St. Patty’s Day

Happy St. Patty’s Day! I hope you are all having fun with friends and family and staying safe!

Last night was our final show of the Vagina Monologues! It was pretty spectacular and I must say, I’m going to miss it! Even though I will be graduating this year, I am still allowed to be in it. Needless to say, I can not wait till next year!

This year, I was in the monologue “Beat the Girl.” For those of you who don’t know, this scene is an interview with 5 transgender women. Its the story of who they questioned themselves as children, tried to deny it, excepted who they truly were and the reactions of the societies around them. Its a wonderful piece!

Before I left for the show, I made something that I found online a while back. I could not remember exactly what it entailed so I played it by ear and it was really tasty!

Waffle Bake:

1 frozen waffle, cubed

1/8 to 1/4 cup of blueberries (feel free to experiment with other fruits, I know I will)

1/4 cup liquid egg whites,or 1 egg

cinnamon, to taste

cooked, crumbled bacon (optional)

syrup and butter (optional)

Toss thawed and diced waffle in egg whites and cinnamon. Pour into a ramkin and cover with foil. Bake at 350 F for 20 minutes. Add blueberries and bacon. Recover and bake for another 20 minutes. Remove from the oven, uncover, and top with butter and syrup.

I forgot the darn bacon,and didn’t need the butter. I topped mine with Walden Farms Blueberry Syrup, which I really like! The picture was taken under absolute horrible lighting and does not do this mini meal justice. I would love to hear what other fruits or alterations you all have for this so comment below!

After the show, and a bunch of hugs, we headed back to my best friends apartment to prep for the after party.

We spent majority of the night at our friend, Eric’s, house, were I ran into a bunch of old friends. Since I really isolated myself this past summer, it was phemon to see everyone!

The night was spent sipping on some green Skippy*, chatting and dancing. I have learned throughout my college life that alcohol, especially in excess, even on St. Patty’s Day, is not a necessity to have a good time. This is especially true when you have such goofy and fun-loving friends like mine!

*Skippy is a UD specialty… It sounds absolutely terrible, but its quite good. Even my dad likes it! Its beer, citrus vodka, and concentrated frozen lemonade.

Usually, I” make breakfast for everyone in the morning to nurse everyone’s grogginess. Maggie was a head of the game, and bought bagels yesterday, making my job much easier.

Me, on the other hand, I whipped out an Orange Cream OIKOS and ground flax.  I was super happy that I did so well in my eating last night. Typically, I let socializing influence my eating, but last night, I listened to my body.

In honor of St. Patrick’s Day, I typically splurge on McDonald’s Shamrock Shake. Although its a once a year treat, I still thought I’d share this recipe with you for a Shamrock Swap! This is a Hungry Swap. I have not tried it yet, but at least now I can make a guilt-free Shamrock Shake whenever the urge strikes! If you make this, let us know what you think in the comments below!

Playing Catch Up

This rainy Tuesday morning (3/12) started out with a shake and hot tea. The Black and Muddy recipe calls for chocolate shake mix, coffee syrup, cappuccino mix, peanut butter, and chocolate pudding mix. I dumbed it down this morning:WP_001516

1/2 Tbsp sugar free Chocolate pudding mix

I must say, it was very similar to the original and I got my chocolate fix early in the day.
Speaking of chocolate and peanut butter, I also got a fix with a 90 calorie chewy Fiber One bar! Mmmm! Chocolate and Peanut Butter… Is there any better combination?

I wasn’t quite in the mood for a workout, but not working out all weekend was really starting to  get to my head. I figured this would be  good way to clear my head and prepare for endless studying! However, I feeling rather uninspired. Thank goodness for Courtney, who asked if I wanted to do today’s circuit. I asked if I could share it with you and without further ado…

I’ll tell ya, out of everything in this, I felt the Heels to the Heavens burn the most! Intense! (Definitely use an exercise ball to feel this one!) By the end of this workout, I could could feel the sweat dripping down my nose! It was just what I needed today: something quick and something to burn!

After a much needed shower, I hit the caf to enjoy my dinner, a salad and post workout orange. The tempeh really stole the show on this one! Wowzah! It added so much flavor and texture to the salad!

After a few hours of learning about traumatic brain injuries, I headed to practice. To hold me over I tried a new yogurt: Fage flip Orange Cinnamon. When I saw it, two things popped in my head a) must add flax, and b) I hope it doesn’t taste like potpourri. I know thats a weird thing to think, but its the first thing to pop in my head.. hello.. orange… cinnamon… fall… potpourri…

Anyway, I rather enjoyed it.

