Mean and Green

I spent the remainder of last night awake! I didn’t fall asleep until 130am or so. Oh well! At least I came up with delicious ideas for this week’s meals. It began this morning with a change of pace from my usual shake. It was also a good morning, as I was able to sense hunger, again!

I’ve been craving quinoa for weeks now, but with the madness going on in my head, I couldn’t get myself to eat it. Alas, I microwaved Amy’s Light & Lean Quinoa & Black Beans bowl. Meanwhile, I whipped up some egg whites, for myself, and a sunny-side up, for Frank! Frank and I really enjoyed this. We are both huge fans of black beans! Plus, we got a boost of protein and fiber bright and early to start our week! Yum!

WP_003806I’ve planned today to see green! Not as in envy, but as in E-A-G-L-E-S, Eagles!!!! Eagles/ Redskins game baby! Dad and I are all about the green, but mom won a bet at work like 20 years ago on a Skins game, and has been a fan ever since. Silly woman!

To get on my game face, I whipped out my Eagles jersey to rock for a day of errands.

After unpacking the groceries, I make another batch of Bundo Broccoli Salad, since the first batch went so quickly neither Frank nor Barry got a taste.

Afterwards, I was feeling tired but couldn’t sense if it was due to a lack of eating. After all, it was 2pm and I ate my filling breakfast around 10am. I decided to whip up a super green shake! Its one of my favorites!

Pistachio Ice Cream Shake:

  • WP_0038121 Tbsp sugar free fat free Pistachio pudding mix
  • 1 to 2 scoops vanilla protein powder
  • lots of spinach!
  • 1/8 to 1/4 tsp almond extract
  • water
  •  ice
  • shelled, unsalted pistachios (optional)
  • xanthum and/or guar gum (optional)

After my last few shake bowls, I’ve rediscovered my love for ground flax and chia seeds, so to play off the nuttiness of the pistachios I added both to today’s bowl!

This held me over for hours! I attempted a nap before Zumba, and, sadly, it just didn’t happen. When I got up after an hour, my mom took one look at me and said, “You look tired. I don’t think you should go to Zumba.” I felt guilty not going, since I didn’t go last week, but I truly was tired. I then spent the next few hours working on a new recipe for you!

If at first you don’t succeed, try and try, again. Although, I wasn’t hungry, mom was and we kicked off our first Monday Night Football of the the 2013-2014 season!

I prepared a plate of crudites, featuring scallions, sugar snap peas, green beans, celery, and baby carrots. I served it with Honey Mustard, blue cheese dressing, and PB. We split one of my favorite personalized pizzas, VitaPizza Cheese and Tomato. Mom and  I also split a strawberry daquari, topped with a dollop of fat free Cool Whip.

I was not hungry, tonight, but had tons of nervous energy and filled up on veggies. No harm in that…

After the Eagles started kicking some serious butt, mom went into a sore mood and said, “That’s it. I’m going to bed.” I, now, find myself, here, with you, reminiscing and working on yet another new recipe for you.

Backstreets Back

Guess what I did last night… I went to the Backstreet Boys Concert!!! Oh, and guess who opened for them… Jesse McCartney! Yeah…. my childhood on crack! I was screaming like a little girl!

I parked my car at my girlfriend’s work in Philly and a bunch of us car pooled over to the Susquehanna Bank Center, where we ate and rank out faces off in the parking lot, pre concert. I may have been seriously stressed and mildly intoxicated to the point of chowing down on mass quantities of White Cheddar popcorn! It was a day of celebration and I haven’t drank like that in a long time. I called my dad to ease my mind about the calories.

After heading into the concert and buying my girlfriend a beer we found our seats and sang and swayed the night away! Can I just say that a 20 oz Yuengling was 13 bucks! I could bought a case for that much! Damn concerts arenas jacking up prices.

But a spectacular night! I drank my favorite, cherry vodka and soda, ate a ton of popcorn and had a blast!

Some background: The Backstreet Boys were my very first concert when I was like 6! The “Easter Bunny” got me tickets one year, and my parents captured my excited in a home video, which, to this day, cracks me up every time I watch it. Jesse McCartney was my first big girl concert, as in, the first concert I went to without a parent. So both of these groups help a little place in my heart. I may have also been obsessed with both of these groups at one point in my life.

All the guys sounded the same! We were screaming the songs and having an all out “white girl, woo girl” night! I was smiling ear to ear!

Of course, being intoxicated comes with a loss of inhibition and cravings of late night munchies. I indulged and nothing sat well. I ended the night, exhausted and sick in bed. But I woke up feeling great.

WP_003569I began the morning with pizza and eggs. Sounds weird? Think about it… Pizza is the best hangover food and eggs have protein, plus restaurants actually have pizza omelets… Does sound so crazy anymore does it? I popped an Amy’s Cheese Pizza Toaster Pop in the toaster oven and threw some liquid eggs in the microwave. I sprinkled a little garlic powder on everything and went to town! Delicious!

After a glass of chocolate cereal milk, my tummy wasn’t feeling so hot, so I laid down after bringing Barry lunch to work. He, too, had a stomach ache, so I brought him Italian Peasant Soup. Its miracle soup!

