thing to say to me. Ugh!

Lunch break was much anticipated! I bought Chobani Flip Raspberry Choco Fix. I didn’t really read the label but, I figured it would raspberry yogurt with chocolate chips. Nope!  I opened it looking puzzled at the appearance of the yogurt, then read the label. It was chocolate chip yogurt! Who ever heard of such a thing?! MMMMM! I flipped over the raspberry puree and sprinkled some chia seeds. I can’t wait to get this one again! (I also split a slice of pepperoni pizza with another team mate to make my stressed out self feel better.)


I needed to finish up some stuff on campus, so I met with Barbara on campus and we did our thing. As I came home, I had one thing on my mind: Dinner. I was not supper hungry, but I definitely knew what I wanted. I took out some tuna fish and mixed in some southwest black bean and corn salsa, garlic powder, and chili powder, and ate it tapas- style with Roasted Sweet Onion Brown Rice and Sweet Potato Triscuits, from their new Brown Rice line. I have also had the Roasted Red Pepper Brown Rice and Red Bean ones which taste like a fiesta in my mouth! On the side I peeled and roasted some carrots and sprinkled them with some cinnamon. Its like sweet potato fries minus the starchy carbs! Yum!


Dessert with assorted fruit and my favorite cottage cheese, accompanied with a study snack of Chocolate Fiber One 80. I do not typically like chocolate  cereals, but this one is a keeps. WP_001592

I’m in another funky mood tonight. I think being able to hit the gym tomorrow will turn things around.

Before I say good night, I want to share with you something I ate tonight. I’m not quite sure how I figured this one, but it your looking for a sweet treat, dip a low fat Cinnamon graham cracker in some fluf and then into ch-ch-ch-chia seeds! I loved the sweet crunch and the seedy chia!WP_001593

Forgot My Carrots

I wanted a filling but not too heavy dinner for work tonight so I opted for my garlic cauli soup and saltines. I really enjoy eating this soup with some baby carrots. As I walked out if the house, on my way to work, I could feel like I was forgetting something, but just couldn’t put my finger on it. Literally, as I turned into the parking garage, it hit me! Carrots!

At least my breakfast had some carrots! Breakfast was a smoothie bowl that had intrigued me:

1/3 carrots, microwaved for 30 secWP_001389
1/2 frozen banana
1/2 cup frozen pineapple
2 scoops vanilla Herbalife
1/4 tsp xanthum

It was actually really tasty! I added some ground flax to play off the earth-tones of the carrots. This was paired with not one, but two, cups of coffee!

After my drowzy play with the MagicBullet, I watched a bit of a lecture then headed back to work.

I was surprised,again, when I got to work. That patient I told you about yesterday, who named her stuffed puppy dog after me, made me a thank you cars and got me lotion and Lindor truffles! How sweet is that!?


Mom asked for my email address to keep me updated on her and so she could come visit me when I work. This is an amazing feeling!


On my way home, the late night munch kicked in. A trip to 7-Eleven resulted in a product I have never seen but that I needed to buy: Chex Mix Snickerdoodle Muddie Buddies! Yes, you read that correctly and might I say, absolutely phemon!!!!

Roasted Vegetables: Crock Pot Recipe #7


I went to class this morning and while waiting, enjoyed a Muller Mousse Parfait. A girl I’m in clinical with loves these, so I gave it a try.

WP_001225I tried the peach passion fruit, figuring if I was going to try something, I might as well try the most exotic sounding. I topped it with both ground flax and chia, and it was delicious and filling! I only have one complaint: way too much sugar! Seriously, it had a whole days worth of sugar in it!

After this cardiac cram session, I hit the gym. I had a full workout planned but as I was doing it, I realized I was not going to be able to complete it, if I needed to get some sleep for night shift. I only worked out for an hour or so. I was so bummed when that I had to leave. Have you ever been so into your routine, you just didn’t want to stop. Seriously, even the shuffle on my iPod just kept giving me great songs to power up to!

I hit the sheets when I got home, unfortunately  only getting about 2 hours of sleep for my 12 hour shift. I made something that was LONG overdue: a shake. Iv’e been checking up on this blog I found and she made a shake that sounded delicious, so I gave it a go. The following was whipped up:

1 Tbsp sugar free cheesecake pudding mix

and lots of ice!

Pretty darn tasty… Actually, dad asked me to make him one for Thursday morning!


Over the course of the long night, I did some pretty wise snacking choices, suck as graham crackers, sugar free pudding, and 94% fat free popcorn. I have to same, though, my favorite meal of the night, was the Raisin and Spice Oatmeal. I stirred in a little PB, and mmmmmm good!WP_001231

After I got home, I started preparing the crock pot. Tonight’s recipe is in preparation for tomorrow’s dinner (I can’t wait!)

Once all the ingredients were in the crock, I sat down to finish some homework and enjoyed a nice bowl of Banana Nut and Peanut Butter Cheerios, a cup of Pumpkin Spice coffee with some sugar free french vanilla powdered creamer and a few dark chocolate covered espresso beans to keep me going for the day!

Katie loves crock pots too and I remembered a while back she posted about roasting vegetables in a crock pot. Being the sucker for veggies that I am, I starting thinking up ways to use these veggies. Over rice? with sausage? In a pita? The possibilities are endless! Needless to say, I hit up the discount produce shelf…

Roasted Crock Pot Veggies

2 bell pepper (I like using colors)WP_001233

3 cloves garlic, slivered

half an onion, sliced in rings

a few baby portabellos

1 large carrot stick, sliced into very thin coins

handful of sun-dried tomatoes, sliced thin

1 small eggplant, sliced to 1/4 in thick

spices, to taste

Prepare all the vegetables, adding or subtracting vegetable that you enjoy, and toss them in the crock pot. Season, cover, and cook.

The original recipe calls for oil, but instead, I just gave the top of the veggies a quick spray with some non-stick pray and few shot a liquid aminos. I couldn’t find my Italian seasoning in the cupboard, so I used some granulated garlic, black pepper, parsley, oregano, and basil, and gave it all a nice toss.

During class, I was starting to sense some hunger creeping up on me. I looked around the room, and wouldn’t you know like four people were chopping on protein bars! AHHHH! I knew this would be tough!

When I got home from class, the house smelled like a warm garden… fresh veggies in the air! I hustled into the kitchen to give them a stir and a try. I was so happy with how they turned out! The carrots were just the right consistency  the onions became translucent  the peppers and mushrooms cooked down, the tomatoes got soft and sweet, the eggplant absorbing all the flavors…

I had some leftover turkey sausage to I put a little in a tortilla with some veggies and I was in heaven! This most definitely will be a meal another night.WP_001237

As for tonight’s dinner, I was jonesing for a Wendy’s Jr. Hamburger, and mom was really eyeing up the chili. My creation was a chili dipped burger! YUM! I snacked on some mixed fruit for dessert!

Over all, the last 24 hours was pretty decent with food… only a few minor binges.

After meeting up with Mike to finish our assignment, I tried to squeeze in a workout before being detained in nursing labs for 3 hours. I was able to squeeze in the following workout, based off of Julie’s Beat Boredom Interval Workout:
