Climb Back On

Last night, still feeling a bit depressed, mom and I went to town on some munchies! Oh boy…

After, some self loathing… this, ironically, appeared on my facebook feed:

This was the inspiration I needed. My next meal, which happened to be the next day, was back on track. Julie is always talking about this Butter Pecan hot cereal. I finally found it on my new favorite website the other day, It was the fastest shipping I’ve ever had with any company! It came yesterday, along with a few other items that you will see used on the blog. And you can NOT beat the prices on this site.

Back to breakfast… Sensato High Fiber Butter Pecan hot cereal. I was expecting a little sweeter, but with a sprinkle of Splenda, and a sliced apple for dipping, it turned out pretty good and very filling! I’d really like to try the Vanilla Almond. If you’ve tried it, fill us in!


After a sleepy morning, I cut up a cantaloupe to enjoy before I leave for California in a few days. I like to freeze this melon for a refreshing shake! Fresh lope is also delicious with frozen vanilla yogurt!


I spent the remainder of this beautiful day sleeping. It figures… but I needed the sleep!

I headed off to work for a busy shift. One of the parents brought in brownies… oh boy.. but like my dad tells me, “It okay to treat your self.” I had this for dessert along with a few mini snickers. But the real surprise of tonight was dinner. I never have high hopes for frozen dinners, but Smart One Spicy Szechuan Style Vegetable and Chicken was pretty darn good. If I would have remembered to bring my spicy Asian garlic sauce, it would have been awesome! I bulked it up with a serving of tofu shirataki noodles and some frozen stir-fry vegetables. As a snack I grabbed some celery and carrots from the caf.


Tomorrow is Easter Sunday. This is the one day a year I can get both my parents to mass! After mass, I’ll be trying out a new breakfast recipes! Stay tuned.


Eggs and Doctor’s Day

Prepare yourself for a recap of the last day and half, complete with a crazy amount of pictures.

Wednesday night, I ate some homemade wonton soup I found in the freezer. Yum!

It was an easy shift since I was placed in a 1:1. Although I did not have any school stuff with me to pass the time, I spent my night researching downtown San Jose and eateries to better prepare myself for next week’s trip. I found a variety of places including Indian, sushi and vegan!

Arriving home, I made a cup of decaf tea and sleepily waited for my uncle to drop of some much anticipated cookies. Ever since my grandmother passed away, he has turned into “Barry Crocker.” His specialty is ricotta cookies. I love his ricotta cookies! The texture is so unique! He typically makes Lemon Ricotta Cookies that I devour every time! I mean, these cookies go fast! Everyone wants them! He called me and said he would drop off his latest creation: Chocolate Chip Ricotta Cookies! They looked like chocolate chip scones, but wow! They had the same texture as before, but no with a chocolate treat. One word: Addicting!


I’ll talk to him and see if he’ll share his secrets with us!

After a brief nap, I woke with one focus. As promised, I used those strawberries in a shake: Chocolate Covered Strawberry:WP_001672

I spent the remainder of my afternoon taking a brisk walk to the supermarket for some few essentials for the weekend, then tidying up the house, and doing a bit of ab work.

Before I left the house, mom really wanted to make some popcorn. Last year, when I was in Nashville, TN for the International Convention, I picked this up. I though the novelty of it was too cool! Its a cob of corn… to make popcorn! You just slide this, what looks like Halloween corn, into the provided bag, fold the bags edge closed, and pop away!

I arrived on night shift apt! I don’t know why… this energy, though, helped power me through a night of 10 patients! I was greeted on the unit by these little dudes:


I forgot we had an egg decorating contest to help raise money for the asthma foundation. In first place, was Angry Birds.


I had one of the best night shift meals in a while! I told you that falafel dip was going to be a Bundo house staple, and I meant it. I mixed the remaining dip left over from the falafel with some tuna fish. I laid this on a bed of spinach, along with tomato and onion and wrapped in an Everything tortilla! At work, I lucked out and found some roasted red peppers on the salad bar and threw those on there, too! To join the party… some celery and carrot sticks with reduced fat Ranch dressing and a fresh and crunchy bean salad, also from the salad bar. Dessert was a Fiber One brownie!

It figures that the one day I mess up on eating meat, it would be the morning of Good Friday! Ugh! My girlfriend and I split some chicken fingers! I haven’t eaten them in ages!

During this shift we also decorated for our unit’s Doctor’s Day. Our night shift crew prepared everything for breakfast while today;s day shift staff will set up lunch. We had bags of Quaker Quakes, Fage yogurt, coffee, fruit… etc.