So I’ve been referring to “practice” for the past few weeks now, and I suppose that since this week is the big event, I should come clean…

I am in the Vagina Monologues! I saw them last year and felt so empowered, so invigorated . I needed to be part of this. Today was a dress rehearsal and I can not believe how fantastic it has come together!

PS. My eating was fan-freaking-tastic today! Not too much, not too little! Things are definitely turning around! Yay!

Friday:

Over the next few days, nothing but studying was endured. In fact, I could not make it to dress rehearsal for the Monologues and they almost cut my out of the show! I know, crazy, right.

Test Day breakfast: Peaches and Cream Oatmeal with flax and a cup of tea

Sometimes in life, you need to make a judgement call. I stand by mine. As much as I love the show, my education comes first! Luckily, God blessed me with both! I passed my exam, and last night was opening night of the Monologues! It was a brutal exam and an excellent show! For the next few nights, I will be in the show! All the money we raise goes to Project Life Line, and organization aiding rape victims and those victim of sexual abuse or assault. It covers a wide variety of problems, and its an amazing feeling to know that I am helping bring awareness to such issues.

Since I ate “dinner” Friday morning, it was meat free. I love Amy’s meals for a meat free option! This morning I ate Amy’s Mexican Tamale Bowl. I WP_001545always add a decent amount chili powder and hot sauce to spice it up! I split a veggie omelette with a friend at work and made it like a huevos ranchero with the tamale pie! Genius!

As I came home from work this morning, I could not decided whether to hit the sack or indulge my growling belly. Belly it was and I dug into a big bowl or assorted cereals (Cheerios, Kix and the like) and a fruit salad!

I have to say though, one of my favorite things I ate this week was called a Crazy Apple. They are apples that have been flavored. I tried out the Pomegranate Grape and couldn’t get enough. It wasn’t an overwhelming overly sweet grape flavor like I was afraid of. I can’t wait to try the Tropical flavor!

So Bubbly

Wow! I must have gotten a great night of sleep! Even my mom has been asking me why I’m s bubbly today.. I just don’t know! Plus, I feel much better than yesterday!

I began my clinical morning with a shake. The recipe called it a Pineapple Upside Down Cake, but I tasted no such thing…

Anyway… After a day of clinical, I ran to the store and while I was there, I picked up a yogurt that caught my eye. It sounded so heavenly… Yoplait 100 Greek Tropical yogurt… Pineapple, mango, passion fruit! MMMM with some flax! Perfecto! A fantastic afternoon snack! I cant wait to buy that baby again!

Dessert was also something new I picked up at the store. I have seen this for a while, but have been trying not to buy it simply to avid temptation. Today, I decided it was okay… Pepperidge Farms Carrot Cake Cookie! Big chunks of white chocolate and walnuts, sweet spices! Wow-zah! I won’t lie, I definitely ate two!

I finished my presentation and some paperwork today. I am prioritizing my work, but I must say, I missed a god workout today. I plan making up for that tomorrow!

Before heading to bed I made a cup of chamomile tea and prepared my lunch for my long day tomorrow in the hopes for another good eating day!

Crazy Herbal Concoctions

So I’ve read a decent amount of articles regarding immunity and what to drink when you have a cold and so on. Every family has their own family remedies… “ancient Chinese secret,” “old Polish remedy,” “Irish shenanigans…” Here are a few my family utilizes:

any cold: hot tea with a shot of whiskey

Today I tried a cold relief tea that I read about:

Hot lemon tea, raw honey, and cayenne pepper… SPICY!

This morning began with a shake. I was excited fr some Chocolate Chip Cookie Dough Shake, but it didn’t taste much like Cookie Dough, and beleive me… I KNOW cookie dough! WP_001504

The rest of the day was soup central! When we are sick, Mrs. Grass soup gets whipped out every time! I basically gave Beauty the noodles and kept the broth to myself. Ever since I was a little girl, I’ve always been amused by this ball included in the box. I pulled this out and all I culd sing was “I’ve got the golden nugget!” (in the Willy Wonka tune)…

I had such a rough time getting with the program today. I have soo much work to finish! I barely left the bed today…

Sweat It Out

Bet you thought this would include some awesome workout, huh? On the contrary…

The worst part about feeling under the weather, is my absolute lack of motivation! I don’t want want to stay awake or work on my projects, let alone work out. So the rest of the night was spent attempting to finish up some of this school work!