In an effort to avoid temptation, I asked if I could sit with the one to one on the unit. Around 630, it was time for alight dinner of miso soup, steamed broccoli slaw and saltines. What I did not foresee was how that damn pizza taunted me. I ate half a slice, which added about 120 calories to my meal. I wasn’t too upset.

Surprisingly, what gave me some anxiety was a packet of graham crackers and tablespoon of PB. What’s up with that? I make no sense. I opted to stay in my one to one for the rest of my shift, so snacking would not be an option.

The first half of my shift was very slow, and the second half was rather cold, despite drinking 3 cups of  hot decaf tea.

When 10pm hit, I hit a wall and was so ready for bed. I arrived home a little after 11pm and was hit with a second wind… of hunger. Damn it! I go through this every time I work evening shift, and I have, yet, to find a way to rid of this. I wound up snacking on Ritz crackers and pretzel sticks with some Honey Mustard sauce, but by the time I realized my fill and my fatigue began to creep back in, I had eaten 10 crackers and a serving of pretzels. That basically a whole meals worth of calories. I absolutely despise the 11pm snack attack! It only adds to my anxiety, I think tonight’s snack attack also had something to do with my anxiety and waiting for the results of yesterday’s exam. I yelling at myself and have a heavy chest since I realized how much I ate.

Picking Away

Despite being super sleepy, I spent another night not being able to shut down.

Being awake and not having the mental capacity to study, I flipped through some of my favorite channels and decided on Unique Eats on Cooking Channel. This episode ended on a cupcake note, which caused a late night sweet tooth. I went into the freezer to grab spoonful of fat free cool whip to see Frank’s pint of Chunky Monkey. I never buy Ben & Jerry’s because, although, theirs flavor combinations are absolutely spectacular, their calorie counts are absolutely outrageous! Wanting an added crunch, I dug into the Chunky Monkey to pull out a piece of chocolate and a walnut. This was my first experience with Chunky Monkey and I can tell why its so popular! Banana ice cream with chocolate chunks and walnuts! If that doesn’t say “Sammy” I don’t know what does!

Dear Frank,

If you decided to have your Chunky Monkey ice cream, you may find a lack of chunky. Sorry bout that….

I felt proud of myself for being able to stop after one serving, but I won’t lie when I tell you I made sure to make that half cup worth it, picking for the chocolate and walnuts. Luckily, I had calories to spare last night, and after a brief increase in my respirations, I reassured myself.

There is one flavor of Ben & Jerry’s that I have wanted to buy, but just can’t bring myself to do it: Chubby Hubby- vanilla malt ice cream with fudge, peanut butter, and pretzels!

Get this- 340 calories per 1/2 cup! Crazy!

It seemed last night, there was no one thing on my mind. I kept playing around with recipe ideas. I kept picking my brain about when I would eat this and that, and what to bring to work, and what was on my shopping list, and how I can play around with ingredients…

Barry picked me up around 10am this morning to meet a buddy for work at the range. It was cool because we weren’t just shooting Barry’s, but John’s also! We all took turns playing around with the guns and switching out targets.

WP_003252Following our time at the range, Barry and I headed to Wholefoods for lunch. They’re ridiculous soup bar has always impressed me, so while Barry loaded up on man foods (meatloaf, chili, and mashed potatoes), I went with the Vegan Hot and Sour soup, and we ate outside on the patio. I was a bit disappointied in the lack of hot in the soup, taste, not temperature.

Nonetheless, we continued to stroll through Wholefoods, looking for some new products on the market, which we couldn’t find just yet. I did leave, however, leave with two items I was quite excited about.

Peaches!!!! Not any old peaches, Donut Peaches, AKA Saturn Peaches. I love these things and I can only find them this time of year! The look like flattened peaches, but they are so sweet and delicious, and my mom and I can literally eat a whole basket of these! Talk about healthy trigger foods.

WP_003259Also making an appearance in my cart was Arctic Zero Chocolate Peanut Butter frozen dessert. The cool thing about these products is that the entire pint is 150 calories! I’m not kidding! My only issue is that there wasn’t enough PB flavor. So after a teaspoon of added PB and jimmies, this was aces and I couldn’t feel an ounce of guilt.

WP_003253After lunch, Barry got thirsty and ventured to pick out a drink. “I was what you called me on the blog…” Uhhhhh???? “You’re ‘blueberry fiend of a boyfriend…” Well, its true!

Dinner was a frozen pizza. I’ve really wanted pizza that past few days and I’ve always had good luck with Amy’s pizza. On the menu was Amy’s Margherita pizza. Wow! I’m pretty sure I could have eaten the whole darn thing myself! The crust is  fluffy, and the basil seasoning was tops with the light tomato and globs of mozzarella! After our last experience with Kashi frozen pizza, I was relieved when this was excellent! I may have made a trip back to the kitchen later to pick at the leftover pizza. (They make a vegan version of this, too, by the way).

After some loving from Lily, Barry’s dog, the night is ending on a rather exciting note: Studying for the boards. Since I am terribly entertaining, Barry whipped out his Nook.