But the niftiest of all was the cake! We filled empty sterile syringes with red icing and med cups with M&Ms:


I headed home in fun because I ate a bit more than I had wanted. After chatting with mom for about an hour, I started to feel a hungry stomach (which kind of cheered me up slightly knowing that I recognized what my body wanted). Before heading to bed, I pulled out OIKOS Pomegranate Greek yogurt and topped it with chia. MMMM I forgot how much I liked this one! (And my Scooby Doo spoon from the bottom of the Rice Krispies box, to embrace some childhood).


I was able to get about 2 hours of sleep before I woke up. I guess I turned off the alarm I had set for Church, but I still woke up on time. I guess the Big Guy really wanted me there! This is something I look forward to every Good Friday. (Today is Good Friday, by the way… the day Christ die on the cross.) Every Friday during Lent we celebrate what is known to Catholics as the Stations of the Cross, marking key points leading up the the crucifiction. On Good Friday, the congregation meets a few blocks away and processes towards Church with a large wooden cross. We pause at intervals to read the stations, and as we process we sing hymns. I love the unifying feeling of this event and the fact that we take time to reflect on our lives, faith, each other, and our blessings.  I am a lector at my Church as read a station every year. This year, I also acted as song leader, leading the congregation in the hymns between stations. I wanted to be more involved this year, and I helped carry the cross in between two stations. I had three favorite parts about today’s procession: 1) all the new faces, 2) it was my mom’s first time attending, and 3)even the little kids got involved this year!

Afterwards, I whipped up a new recipe that I guarantee you will see again on this blog! My mom and I love eggplant. I eat mine in any way but fried, and my mom ONLY eats hers fried, therefore, I am always looking for healthy eggplant recipes to snag my mom from the dark side. I used Hungry Girl’s recipe for an eggplant stir-fry and let me tell ya, I was impressed! I find with some of her recipes, that theres a potential for bland-ness or that I need to acquire the taste, but not with this one! And an added bonus what how absolutely easy it was!


To top it off and add some different textures, I steamed up some frozen stir-fry vegetables. I can’t wait to try this with tofu! I’ve had a decent amount of requests from readers about tofu recipes, so this is a contender.


MMMM! It was everything you’d expect! Sweet and sticky and just a little kick!

I had gotten a coupon for Payless Shoes for 20% off my purchase  and since I’m going to be hitting California soon, I thought I could use a nice pair of black staple pumps. After playing around with some shoe indulgence and a fashion shoe (haha puns!), I decided on a comfy pair of peep-toes.

Today has been a filling day! As always on Wednesday mornings, I woke up and made a shake to start off my day, give me some brain power for a study session and an energy boost for a post study workout!

I had some pumpkin left over in the fridge so I used some of that in this morning’s smoothie. Between the protein from the yogurt and the fiber from the pumpkin, I was stuffed for hours!WP_001663

3/8 cup (or 1/4c plus 2 Tbls) canned pure pumpkin

6oz Honey Greek yogurt

handful of spinach

1 Splenda packet

a couple dashes of pumpkin pie spice



After an informative study session, I NEEDED to hit the gym! Being sick puts a major damper on working out, and I needed to get my mojo back. (Plus, I figured it would tire me out so I could sleep this afternoon before night shift). I used my Couch to 5K app to create today’s treadmill routine, followed by some core and lower back work.

I good workout to me is one where I leave the gym drenched in sweat and a smile on my face! And today was one of these days!

When I got to my dads I got crazy hungry, and dad just happens to have Super Chunky Peanut Butter. A spoonful down the hatch!

Dad asked if I wanted to take a quick visit to the store. Ladies and gentlemen… the reason why I love discount produce oh so much:


$1.97 for all of these ginormous strawberries! I went to town! Oh boy, are you all going to love this treat: cottage cheese, nutella, and fresh strawberries! Protein… fruit…. so full! So yummy!

Forget those frozen berries in the freezer! These are going into a shake tomorrow for sure!

Hefty Hefty Hefty

WP_001648I don’t think my body likes to eat at 6 am, because every time I do, I feel ridiculously uncomfortable… I know… I’m a mess. But at least, I really enjoy these Special K Brown Sugar Cinnamon Pastry Crisps. Even as a kid, I’ve always liked PopTarts. What I like about this product is that I get the feeling like I’m eating a PopTart without the guilt and calories!

I’ve really been on a yogurt kick, lately… but I don’t hate it!

Today, I was inspired by Black Forest Cake and topped my Chobani Black Cherry yogurt with some Fiber One 80 Chocolate cereal and sunflower seeds. It was really tasty, crunchy, sweet, and nutty!