While on the phone with pops last night, I asked for him to decided today breakfast shake… He seemed adamant about cherries. So I took out a Dannon Light and Fit Cherry Greek yogurt. On a side note, I like to buy yogurt when its really cheap and freeze it. I use these in my shakes.. it adds to the thickness of the shake, like using ice cream… Anyway, the following went into the bullet:

I spent my day with dad at his office. I knew I’d get work done if I was not home. It was a nice day seeing dad in action. To help nurse this… whatever congestion thing is going on with me… dad pulled out this nifty Cup of Soup instant soup packet. As much as I’m not a fan of these because of sodium content, it was just what I needed! That and another mug of hot tea!

A little school work was completed but mostly I watched Hallmark movies and ate Chinese food. Yes, we ordered out again. Frank was so impressed with my dinner last night that he wanted it for himself tonight. So he ordered that and I ordered the veggies with chicken. Woah baby, that was a lot of chicken! There’s just something about eating all those veggies and protein that just makes ya feel good! Mmmm I also ate a big bowl of hot and sour soup, my favorite Chinese soup to help me feel better. I think it worked since half way through it, I took off my robe from sweating! That’s the way I like it!
Hot and sour soup has always been of of those foods I’d love to make but never got around to doing.

(Not) Down with the Sickness

Did you know March is National Noodle Month? Neither did I.. but it worked out that I brought a noodle dish for dinner last night. Last night I brought Smart Ones Shrimp Marinara and bulked it up with some Fettucine Tofu Shiritaki Noodles and broccoli. I’m glad I spiced it up a bit. The shrimp was a little chewy, also. I don’t see myself getting this one again…

Eating was pretty decent last night, thank God! I got all my work done so quickly that in my down time I watched a lecture! Woo Hoo!

I have sooo much work to do this weekend! I need to kick some serious butt.

Today came with sleep deprivation, stress, but uber excitement! I was watching my goddaughter today! It has been so long since I’ve seen her and she got to play with all her Christmas presents over here!

Before I picked her up, I made dad and myself a cup of coffee. I also whipped up last night’s smoothie for dad, while I enjoyed a little sweeter Apple Crunch shake:WP_001432

I loved having Kinley over! She is so smart! She shocked me when she grabbed a coaster and put her cup on it, or at lunch when she out her napkin on her lap! She only a year and a half! My baby girl is a genius!

But I have to say, I felt exhaustion kick in around 11am. Luckily, mom said she would watch Kinley while I took a power nap! I haven’t seen my mom with this much energy in a long time! I woke up with a bit of a scratch throat. Oh no! I can not be getting sick! I immediately brewed up some ginger and lemon tea and shot back a glass of Airborne. It was only a matter of time until the stress of the past few weeks, plus working with kids with respiratory illnesses, caught up with me. Fingers crossed- I’ve nipped this in the bud!

Right as we arrived back at Kinley’s house, she was passed out! And I had worked up quite an appetite! Frank, my step dad, called while I was out at the supermarket picking up a few things and asked if I wanted Chinese food. I LOVE Chinese food! On the occasion  I’ll make it from scratch, but I had been wanted Chinese food for the past few weeks, and, hey, he was treating! I opted for one of my favorite and more health conscious choices: Steamed Vegetables with Shrimp, and a side of garlic sauce! This meal NEVER disappoints! I love the sweet and spicy bite of the garlic sauce, the protein from the shrimp (no meat of Fridays), and the fresh, crisp, crunch of the veggies. I’ve said it once, and I’ll say it again, “I just don’t know how these places get their veggies so perfectly steamed!” (My stepdad always gets the ribs, so I had to sneak in one of those!)

The immediate dessert was, duh, a fortune cookie. Later, it was a salty sweet favorite: 94% fat free Kettle Corn popcorn and nutella drizzle!

The remainder of the evening is going to be spent ATTEMPTING to watch renal failure lectures, without falling asleep (I’m in desperate need of solid sleep!) and winding down with some chamomile and honey tea.

I started my testing morning as I typically do, with a bowl of oatmeal. Using package oatmeal is super easy on test mornings. I decided on Very Berry oatmeal by Better Oats. I find this oatmeal to be rather sweet, so I cut it down by adding some nut butter and ground flax. This brand of oatmeal already has flax seed, but a little more won’t hurt me. This morning, I used the soy nut butter. I figured the oatmeal would mask its interesting flavor. I was right, and this breakfast kept me very full. It was paired with a cup of coffee.

