La-La-Leftovers

So its almost been a week since Thanksgiving, and all of the leftovers are gone. My sweet potato casserole, made with butternut squash, is a huge hit so I make two trays every year. This year, I didn’t go to my grandmothers house like usual, but I made two trays nonetheless. I started thinking What should I do with this leftover casserole???

Then it hit me! Pancakes!  Mom brought me home some fresh cranberries and I figured those would be the perfect addition.

makes 1 serving

  • 1/3 cup sweet potato/butternut squash casserole (I’m sure pumpkin would work, too)
  • 1/3 cup Bisquick
  • 2 Tbsp liquid egg substitute
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1 packet Splenda
  • 1/2 tsp cinnamon or pumpkin pie spice
  • cranberries or pecans (optional)

Combine all ingredients well. Dollop onto a heated skillet sprayed with non stick cooking spray and cook until batter begins to bubble. Flip and cook through. Serve with some sugar free maple syrup.

I made these for dinner last night and then again this morning for breakfast and I’ve never seen someone clean a plate as quickly as my friend Brett did! Record timing!

I really enjoyed the rich flavor of the batter, and how the tart cranberries were matched by the sweet syrup.

I always love re-purposing foods and creating something new! Its been so long since I’ve posted, but boy does it feel good to write to you guys again!

Beef Stew: Crock Pot Recipe #6

I got everything ready for tonight’s crock pot dinner, then left mi casa. Breakfast was on-the-go this morning as I was on my way to the hospital to gather information on some patients for clinical this week. I stopped by 7-Eleven a grabbed a small coffee, with a shot of sugar free hazelnut syrup, and a protein bar. It was definitely filling, with just the right amount of toffee and chocolate.

This week, my instructor chose me to be Clinical Manager. This is kind of my opportunity to take the management roll of Charge Nurse. I assigned two patients to each of my two classmates.

In the hallway, there was an older couple holding hands. I overheard one of the nurses asking how long these two patients had been married… 76 years! WOW! And still so in love! This gives me so much hope that marriages can last! It was a beautiful sight.

After I got home, I completed Day 2 of my Couch to 5K challenge. 3.3 miles feels great! It is so needed for this girls mental health!

My mom’s beef stew is pretty Plain Jane, but always a stick to ribs mouthful of yummy!

After making it with her for the past 20 years, I wanted to see if I could add a Sammy flare.

Typically, mom uses a whole bag of potatoes. I wanted to cut down on the white starchy carbs, so I substitute a few baby red potatoes and some cuber butternut squash. I don’t see why sweet potato wouldn’t work, as well. I like my stews full of veggies so theres a lot of carrots.

There are very few ingredients to my mom’s recipe, but it makes for a winner.

(serves 5)

1 lb london broil, fat trimmed, cubed

4 large carrot sticks, cut into discs

4-5 baby red potatoes, washed, roughly peeled, cut into fours

1/2 to 1 cup butternut squash, cubed (found in produce department)

2 cloves garlic, minced

black pepper, to taste

1 (28oz) jar fat free beef gravy

1/4 cup powdered brown gravy mix

2 1/2 cup water

Spray a skillet with nonstick cooking spray and toss in cubed meat for a quick sear. Remove meat and set aside. In the same skillet, empty gravy in skillet and whisk in the dry gravy mix. Fill the jar with the water, swirl and empty into skillet. Simmer until power is dissolved. Pour into crock pot.

Spray skillet again and add the potato wedges and squash cubes. Brown the outsides, especially the squash since this will dissolve easily in the stew.

Add all the ingredients into the crock pot, give it a light stir, cover, and cook on low.

I spent my Sunday night watching lectures. During one of my study breaks, I completed Julie’s Super Sweaty Ab Workout. This must have done me in because for the rest of the night I had the munchies. Nothing seemed to do the trick. Even drinking water wasn’t helping. I took out some celery sticks, as a debated packing them for lunch tomorrow, and it hit me. Celery and PB, the perfect crunchy snack! Why didn’t think of it before?! Its elementary! No, really… it used to eat this all the time in elementary school…

I feel so silly that I did all that snacking only to remember the best snack of all!

I have an incredibly busy day tomorrow, so hopefully I burn off some off some of this snack attack.

Heavenly Honey Nut

I started the day off with some yoga, then booked it to school. Clinical was crazy busy! I worked up quite an appetite. By 1100 I was starving and the Special K bar was not cutting it, so I ran down to the vending machines and grabbed a Nature Valley Sweet and Salty Almond bar! I love this thing! Its sweet and salty and theres an almond butter coating!

I can’t believe the appetite I’ve had today. I ran to the cupboard when I got home and tapped into my new cereal: Honey Nut Cheerios Medley Crunch!

Oh my gosh! I went to chow town! I loved the variety of textures: cheerios, flakes and granola clusters and a hint of honey!

Dad came over for dinner tonight and I made one of his favorite treats: McRib. I do not like the real McRibs at all, but dad loves them! So I switched it up on him.

WP_001066I figured you can’t have Mickey D’s without fries… I had some cubed butternut squash in the fridge so I sprayed a pan with some cooking spray, and tossed the cubes in basil, dried minced garlic and a touch of salt and baked them in the toaster oven on 400 until the desired crispness.

After dinner, pops and I headed out to pick a few things up from the store.

I’m disappointed in myself today. I started out really good today, pacing my foods and choosing wisely. As soon as I got home, this ravenous appetite over came me. I binged twice today; once when I got home from class, and once when I got home from shopping. I’m becoming more aware on my binges but I’m still aggravated and immensely frustrated!

I have my first exam on Thursday so I need to desperately  study! I’m hoping to crash early tonight and hit the books hard tomorrow.