WP_001651 As I entered the hospital cafeteria, a basket of little red spheres caught my eye. I bought one of these and was going to save it for later snack. As I finished up my yogurt, this ball of health whispered, “you know you want to… just do it.” “Ok,” I said. CRUNCH! MMMMM What a delicious apple!


Today was a great day at clinical! My patient paid me a great compliment by recommending that I become a doctor. “I’ve lived 81 years. Take it from me. I know personalities and what you’ve got is natural. Its a gift from God. Wonderful natural personality! You’ve made me smile… first time since I’ve been here. You’re making me better. You’ve really got a gift from God.”

Tonight, Frank cooked dinner: Chicken Alfredo with onions, mushrooms, and broccoli ( You know I LOVE some broccoli!) Frank and I have very similar tastes, when it comes to food… but he wouldn’t let me make a healthy alfredo. Boo…. Still yummy though. I ate mine over Tofu Shirataki Macaroni style noodles! I love this product!

I’m still rocking a bit of a stomach bug, but getting better every day! To end tonight, after hours of research for school, heres something I found a bit humorous… While in the bathroom I saw this sign on the door at the hospital.

Every time I see this: Scrub, Scrub Scrub… Flush, Flush, Flush…


I think of: Stinky, Stinky, Stinky… Hefty, Hefty,Hefty…


Oh, and if you didn’t know… UD girls are going to the Sweet Sixteen! Right On!!!



My belly was feeling much better after a rough night of tossing and turning.

I heard on the news that it was going to snow. (Fingers crossed schools would be closed.) No such like. But by the time I got to the hospital the snow was coming down! School wound up closing at 12 but clinical operate on a separate schedule. We didn’t get to leave until about 2:20pm. We didn’t get lunch so I was pretty hungry despite the graham crackers I snacked on mid-morning.

The roads were pretty dangerous, and yet people still insist on speeding and cutting people off. Silly drivers…

Since my brother had off from school today, mom made blueberry pancakes. When i got home, I finally got my pancake fix. I got a little cocky, being able to hold this and some apple down, and then split a can of Progresso Light Beef Pot Roast Soup with Mom.

Now who’s the silly one? Ugh so full!

Speaking of being silly… Let me just mention how weird Bunny and Beauty are acting today. Since I’ve been home they have been in and out of the house and when they are in the house they following me around everywhere I go. According to mom, they’ve been doing this all day. Even when I was doing some stretches on the floor, I opened my ears to see Beauty’s nose in my eye! HAHA! Is it a full moon or does slushy snow fall do this to everyone?

I totally rocked my IV push medication today, which I was freaking out about! It was a great learning experience and I think I will be much more comfortable next time around!

I spent the night with this full tummy catching up on last weeks episode of Glee (one of my guilty pleasures). Ironically, this episode was called “Guilty Pleasures.”


But I Want Pancakes!

“Pancakes! Pancakes! Pancakes!” My stomach has been chanting this all week long! I had every intention of a Sunday Pancake breakfast. My tummy had other plans. After work last night, I ate a slice of pizza. I do not think this settled well with me, as I woke up at 6 am feeling nauseous.

After dragging myself out of bed this morning, I made some lemon ginger tea. ( Ginger is good for the stomach, ya know). I had even a hard time swallowing that. I blame myself for this one… I really shouldn’t have eaten something like that before heading to bed.


I left to go to the hospital to get information on my patients for clinical this week. By the time I left the hospital, I started to feel like I was ready to get something in my stomach. I took it easy with a toasted slice of Sara Lee Blueberry Crumble Bread and some PB2, alone with a bit of a Jazz apple. Have you ever heard of a Jazz apple. It reminded me of a Gala Apple, but with a bit more crunch. My absolute favorite apples, though, are Fuji and Honey Crisp!

After a day of snacking on bread, my stomach started feeling a bit better. I made the dinner I had planned for tonight with the hopes it would settle well. Dinner was in the breakfast form of an egg white omelet stuffed with avocado, red bell pepper, onion, tomato, and shredded fat free cheddar. This was super yummy and I ate it with half a banana with the intent to fill myself with some nutrients. This picture does not look very attractive but its good! When I visited Meaghen in NYC, I stopped by a cafe and the woman in front of me ordered this in a burrito. I got the same and did not regret it!


Things were feeling good, but as the night progressed, the stomach aches got worse. Theres been a bug going around these parts, and I’m convinced it was a combo of that and the pizza, that my body is not accustomed to eating. My parents are funny.. they started having sympathy pains for me! I’m praying for a recovery for clinical in the morning.

And for Dinner, I’m Making Falafel

Every time I say “falafel,” I think of Donkey from Shrek… “And in the morning, I’m making waffles!”