After the exam, I hit the gym. As I began my warm-up on the elliptical, I checked my email. I did not really have an idea of what I wanted to do today so it worked out that I was greeted with an email from Julie, pbfingers. The idea of spending a little extra time on the elliptical appealed to me so I stayed on, like she did today, and completed her Upper Body Super Set. (Since our small school gym does not have a barbell, I used the bend for the chest presses.) There was a girl at the gym who wanted to work on her arms so I invited her to join me. Time goes by sooooo much faster when someone else is with you!

Post workout, I arrived home to enjoy a banana and finish some homework. I also steamed a very petite bowl of baby carrots.

Nap time! Literally.. thats all I got was a nap. I only slept for about 2 hours, so it looks like tonight will be a caffeined night shift. Therefore, I got my booty up, took a shower and made a shake and some coffee.

Back in January, Julie posted an energizing smoothie that caught my attention. I made a mental note to use my frozen mango for this… well, apparently I stuck that mental note way too far in the back of my head, because I just now remembered it. I figured this would be the perfect pick me up for night shift!

  • 1/2 banana
  • 1/2 cup frozen mango
  • 1 Dannon Light and Fit Strawberry Greek yogurt
  • 1 scoop vanilla protein powder
  • a handful fresh kale
  • ice and water

Woah Mama! This was delicious! I had to control myself. Plus, it was super filling. It also turned out nice and thick and ate it with a spoon out of my tumbler. I called dad up, as I slurpped away at this tumbler full of yum, and told him that he was going to get one for breakfast tomorrow! He could not refuse!

Backstreets Back

Yesterday, when I packed my salad and yogurt, I wanted something to keep it cold, well, cool, at least.

I could not find my lunch box, however, I could find my very old lunch box.

I woke with one thing on my mind… breakfast, specifically a  breakfast sandwich! In honor of National Frozen Foods Day, I compromised and whipped out a Special K frozen Sausage, Egg, and Cheese on Multigrain Flatbread breakfast Sandwich (with hot sauce, of course). Ok, two things on my mind…. Coffee!

3/4  cup  chopped kale, ribs and thick stems removed

1  small stalk celery, chopped

1/2  banana

1/2  cup  apple juice

1/2  cup  ice

1  tablespoon  fresh lemon juice

I was really excited because my shake looked like Christmas (the green from the veggies and the red from the apple skins). It was a filling shake, but definitely not tops. I can’t see myself making this again. However, it did give me another throwback to my childhood As I cut up the fruit, I could not help but to sing….

Today is a studying kind of day! I need to kick some serious butt on these next two exams!

The remainder of my day was spent with my nose in the books. Snacking of course, was necessary to give me some brain power. Two snacks were particularly aces in my book:
Wasa Light and Crisp cracker with sunflower butter and nutella, sprinkled with sunflower seeds! A banging 100 calorie snack!

My dessert for the night was a makeshift parfait. I was all out of fresh fruit but I still had some fruit cups and thus a fruit cup and cottage cheese parfait was born. It was topped with some ch-ch-ch-chia seeds for a little texture!

I’m In Love

Its official. I’m in love… with a little boy I’ve been caring for at my clinical site. Some of the children at this site are up for adoption. I would take him home in a heartbeat! In fact, the nurse said that he could totally pass for my son, and when his family came to visit, I said “come on, lets go see your mommy!” He ran to me! Ugh! Every time  his family held him, he cried and reached for me! Hes melting my heart.

If only…..  ❤

Since today is a long day, I wanted to start my day with some caffeination. A started another chilly morning with a shake. When I use this liquid, I don’t like the icey consistency  that it makes, so I add guar gum to smooth it out:

This kept me going for the morning, as did a cup of hot green tea. Lunch was welcomed this afternoon: A salad, carrots, onions, green peppers, topped with chicken, sunflower seeds and sugar free honey mustard dressing! I love this line by Maple Grove Farms! Their sugar free balsamic vinaigrette is to die for!

It began and ended with 5 minutes on the elliptical, riding backwards. A 20 minute interval treadmill workout was samwiched in between two strength circuits. The progression of events look something like this:

My eating was fantaabulous today! I was so proud of myself! Until the munch set it. I didn’t have anything else to eat so I stopped by Rite Aid. My favorite candy was on sale for 88 cents! Its normally almost 4 dollars!

That was my mistake. I went to town on some sugar free Russell Stover’s candy and finished off a bag of Teddy Grahams. Grrrrrrrr!!!!

Other than this binge, today was great! I’m really starting to feel like the nurse I want to be!