After dad’s experience with Falafel at Moaz, hes been insistant on eating it for a Lenten Friday night dinner. Even at the store, he wants to buy it! I talked him into letting me try to make if from scratch!

Last night, I used the Hungry Girl recipe for it and made the dip that goes with it. Dad ate his pita-style while I deconstructed mine into a spinach salad! I was iffy about the dill dip for a few reasons: A) dill can be a really strong flvor that tends to overwhelm my palate, and B) iI’m not a huge fan of plain yogurt. Let me just start by saying how simple this recipe was and how shocked I was that this dip was perfection! After combining the ingredients for the dip, and sampling it, I actually verbally exclaimed, “Oh wow! Oh yeah! mmm…” My mom, who can’t stand yogurt of any kind actually ate this dip too! I think it had a lot to do with cuccumber. It really mellowed out the greek yogurt’s natural tang. This stuff is officially a Bundo house staple! I’m thinking it would be a great sub for mayo on a sandwich!

Any way… back to falafel.. I followed everything in the recipe, with a few minor adjustments:WP_001613

  • 1/4 tsp and both paprika and black pepper for the falafel mix
  • half a peeled and deseeded large cucumber for the dip
  • I also did not have fresh herb, so I used dry herbs

* Just a note: If you do not have fresh herbs, you can use 1/3 the amount of dried herbs. For every 1Tbsp of fresh herbs, use 1 tsp of the dried stuff.

To semi mirror the variety  of toppings that Moaz has, we mixed the dill cucumber yogurt dip with some bagged shredded coleslaw  vegetables, and I sliced some red pepper and roasted them! The slaw gave it a nice crunch and the red peppers were warm and sweet!


While the falafel baked, I cut up this monsterouly large pineapple!  Great dessert!

After dinner, I met up with some people from work at the bowling alley, and took dad as my date. When I was younger, and it was still affordable, dad and I went bowling every Friday night. Bowling with such good company was a lot of fun! We did a unit shot of Pucker’s Sour Apple, and majority of the group indulged in Miller Lite.

After a few round of enjoyable, yet completely terrible bowling, Dad and I headed out to a social club he belongs to. There I drank a glass of merlot and woah did that hit me quick! I felt like I was a freshman in college, again… not being able to hold my alcohol! I get silly and giggly when I drink, and last night was no different. He was alot of fun though, spending a nice night out with my dad!

When I got home (dad drove) I was craving the pizza my mom of the bad things about drinking is the loss of  inhibition, causing us to make poor decisions, including food ones. I have to say though, I ate a slice of pizza and a 100 cal bag of popcorn, with nutella. I could have done worse!

This morning, I was not too hungry (since my tipsy tummy fill last night), but after a little tidying up and a cup of hot tea, I decided to try another new yogurt. I get really excited about trying new things. Thats how you know I have a passion for food. Anyway, I found Fage Passion Fruit Clementine yogurt and the combination really intrigued me! The fruit puree was tart and taste and sweet and exotic. I sprinkled some chia on top and  really enjoyed it!


The last couples days, I’ve been in a funk and extrememly tired. Today, I was finally able to get myself sort-of moving. I completed on of my favorite circuits, Julie’s Super Sweaty Ab Workout. Although, it doesn’t sound like much, it helped make me feel like I did something. My girlfriend reminded me to be proud of my workouts. No matter what I did, its better than doing nothing. This, my friends, is called looking at the glass half full.

After this short spurt, I cut into a fuji apple. This baby was perfectly ripe! Mmmm so crisp! And a teaspoon of raw almond butter was a nice touch! (I finished this apple when I got home from work!)

WP_001639I am working for a girl tonight, since she covered my shift last weekend when I was in the Vagina Monolgues. I brought Pacific Food’s Hearty Corn Chowder, and ate this with saltines. While here, I also snacked on some dangerously delicious decedent trail mix! I recognized my fullness and went back to work! (I don’t think I’d recommend this soup.)WP_001640

I am sitting with a patient tonight. This patient ran out of the room and I ran after! I had no idea I could run that fast. Another nurse ran down the other side of the hallway! It was great team work and an unexpected way to break up the night.

Speaking of teamwork, I have never experienced such great teamwork than I have tonight! Six of us in a room! All working together to accomplish a task! Beautiful!

New Favorite Yogurt

This morning began with a filling shake:WP_001596

1 Tbsp raw crunchy Almond butter

2 scoop Chocolate Metabolife

1/4 tsp almond extract

1/2 tsp coconute extract

1 Tbsp shredded coconut

a handful of spinach

1/8 tsp xanthum


I intended this to be a sort of Almond Joy shake, but it did not taste much like an almond joy…

I scurried off to a study group for a bit then hit the gym. I had no motivation, plus I had been nursing a stomach ache since last night. Wanting some cardio, and yet still not wanting to be at the gym at all, I alternated running and crunches:

1-5 minutes       8.0 incline          4.0 speed

5-10minutes      1.0 incline          6.5 speed

then repeat three times

I wasn’t enthused by my workout, but its better than nothing.

Arriving at work for night shift, I was greeted by a pizza… oh boy… a small slice was my fix. My main meal was a plum, Muir Glen Savory Lentil Soup, and Kashi Honey Almond Flax Bar later.


The highlight of food today, was, by far, my new favorite yogurt! Yesterday, my friends Barbara was eating Chobani Pear greek yogurt. I had never seen it before. Afterfinding out where to get it, I swung by ShopRite on my way home, and viola, Pear Chobani and chia seeds! Oh goodness! It was spectacular! I loved the actual peices of pear in this yogurt and the texture the combination of fruit and chia gave this protein boost snack!


Surprise Yogurt

I love going to sleep early! I was in such a funk last night, that I barely watched any lecture. I think I was asleep by 830 pm. That did not help with getting out of bed this morning, though. I id have time to enjoy a small bowl of Kashi Go Lean cereal topped with blueberries and flax milk.

I said yesterday how excited I was to start this clinical rotation. Boy, was I in for a rude awakening today. Thank God I was paired up today with my friend, Barbara, because I would have lost my mind! My patient was so complicated and required a lot of work. Its difficult because as a student, I do the job of both the tech and the nurse in the clinical setting. I am also limited on what I can do by myself, as a student. I felt very confident walking onto the unit this morning, but I felt like my instructor did not have a nice thing to say to me. Ugh!

Lunch break was much anticipated! I bought Chobani Flip Raspberry Choco Fix. I didn’t really read the label but, I figured it would raspberry yogurt with chocolate chips. Nope!  I opened it looking puzzled at the appearance of the yogurt, then read the label. It was chocolate chip yogurt! Who ever heard of such a thing?! MMMMM! I flipped over the raspberry puree and sprinkled some chia seeds. I can’t wait to get this one again! (I also split a slice of pepperoni pizza with another team mate to make my stressed out self feel better.)


I needed to finish up some stuff on campus, so I met with Barbara on campus and we did our thing. As I came home, I had one thing on my mind: Dinner. I was not supper hungry, but I definitely knew what I wanted. I took out some tuna fish and mixed in some southwest black bean and corn salsa, garlic powder, and chili powder, and ate it tapas- style with Roasted Sweet Onion Brown Rice and Sweet Potato Triscuits, from their new Brown Rice line. I have also had the Roasted Red Pepper Brown Rice and Red Bean ones which taste like a fiesta in my mouth! On the side I peeled and roasted some carrots and sprinkled them with some cinnamon. Its like sweet potato fries minus the starchy carbs! Yum!


Dessert with assorted fruit and my favorite cottage cheese, accompanied with a study snack of Chocolate Fiber One 80. I do not typically like chocolate  cereals, but this one is a keeps. WP_001592

I’m in another funky mood tonight. I think being able to hit the gym tomorrow will turn things around.

Before I say good night, I want to share with you something I ate tonight. I’m not quite sure how I figured this one, but it your looking for a sweet treat, dip a low fat Cinnamon graham cracker in some fluf and then into ch-ch-ch-chia seeds! I loved the sweet crunch and the seedy chia!WP_001593

Sleep Tight!

Some Things Have to Be Made More Than Once

Some things NEED to be made over and over again… and tonight’s dinner is one of this things. I love roasting veggies and tossing them over some greens! Tonight was cauliflower, carrots, and broccoli roasted with garlic powder and basil over spinach. I wound up throwing in some purple onion, left over chicken, and fat free Thousand Island dressing to top it off! I Never get tired of this meal!


This morning, I rolled out of bed at the time I normally am leaving the house.. Yeah…. someone was sleepy!

Not having any time for anything, I snagged a banana and ran out the door. Today, I started my new rotation on a respiratory unit, where majority of the patients are trached and vented. My instructor is great! She said, “I have five more days with you until you are out on your own.” It hit me. I AM GOING TO BE A NURSE! She is giving us so much independence and it makes me feel so competent and confident in my skills! What an amazing feeling!

I keep an Atkins shake in my car, which was perfect to hold me over while I ran a few errand after leaving the hospital. But when I got home, I got right down to business on tossing some discount produce in the oven! I was a beast today! With my bargain shopper-ness I saved like 40 bucks on my groceries!
